Through the lanes of the tipycal taste…
The Ostuni “cuisine” is based on typical products of local agriculture: extra-vergin olive oil, vegetables, sheep’s cheese and fish. This simple and “poor” cuisine, even though rich in flavours, colours and tastes, it’s expression of local people’s simplicity who have been able to make the most of the traditional tastes being proud of them.
Starchy foods have got a great importance for Ostuni cuisine, starting from the wood oven baked bread and then “frise”, “puccia”, “tarallini” without forgetting some kinds of pasta such as: “orecchiette”, “strascenate”, “lajanedde”, all knead with hard grain bran flour and seasoned with fresh tomato sauce and “cacioricotta”, sometimes mixed with spicy “ricotta” cheese.
The second meat based dishes are mostly grilled: kid, lamb, local sausages, also called “gnemmariedde”, and tasty spit roasted kid’s entrails roulades.
If you love fish, you can eat yourself fill of the numerous recipes which have in common the extreme freshness of this main ingredient. It allows you to taste the succulent seafood starters such as: sea breams, gropers and lobsters, which have a unique taste. In this galaxy of tastes, a great place is occupied by the octopus seasoned, in particular, with vinegar, fresh tomatoes and onion.
Typical dishes of this cuisine are also: “fave e foje”-broad beans cream with wild vegetables; “acqua sala”– made up of hard bread or “frise” – soaked in water and seasoned with olive oil, onion, oregan and tomatoes and “turdi allu sunze” – thrushes seasoned with vinegar and laurel.
A hint has to be made to the typical festival sweets, too: “pettole”- rised and fried dough; “cartellate” – seasoned with honey; “percedduzze”, “palomma” – a ring shaped cake with hard-boiled eggs; “cupeta” – crushed almonds knead with caramelized sugar and honey and “frisedde” –sweets covered with icing.
These dishes go well with liqueurs such as: “limoncello”, “nocino” and “rosolio”. Among the local wines, we’ve got two quality wines: “Biancostuni” and “Ottavianello”. Some interesting wines are also “Pete”, “Moneche” and “Vino concamedrio” – a wine characterized by the addition of a slightly bitter and stimulating herbs infusion.
