ALLERGIES: No grains No dairy No eggs No gluten No nuts INGREDIENTS 3 medium potatoes, about 600g, grated 1 small sweet potato, about 200g, grated 1 small red onion, finely diced 1 tbsp smoked paprika 2 tbsp olive oil METHOD Place grated potato (white and sweet) into centre of a clean tea towel, and roll lengthwise, then twist ends tightly to squeeze out excess water. In large bowl, add potato, sweet potato, onion, smoked paprika, olive oil, yoghurt, potato starch, salt and pepper and mix well. Heat half the coconut oil in a frying pan on medium high, and place a tablespoonful of mixture into pan. Flatten roughly, and repeat with half remaining mixture. Cook 3-5 minutes on each side, and repeat with other half of mixture. Serve hot, with a fried egg and / or sliced avocado on top.
