Sysco Produce: “Helping Our Customers Succeed”

In The BeginningIn 1986 Sysco Corporation announced the openingof their Western fruit and vegetable procurementand marketing division, based in Salinas, California.The office was established to create an “at source”advantage for all Sysco operating companies andprovide a premium benefit to all their customers.This was an innovative step in the foodserviceindustry with the objective to decisively move intothe fresh produce segment and retain the positionof the “leading source” in food service distribution.

Sysco Quality AssuranceAs a result of Sysco’s representation on the Westcoast, the ever-critical area of product quality isaddressed at the point of shipment. This becamepossible with the insertion of the Sysco QualityAssurance department, complementing the SyscoProduce Procurement arm. Qualified and dedicatedpersonnel perform rigorous daily field inspectionsin the pre-harvest phase and intense cooler checkspost-harvest to ensure specified quality standardsare being met. In addition, field personnel are ableto relay pertinent information back to the procure-ment office, which aids in key decision-making. Inaddition, quality assurance technicians are presentin the state-of-the-art processing facilities to con-sult with the packers, guaranteeing the highest-grade product attainable. This structure is unsur-passed in the industry and provides the basis forconsistency and integrity in all Sysco products.

Food SafetyThe combination of the procurement arm and thequality assurance factor supports Sysco’s position asthe “leading source” in the industry. This is furtherenhanced by the emphasis placed on innovation inareas such as new products, packaging, marketing,and distribution. Even further depth is created bythe necessity for hold harmless agreements, HACCP plans, established good agricultural practices (GAP)procedures, proper insurance certification, and

recall programs. All this combined with the addeddynamic of strict food safety specifications in thegrowth, harvesting, and processing stages, andunparalleled quality regimentation, provides premi-um products and exceptional value.

Sysco BrandIn 1990, Sysco stimulated revolutionary innovationby introducing its private brand, Sysco Natural®.Thisis an absolute premium industry brand where care-ful selection of growers was necessary to ensure thequality regimentation is attainable on a daily basis.Since then, traditional Sysco Imperial, Classic, andReliance brands as well as Block and Barrel, CasaSolana and Jade Mountain brands have been intro-duced to address all segments of the foodservicemarketplace with products that meet Sysco’s cus-tomer’s needs, thus ensuring Sysco and our suppli-er partners a position on the cutting edge of the“fresh” segment of the food service industry.

Specialty ProduceThe new millennium brought a significant movewithin Sysco with the acquisition of U.S. basedFreshPoint, Inc. and Canada based Serca. TheFreshPoint divisions focus on fresh specialty pro-duce, providing a significantly larger procurementleverage as well as complete penetration into manyuntapped specialty markets. Sysco’s acquisition ofSerca, Canada’s largest foodservice distributioncompany, expanded Sysco’s service area to all ofNorth America. With strict adherence to provenbusiness models established domestically, Syscocan ensure the same standards of quality and foodsafety for imported products as well. Agricultural Sustainability: How Sysco isActing Today for the Good of Tomorrow

Sysco is taking a leading role in support of a newvision for agricultural practices designed to protectthe land and environment.This new vision is a resultof farming practices that began in post World War IIAmerica. At that time, global demand for agricultur-al commodities placed increased pressure on agri-cultural practices, thus productivity gains wereincreased by greater mechanization and utilizationof new technologies. Increased chemical use andspecialized farming practices that favored maxi-mized production were implemented, creatingsome unintentional and some unfortunate conse-quences.These concerns include soil erosion, chem-ical contamination of the aquifer, and higher levelsof pesticide residual. Additional social ramificationsinclude the decline in the number of family farmsand the economic erosion of rural communities.It is Sysco's goal to ensure that highly differentiated

products are successfully produced for our futuregenerations. Our ultimate goal is to foster the suc-cess of highly differentiated products that are prof-itable to all participants in the supply chain andincorporate farmer ownership and control.

Integrated Pest ControlIntegrated Pest Management promotes the protec-tion of environmentally sensitive growing areas, soiland water conservation, as well as the prudent man-agement of crop pests and herbicide use. TheIntegrated Pest Management standards for Sysco'sprogram were written with the assistance of theindependent Integrated Pest Management Institutein Madison, Wisconsin and with valuable input frommany of Sysco's canned and frozen fruit and veg-etable suppliers. The goal of this program is the useof environmentally friendly pesticides, only as nec-

essary. This is a large initiative for our company thatcurrently involves 70 suppliers, 140 food factories,and approximately 3.7 million acres of crop land.Sysco-branded suppliers of canned and frozen fruitand vegetables were required to submit IPM andsustainable agricultural programs. An independentthird party audit during the growing season willmeasure supplier compliance to Sysco's IPM stan-dards. Our effort to implement the IPM process inPeru and Mexico on vegetable and fruit commodi-ties has produced important results. Over the pastfive years farmers in these two countries, who sup-ply agricultural commodities to Sysco, have realizeda 65% reduction in pesticide use. It would not berealistic to expect these dramatic reductions inchemical use in American agriculture. However, weare convinced that through these efforts we willmake a huge impact toward a more sustainablefood supply.

Local, Seasonal FoodIt is clear that consumers are demanding an under-standing about the food they consume. They wantto purchase more nutritious food products andknow where these foods are produced. These con-sumer attitudes are creating a growing market fornatural and organic foods which could be suppliedthrough a local food system initiative. Our companyis seeking to respond to this consumer demand formore local and sustainable produced foods by link-ing the farmer with the customer through the mod-ification of existing procurement and distributionsupply chains. Several Sysco operating companiesare providing exciting menu alternatives of locallyproduced products to their customers. It is our goalto keep the procurement and distribution strate-gies simple by providing products to the customersas they are available, and while quantities last.

Ag-In-The-Middle ProcurementAg-In-The-Middle is defined as family owned farmswhich are larger than a niche hobby farm, whilesmaller than the corporate-owned commodity rais-ing enterprise. These Ag-In-The-Middle farmsshould be characterized as providing the principalsource of income for an individual family unit. Thesupport of this agricultural segment will be coordi-nated through Land Grant University support andour Corporation's interest in developing value-added niche products. Focus in this area is critical to

attempt to address the rapidly changing landscapeof rural America. This segment of agriculture hasthe potential to specialize, producing value-addeddifferentiated products. We believe niche productsprovided by this farmer group, if properly devel-oped and marketed, will supply exciting menu alter-natives for our restaurant customers. Menu ideasinclude natural beef or pork products, fresh/frozenfruits and vegetables, natural or organic poultry, andorganic produce and dairy products.

Business Coalition for MoreSustainable FoodThe Business Coalition for More Sustainable Food(BCSF) will harness the buying power of food relat-ed companies to create more sustainable food sup-ply systems. Business leadership is necessary toinsure sufficient productivity in the future.Successful businesses need to keep abreast oftrends, respond quickly to emerging markets, devel-op more sustainable food systems, and help shapemarkets for more sustainable food distribution. Agrowing number of consumers are demandinghealthier, more environmentally friendly food prod-ucts. Food companies have been responding tothese demands on an individual basis. We believe itis time to come together, share vital information,and collaborate to create a more sustainable systemfor the generations to come. Business Coalitionmembers will include public or privately ownedcompanies, small and large, domestic or interna-tional in scope, which work collectively to aggre-gate demand, identify best practices, and improvethe social, environmental, and financial perform-ance of specific supply chains.The BCSF will addressa broad set of issues including farmer income, com-munity impact, land use, water use, packaging, pes-ticides, transportation and energy consumption.

Operating as an independentdepartment, this team is dedicatedto one mission: delivering Syscobrand products that meet thehighest standards of quality, safe-ty, and consistency. From aspara-gus to zucchini, peace of mind iswhat Sysco brands deliver.

Comprised of trained and experi-enced food safety and produceQuality Assurance professionalsand technical services experts, theQuality Assurance team verifiesSysco's quality and safety specifi-cations are adhered to. This team

has the authority to reject prod-ucts failing to meet Sysco's stan-dards. These professionals aregiven the high level of autonomyneeded to make sensitive and crit-ical decisions. Outlined below arethe components utilized to ensurefood quality, safety, and security.

microbial attributes• Review of adjacent land use,

water testing, and sanitationpractices

Tomato: Fruit or Vegetable?The question of whether the tomato is a fruitor a vegetable found its way into the UnitedStates Supreme Court in 1893. The court ruledunanimously in Nix v. Hedden that a tomato iscorrectly identified as, and thus taxed as, avegetable, for the purposes of the 1883 TariffAct on imported produce.
