    WHAT ARE MICROWAVES?

    SUITABLE OVENWARE

Microwaves are generated in the microwave ovenby a magnetron and cause the water molecules inthe food to oscillate.

Heat is generated by the friction which is caused, with the result that the food is thawed, heated orcooked.

GLASS AND CERAMIC GLASSHeat-resistant glass utensils are verysuitable. The cooking process can be

observed from all sides. They mustnot, however, contain any metal (e.g.

lead crystal), nor have a metallic overlay (e.g. goldedge, cobalt blue finish).

CERAMICSGenerally very suitable. Ceramics must be glazed, since with unglazed ceramics moisture can get intothe ceramic. Moisture causes the material to heat upand may make it shatter. If you are not certainwhether your utensil is suitable for the microwave, carry out the utensil suitability test.

    PORCELAIN

Very suitable. Ensure that the porcelain does not havea gold or silver overlay and that it does not containany metal.PLASTIC AND PAPER UTENSILSHeat resistant plastic utensils which are suitable for usein the microwave can be used to thaw, heat and cookfood. Follow the manufacturer's recommendations.Heat-resistant paper made for use in a microwaveoven is also suitable. Follow the manufacturer'srecommendations.

MICROWAVE FOILThis, or heat-resistant foil, is very suitable for covering

or wrapping. Please follow the manufacturer'srecommendations.

ROASTING BAGSCan be used in a microwave oven. Metal clips arenot suitable for fastening them since the roasting bagfoil might melt. Fasten the roasting bag with string andpierce it several times with a fork. Non heat-resistantfood wraps are not recommended for use in amicrowave oven.

BROWNING DISHA special microwave dish made from ceramic glass witha metal alloy base, which allows food to be browned.

When using the browning dish a suitable insulator,e.g. a porcelain plate, must be placed between theturntable and the browning dish. Be careful to adhere

exactly to the pre-heating time given in themanufacturer's instructions. Excessive pre-heating candamage the turntable and the turntable stand or cantrigger the safety-device which will switch off the oven.

METALGenerally speaking, metal should not be used, sincemicrowaves do not pass through metal and thereforecannot reach the food. There are, however, exceptions:small strips of aluminium foil may be used to covercertain parts of the food, so that these do not thaw tooquickly or begin to cook (e.g. chicken wings).Smallmetal skewers and aluminium containers (e.g. of ready-

cooked meals) can be used. They must, however, besmall in relation to the food, e.g. aluminium containersmust be at least 2/3 to 3/4 filled with food. It isrecommended that you transfer the food into a dishsuitable for use in the microwave. When usingaluminium containers or other metal utensils there mustbe a gap of approx. 2 cms between them and thewalls of the cooking area, otherwise the walls could bedamaged by possible arcing.

NO UTENSIL SHOULD HAVE A METAL

OVERLAY metal parts such as screws, bands or handles.

    UTENSIL SUITABILITY TEST

If you are not sure whether your utensilis suitable for use in your microwaveoven, carry out the following test:Place the utensil into the oven. Place

a glass container filled with 150 ml of water on ornext to the utensil. Switch on the oven at 800 Wpower for 1 to 2 minutes. If the utensil stays cool orjust warm to the touch, it is suitable. Do not use thistest on a plastic utensil. It could melt.

    TIPS AND ADVICE

TIME SETTINGSIn general the thawing, heating and cooking times aresignificantly shorter than when using a conventionaloven. For this reason you should adhere to therecommended times given in this cookery book. It isbetter to set the times too short, rather than too long. Testthe food after it has been cooked. It is better to have tocook something for a little longer than to overcook it.

INITIAL TEMPERATURESThawing, heating and cooking times are dependent

upon the initial temperature of the food. Deep-frozenfood and food stored in a refrigerator, for example, requires longer than food which has been stored atroom temperature. For heating and cooking, normalstorage temperatures are assumed (refrigeratortemperature approx. 5 C, room temperature approx.20 C). For thawing the temperature of the deepfreeze is assumed to be -18 C.COOKING TIMESAll the times given in this cookery book areguidelines, which can be varied according to theinitial temperature, weight and condition of thefood (water or fat content etc.).SALT, SPICES AND HERBSFood cooked in your microwave retains its individualflavour better than it does when conventionalpreparation methods are used. For this reason youshould use salt sparingly and normally add it only aftercooking. Salt absorbs liquid and dries out the outerlayer of food. Herbs and spices can be used as normal.

ADDITION OF WATERVegetables and other foods with a high watercontent can be cooked in their own juice or withthe addition of a little water. This ensures that manyvitamins and minerals are preserved.

FOOD IN SKINS OR SHELLSFoods such as sausages, chickens, chicken legs, baked potatoes, tomatoes, apples, egg yolks or suchlike should be pricked or pierced with a fork or smallwooden skewer. This will enable the steam whichforms to dissipate without splitting the skin or shell.

FATTY FOODSFatty meat and layers of fat cook better than leanportions of meat. Before cooking, cover the fattyportions with a piece of aluminium foil or place thefood with the fat side down.

LARGE AND SMALL QUANTITIESMicrowave times are directly dependent upon theamount of food which you would like to thaw, heator cook. This means that small portions cook morequickly than larger ones. As a rule of thumb:TWICE THE AMOUNT = ALMOST TWICE THE TIMEHALF THE AMOUNT = HALF THE TIME

DEEP AND SHALLOW CONTAINERSBoth containers have the same capacity, but thecooking time is longer for the deeper one. You

should therefore choose as flat a container aspossible with a large surface area. Only use deepcontainers for dishes where there is a danger ofovercooking, e.g. for noodles, rice, milk etc..

ROUND AND OVAL CONTAINERSFood cooks more evenly in round or ovalcontainers than in containers with corners, sincethe microwave energy concentrates in the cornersand the food in these areas could becomeovercooked.

COVERINGCovering the food retains the moisture within it and

shortens the cooking time. Use a lid, microwavefoil or a cover. Foods which are to be crispy, e.g.roasts or chickens, should not be covered. As ageneral rule, whatever would be covered in aconventional oven should also be covered in amicrowave oven. Whatever would be uncoveredin an ordinary oven can also be left uncovered ina microwave oven.

IRREGULAR SHAPED FOODPlace the thicker, more compacted end of the foodpointing towards the outside. Place vegetables(such as broccoli) with the stalks pointing outward.

STIRRINGStirring the food is necessary, since themicrowaves begin by heating the outer areas. Thetemperature is thereby equalised and the foodheats up evenly.

ARRANGEMENT OF FOODPlace a number of individual portions, such assmall pudding moulds, cups or potatoes in theirjackets, in a circle on the turntable. Keep theportions at a distance from each other so thatthe microwave energy can reach the food fromall sides.

    TIPS AND ADVICE

TURNINGMedium-sized items, such as hamburgers andsteaks, should be turned over once during cooking,in order to shorten the cooking process. Largeitems, such as roasts and chickens, must be turned, since the upper side receives more microwaveenergy and could dry out if not turned.

STANDING TIMEKeeping to the standing time is one of the mostimportant rules with microwaves. Almost all foods,

which are thawed, heated or cooked in themicrowave, require a certain amount of time to stand,

during which temperature equalisation takes placeand the moisture in the food is evenly distributed.

BROWNING AGENTSAfter more than 15 minutes' cooking time food acquiresa brownness, although this is not comparable to thedeep brownness and crispness obtained throughconventional cooking. In order to obtain an appetisingbrown colour you can use browning agents. For themost part they simultaneously act as seasoning agents. In the following table you will find some suggestions

for substances you might use for browning and someof the uses to which you might put them.

    BROWNING AGENT

    Melted butter and dried paprika

    Dried paprika

Soya sauceBarbecue and Worcestershire sauce, Gravy

Rendered down bacon fat or dried onions

    Cocoa, chocolate flakes, brown icing,

Sprinkle pieces of bacon ordried onions on topSprinkle pieces on top of cakes

and desserts or use to glaze

    DISH METHOD

HEATINGG Ready-prepared meals in aluminium containers

should be removed from the aluminiumcontainer and heated on a plate or in a dish.

G Remove the lids from firmly closed containers.G Food should be covered with microwave foil, a

plate or cover (obtainable from stores), so thatthe surface does not dry out. Drinks need not becovered.

G When boiling liquids such as water, coffee, teaor milk, place a glass stirrer in the container.

G If possible, stir large quantities from time to time,to ensure that the temperature is evenlydistributed.

G The times are for food at a room temperature of20 C. The heating time for food stored in arefrigerator should be increased slightly.

G After heating allow the food to stand for 1-2minutes, so that the temperature inside the foodcan be evenly distributed (standing time).

G The times given are guidelines which can bevaried according to the initial temperature, weight, water content, fat content or the resultwhich you wish to achieve.

DEFROSTINGYour microwave is ideal for thawing. Thawing timesare usually considerably shorter than in traditionalmethods. Here are a few tips. Take the frozen item outof its packaging and place on a plate for thawing.Boxes and ContainersBoxes and containers suitable for microwaves areparticularly good for thawing and heating food, sincethey can withstand temperatures in a deep freeze(down to approx. 40 C) as well as being heat-resistant (up to approx. 220 C). You can therefore use

the same container to freeze, thaw, heat and evencook the food, without having to transfer it.CoveringCover thin parts with small strips of aluminium foil beforethawing. Thawed or warm parts should likewise be coveredwith aluminium strips during thawing. This stops the thin partsbecoming too hot while thicker parts are still frozen.Correct settingIt is better to choose a setting which is too low ratherthan one which is too high. By so doing you willensure that the food thaws evenly. If the microwavesetting is too high, the surface of the food will alreadyhave begun to cook while the inside is still frozen.

    TIPS AND ADVICE

Turning/stirringAlmost all foods have to be turned or stirred from timeto time. As early as possible, separate parts which arestuck together and rearrange them.

Small amountsThaw more quickly and evenly than larger ones. Werecommend that you freeze portions which are assmall as possible. By so doing you will be able toprepare whole menus quickly and easily.

    Foods requiring careful handling

Foods such as gateaux, cream, cheese and breadshould only be partially thawed and then left to thawcompletely at room temperature. By so doing you willavoid the outer areas becoming too hot while theinside is still frozen.Standing timeThis is particularly important after thawing food, as thethawing process continues during this period. In thethawing table you will find the standing times forvarious foods. Thick, dense foods require a longerstanding time than thinner foods or food of a porousnature. If the food has not thawed sufficiently, you maycontinue thawing it in the microwave oven or lengthenthe standing time accordingly. At the end of thestanding time you should process the food as soon aspossible and not re-freeze it.

COOKING FRESH VEGETABLESG When buying vegetables try to ensure that, as far

as possible, they are of similar size. This isparticularly important when you want to cook thevegetables whole (e.g. boiled potatoes).

G Wash the vegetables before preparing them, cleanthem and only then weigh the required quantity forthe recipe and chop them up.

G Season them as you would normally, but as a rule

only add salt after cooking.G Add about 5 tbsps of water for 500 g of

vegetables. Vegetables which are high in fibrerequire a little more water. You will find informationabout this in the table.

G Vegetables are usually cooked in a dish with a lid. Those with a high moisture content, e.g. onions orboiled potatoes, can be cooked in microwave foilwithout adding water.

G After half the cooking time has elapsed vegetablesshould be stirred or turned over.

G After cooking allow the vegetables to stand forapprox. 2 minutes, so that the temperaturedisperses evenly (standing time).

G The cooking times given are guidelines and dependupon the weight, initial temperature and conditionof the type of vegetable in question. The fresher thevegetables, the shorter the cooking times.

COOKING MEAT, FISH AND POULTRYG When buying food items, try to ensure that, as far

as possible, they are of similar size. This will ensure

that they are cooked properly.G Before preparation wash meat, fish and poultry

thoroughly under cold running water and pat themdry with kitchen paper. Then continue as normal.

G Beef should be well hung and have little gristle.G Even though the pieces may be of a similar size,

cooking results may vary. This is due, amongstother things, to the kind of food, variations in the fatand moisture content as well as the temperaturebefore cooking.

G After the food has been cooking for 15 minutes itacquires a natural brownness, which may beenhanced by the use of a browning agent. If, inaddition, you would like the surface to be crisp youshould either use the browning dish or sear the foodon your cooker and finish cooking it in yourmicrowave. By doing this you will simultaneouslyobtain a brown base for making a sauce.

G Turn large pieces of meat, fish or poultry half waythrough the cooking time, so that they are cookedevenly from all sides.

G After cooking cover roasts with aluminium foil andallow them to stand for approx. 10 minutes (standingtime). During this period the roast carries on cookingand the liquid is evenly distributed, so that when it is

carved a minimum amount of juice is lost.DEFROSTING AND COOKINGDeep-frozen dishes can be thawed and cooked at thesame time in one process in your microwave. You willfind some examples in the table. Do take note, however, of the general advice given on "heating" and"thawing" food. Please refer to the manufacturer'sinstructions on the packaging when preparing deep-frozen dishes. These usually contain precise cookingtimes and offer advice on preparation.

    RECIPES

    ADAPTING RECIPES FOR THE

MICROWAVE OVENIf you would like to adapt your favourite recipes forthe microwave, you should take note of thefollowing:Shorten cooking times by a third to a half. Followthe example of the recipes in this cookery book.Foods which have a high moisture content such asmeat, fish, poultry, vegetables, fruit, stews andsoups can be prepared in your microwave without

any difficulty. Foods which have little moisture, such as platters of food, should have the surfacemoistened prior to heating or cooking. The amount of liquid to be added to raw foods, which are to be braised, should be reduced toabout two thirds of the quantity in the originalrecipe. If necessary, add more liquid duringcooking.

The amount of fat to be added can be reducedconsiderably. A small amount of butter, margarineor oil is sufficient to flavour food. For this reasonyour microwave is excellent for preparing low-fatfoods as part of a diet.

HOW TO USE RECIPESG All the recipes in this cookery book are

calculated on the basis of 4 servings - unlessotherwise stated.

G Recommendations relating to suitable utensils

and the total cooking times are given at thebeginning of every recipe.G As a rule the quantities shown are assumed to

be wholly consumable, unless specificallyindicated otherwise.

G When eggs are given in the recipes they areassumed to have weight of approx. 55 g(grade M).
