Message from the General Manager

A warm welcome to the April/May edition ofResort Happenings. Queenslanders havecertainly endured testing times over the pastfew months and my thoughts go out to thosewho were directly effected by the devastationcaused by floods or cyclones. The Gold Coastwas lucky to be unscathed however the heavyrain took its toll on our championship coursein the lead up to the ANZ RACV Ladies Masters.Thankfully the masters course was broughtback to its best by the Golf Maintenanceteam and featured to the world in all its glorywith spectacular shots of the course, resort,Gold Coast beaches and its hinterland.

The international event not only proved agreat success in confirming Queensland is a fantastic holiday and sporting destination,but we also watched as a new champion, Yani Tseng from Korea, was crowned as theworld’s number 1 lady professional golfer asshe took out the event. Complementing the 4 day tournament, was the ever-popularLadies Masters Afternoon Tea that saw guest speakers Sandra McKenzie from the 10 Network and US professional golfingpersonality, Christina Kim entertain guestsover a sumptuous high tea. The localcommunity event was fully subscribed againand through the generosity of guests, muchneeded funds were raised for Youngcare, acharity organisation dedicated to providingcare to young Australians in nursing homes.

With Easter upon us, take a look at ourwonderful Easter dining options and activitiesincluding exciting chocolate cooking classesin our resort patisserie and don’t forget ourMother's Day breakfast and lunch options tospoil mum.

For those of you that visit the resort, you mayhave noticed that the scaffold on Level 21 and22 is coming down. The progress on the newrooms and suites, RPR’s Restaurant and theExecutive Lounge has been fast and with onlya few months to go before completion, youwill soon be able to revisit one of the Coast’smost iconic restaurants and bars on Level 21.

In May, Gold Coaster’s and AFL supportersalike will have their first glimpse of animpressive new stadium, Metricon Stadium at Carrara and our newest national sportingteam, the GC Suns, as they take on theGeelong Cats on May 28. This will be anexciting event and with the resort being onthe new stadium’s doorstep, there will beplenty of pre and post dining and refreshmentareas open for those wanting to be part of allthe action. If you want to make a weekend ofit, we have also assembled some terrificaccommodation packages for your enjoymentthat will be available throughout the entireAFL season.

As a final parting note, after many greatyears on the Gold Coast, April will also seemy departure from the resort as I will bemigrating back to Melbourne. I will miss theweather and region and the resort and wishall readers and supporters of Royal Pines the very best.

I hope that you will enjoy this edition of ResortHappenings as the resort continues to delivermany exciting events in the coming months.

Masters a Success

start of the year was to be ranked the bestplayer in the world. She advanced from No. 5 to No. 2 with the Australian Open win and completed the journey at RACVRoyal Pines Resort.

The RACV Royal Pines Resort golf coursewas picture-perfect for the four-day eventshowcasing women's golf to the world and,after months of devastation, testified thatQueensland was still open for business.

Panoramic shots of the healthychampionship course, endless blue skiesand glimpses of the turquoise oceanbroadcasted by the 10 Network and One HDproved to be valuable international sportstourism coverage.

After rain battered the Gold Coast for monthscausing flooding in many parts of the SouthEast, organisers were nervous and a plan tomove the ANZ RACV Ladies Masters toanother location was seriously considered.

However, timing was impeccable as the rain eased allowing the resort's Golf Course Maintenance team time to prepare a beautiful course that had TournamentDirector Ben Touhy comment as the bestconditioned course in 20 years of the Masters.

This was a great effort considering manyinternational players believed RACV RoyalPines Resort was under water. The perfectdays also scored perfect results withTaiwan's Yani Tseng claiming the world No. 1ranking from Korean Jiyai Shin shooting aclosing 68 to win the Ladies Masters.

Tseng, 22, who has played the LadiesMasters on Queensland's Gold Coastsince she was a 16-year-old amateur,produced rounds of 67, 66, 63 and 68against par of 72 to finish at 24 under par,four shots clear of Australia's NikkiCampbell and American Stacy Lewis.

Tseng's elevation to the top spot in therankings is almost routine for the LadiesMasters. Others to use the tournament as aspringboard to No. 1 are Webb, AnnikaSorenstam and Lorena Ochoa.

The winner of three majors, the 2009 LPGAChampionship and the Kraft Nabisco andBritish Open in 2010, said her goal at the 2011 Winner: Yani Tseng

Ladies Masters Afternoon Tea

The English tea was brewing, scones weresteaming, and champagne was flowing aswere the conversations at this year's LadiesMasters Afternoon Tea.

Golfing champion Christina Kim and 10Network commentator Sandra McKenziemade an appearance while guests enjoyeda delightful High Tea consisting of freshsandwiches and sweet treats just metresfrom the action of the ANZ RACVLadies Masters tournament.

There were plenty of prizes up for grabsincluding the major prize of a Lexusweekend drive package plus accommodationat the luxurious RACV Noosa Resort.

Funds raised from this year's event went to Youngcare, an organisation dedicated toproviding care for young Australians in aged care and nursing homes.

Masters Monday

Join us at Tees' Clubhouse on Monday, 11 Aprilas the world will be waiting on a new MastersChampion to slip into a Green Jacket for the75th time at the Augusta National Golf Club in the USA.

The milestone comes with the first Mastersbeing held on March 22, 1934 under the titleknown as the Augusta National InvitationTournament. It wasn't until five years later that the original nickname, the MastersTournament, officially was tagged.

The Clubhouse will kick off the celebrationbroadcasting all the action from the finalround at 5.30am. After a hearty breakfast andthe crowning of the 75th Masters Tournamentchampion, golfers are invited to take part inthe resort's own tournament in the form of a 9-hold Stroke Play event.

2. Turn dough out onto a floured surface.Knead for 10 minutes, or until dough issmooth. Place into a lightly oiled bowl. Cover with plastic wrap. Set aside in awarm, draught-free place for 1 to 1 1/2hours, or until dough doubles in size.

3. Line a large baking tray with non-stickbaking paper. Punch dough down to itsoriginal size. Knead on a lightly flouredsurface until smooth. Divide into 12 evenportions. Shape each portion into a ball.Place balls onto lined tray, about 1cm apart.Cover with plastic wrap. Set aside in a warm,draught-free place for 30 minutes or untilbuns double in size. Preheat oven to 190°C.

4. Make flour paste: Mix flour and watertogether in a small bowl until smooth,adding a little more water if paste is toothick. Spoon into a small snap-lock bag.Snip off 1 corner of bag. Pipe flour pasteover tops of buns to form crosses. Bake for 20 to 25 minutes, or until buns arecooked through.

Hot Cross Bun RecipePsst. Our popular Hot Cross Bun recipe is asure way to make your Easter weekend a big success.

Ingredients • 4 cups plain flour • 2 x 7g sachets dried yeast • 1/4 cup caster sugar • 1 1/2 teaspoons mixed spice • pinch of salt • 1 1/2 cups currants • 40g butter • 300ml milk • 2 eggs, lightly beaten

Flour paste • 1/2 cup plain flour • 4 to 5 tablespoons water

Glaze • 1/3 cup water • 2 tablespoons caster sugar

Makes 12 large Buns

Method1. Combine flour, yeast, sugar, mixed spice,salt and currants in a large bowl. Melt butterin a small saucepan over medium heat. Addmilk. Heat for 1 minute, or until lukewarm.Add warm milk mixture and eggs to currantmixture. Use a flat-bladed knife to mix untildough almost comes together. Use cleanhands to finish mixing to form soft dough.

5. Make glaze: Place water and sugar into a small saucepan over low heat. Stir untilsugar dissolves. Bring to the boil. Boil for 5 minutes. Brush warm glaze over warm hot cross buns. Serve warm or at roomtemperature.

Tips• These buns are best eaten on the day theyare made. Otherwise, freeze for up to 7days. To defrost in microwave, place 1 hotcross bun onto a sheet of paper towel.Heat, uncovered, for 45 to 50 seconds(Medium-Low or Defrost setting at 30 percent power.) Stand for 1 minute.

• If you like smaller buns, divide the doughinto 2 balls and divide each into 8 portions.

Chef’s Recipe By Chef De Partie, Andrew Waszkiewicz

Method1. Preheat oven to 180 degrees. Put pumpkinon a baking tray add some oil, seasoning andmix well. Roast in the oven until cooked andset aside to cool.

2. Place the scallops in a bowl and marinatewith the pesto for 1 hour. Thinly slicecucumber on an angle, put into a bowl andadd white balsamic vinegar and marinate for 1 hour in the fridge.

3. Heat oil in small pot and deep fry sweetpotato strips. Using a vegetable peeler, makestrips of sweet potato and cook in the oil untilgolden brown. Set aside on paper towel.

4. Heat a fry pan with oil and sauté thescallops on each side for about 1 minute andseason well, and then chill the scallops.

5. To make the vinaigrette place the lemon,lime and orange juice into a bowl, add the oiland Dijon mustard and sugar, whisk well.Add chopped parsley.

Pumpkin salad• 300 gms of pumpkin, cut into 1cm pieces • 100 grams of roasted pine nuts• 1 x small sweet potato, peeled• 2 x handfuls of Mesculin lettuce, washed• 1 x medium cucumber, cut into ribbons• 1 x punnet of cherry tomatoes, cut into 1/4 • ½ small Spanish onion, thinly sliced • ½ small bunch of Parsley, chopped • 400ml vegetable oil

Citrus vinaigrette • Juice of one lemon & one lime • Juice of half orange • 200ml olive oil• 1 tsp sugar or to taste• 1 tsp Dijon mustard • 2 pinches of parsley, chopped

Scallops• 12 x scallops, roe removed• 4 tbls pesto• 50ml olive oil• 60ml white balsamic vinegar • 1 x Lebanese cucumber• Season to taste

6. To make the pumpkin salad, use avegetable peeler to make strips of cucumberand discard seeded centre. Add the cookedpumpkin, cucumber ribbons, sliced spanishonion, parsley, pine nuts (keep 30gm forgarnish), cherry tomatoes and Mesculinlettuce and lightly toss in a large bowl.

7. Drain the marinating cucumber and onthe right side of a rectangle plate; put threesmall cucumber bundles down in a rowequally apart, place the chilled scallopslightly on top. Add some finely slicedSpanish onion on top of the scallops.

8. On the left of the plate place pumpkin salad and garnish the salad with crispy sweet potato strips and pine nuts.

9. Drizzle the plate with vinaigrette.

Serves 4.
