As the beautiful holiday season winds toward the New Year, remember to bless the less fortunate around you. We have the ability to make simple and kind gestures to any stranger - and in doing so honor the holy spirit of these precious times. Blessings to all the casts, crews and staff of all the wonderful shows and concerts this year. You bring us all such amazing joy during the holidays! Merry Christmas and a Happy New year! Shalom!

PHOENIX BOYS CHOIR Festival of Carols Phoenix Locations.

The Holiday season wouldn’t be complete without the magnificent sounds of the Phoe-nix Boys Choir. Georg Stangelberger and his artistic staff (it takes alot of folks to pull off such an enormous undertaking) keep coming up with creative and fun ways to celebrate this rich tradition of Carols from around the world. As I sat with eyes closed resting from a busy week, I was taken away with heavenly harmonies from another place and time -maybe a few thousand years ago - to that great awakening where all men can and will be joined by a great light, Veni Veni Emmanuel! All the worries and cares just seemed to disappear at that moment, as hope returned eternal again. But there was more to enjoy this special day from these heavenly choirs - as the Tour, Town, and Masters collectively stunned the loyal visitors with another 5 star performance, including Fum Fum Fum from Mexico; Still, Still, Still from Austria; Mi Y’Malel from Israel; the traditional version of the Holly and the Ivy; O Tannebaum from Germany; Minuit Chretians by Adolphe Adam, and the delightful and charming Twas the Night Before Christmas by Ken Darby,Arranged by Simeone, and staged to perfection by Rachel and Mark Stoddard. Oh what a joy that was spread throughout this festive crowd - that may last for another thousand years! Kudos to all the Members of the Phoenix Boys Choir! I can’t wait for the February concert.

A CAROL FOR TINY TIM at Fountain Hills Community Theatre.

There was more fun to be had during this holiday season as FHCT and their Youth The-atre presented A Carol for Tiny Tim. There’s no secret why they have received 27ariZONI nominations this last year – talent - pure and simple. This was an edgy produc-tion, similar to A Christmas Carol, with spirits and ghosts hanging around old London. Only this time, we find a selfish and self centered Tim(played by talented Nick Disney) not tiny any more, taking advantage of his old uncle Ebeneezer Scrooge (played kindly by Hank Cipolaro), who has turned out to be the pillar of generosity in the community. But as the fates would have it, old Jacob Marley (played by the wise old veteran Chuck Disney) must enlist the talents of the three spirits of Christmas past (a stunning gem- Summer Beckman), Christmas present (the commanding Alice Bice), and Christmas Future (the mysterious Katie Male) to light up young Tim’s world. All’s well that ends well as the mystery of Christmas moves Tim to mends his ways and turn to the service of others as his true meaning of life. A splendid time was had by all, and even some hot cider shared to warm the weary soul. Next up, The Producers, January 14th.

SPOOKY KOOL at The Lost Leaf in Phoenix.

There’s a great spot for jazz in downtown Phoenix you have to visit soon - THE LOST LEAF Gallery, in the historic 5th street and Roosevelt neighborhood of Phoenix. They have food and refreshments too - but this night belonged to the hot and creative SPOOKY KOOL jazz group. We’ll be hearing alot about Gabriel Bey and his original Spooky Kool groove music experience in the coming weeks. They are as hot as New Orleans on a summer night! French producer Lagardere Entertainment is financing a 12-episode television series based on the Jason Statham-led action flick franchise “The Transporter.” The pro-gram will likely premiere next November on one of the major U.S. Networks.

Meanwhile, EuropaCorp is looking into developing a television series based on the Liam Neeson-led thriller “Taken.” How-ever, serious work on the potential project will not begin until the film’s sequel starts shooting this spring.

Pick Your Produce! by Chef Rachel Albert, The Healthy Cooking Coach

Is organic produce more nutri-tious? That depends on when and where you get it. Out-of-season organic pro-duce from a convention-

al or natural foods supermarket may have little chemical contamination, but it may not be more nutritious than conventional produce. Here’s why:

As detailed in The Garden of Eating: A Produce-Dominated Diet & Cookbook, farms raising mass market organic produce often use high nitrogen fertil-izers to accelerate growth, so fruits and veggies reach marketable size without having time to absorb miner-als or synthesize nutrients to maxi-mum possible levels. Mass-market farms often use hybrids selected for productivity, external appearance, and durability in transcontinental transportation, not taste or nutrition-al value. Lastly, imported produce is often picked before it has ripened and reached maximum nutritional value, then shipped 1500 miles before it reaches consumers.

Fresh produce can lose 50 percent of

its carotene (pro-vitamin A) and 60 percent of its vitamin C within 3 days of harvest. Within a week, these nu-trients can be completely lost. Rarely is produce in your mouth within a day of harvest when the nutritional value is greatest (assuming it was allowed to ripen fully).

The solution? Whenever possible pick produce from local growers. Locally and organically grown produce is the best choice. If this isn’t available or affordable, choose locally grown non-organic produce from small farmers who typically use fewer chemicals than large mono-crop farms that pro-duce produce only for transcontinen-tal shipment and supermarket sales.

As a bonus, locally grown organic pro-duce often costs less than imported varieties and many people find that it lasts longer because it’s fresher.

Where do you find local food? Visit local farmers markets where you’ll find an enticing array of vine-ripened fresh fruits and veggies, raw honey, locally grown eggs, and hand-made goodies prepared by people in your community.

This mid-week farmers market located in central Phoenix in the Town & Country Plaza (2021 E Camelback Rd) Wednesday morn-ings from 9 am to 2 pm, attracts a loyal following.

If you’re new to the valley, you might be expecting the fanfare of a West Coast or Midwest farmer’s market. When I moved to the val-ley seven years ago, I was excited to hear about this farmers’ mar-ket. However, I failed to find it the first few times I searched for it. I was looking for rows of produce vendors in the middle of the park-ing lot. I saw signs but I didn’t know where they were pointing. Turns out the sellers were sta-tioned at tables in the covered walkway in front of the shops on the Trader Joe’s side of the plaza.

While this market lacks the size of some city’s markets, the two main produce vendors, former pharmacist, Bob McClendon of McClendon’s Select and former Nurse, Jana Anderson of Pinnacle Gardens, offer appetizing deals on fresh, mostly locally grown, or-ganic fruits and vegetables. You’ll find heirloom varieties and price tags that are usually lower than what you’d find in stores.

ALL HAIL THE ALE

We are going to work on finishing up the Ale styles over the next two weeks and then look at lagers. Some-where in there we will work in some things like cider and maybe even mead. So let’s get started.

Scottish Ale - Scottish Ales origi-nated in Scotland and are generally clean and malty with perhaps a faint touch of smoke and few fruity esters. Most examples have a low hop profile due to the historical fact that hops are not grown in Scotland and expensive imported hops were, therefore, used sparingly. Some examples also have a peaty character which is typically per-ceived as earthy, smoky or very lightly roasted. Typically this ale is clear, deep amber or dark copper in appear-ance, although the stronger versions can be dark brown in color. Scot-tish Ales are divided into sub-styles differentiated on alcoholic strength ranging from a low of 2.5% to around 10% ABV. This style also includes the more heavy duty Scotch Ale.

Smoked Ale - Not to be confused with their smoked German style counterparts - the rauchbiers - or the Scottish ales, smoked ales are a class of ales (of theoretically any other

substyle) that is smoked to achieve smoky aromas and flavors. Porters are the most common base style and vari-ous sources (e.g. peat, oak, maple, alder, mesquite, beechwood, and fruit woods) can be used to obtain the smoky properties of a smoked ale (the malt ingredients are smoked prior to brewing). Regardless of the base style, the smoking should seek to enhance and not overpower the base beer. Generally, the smoked flavors are less prominent in smoked ales than those found in rauchbiers.

Spiced Ale - The spiced ale category captures any ale (or lager) containing spices, herbs, flowers, or vegetables that does not better fit another exist-ing style that is traditionally made with spices (ie. a Belgian Wit brewed with coriander is properly classi-fied under Witbier). The additives can include any spice, herb, flower, or vegetable and is only limited by the imagination of the brewer. Beers brewed only with fermentable addi-tives/adjuncts (like honey or molasses but no spices, herbs, flowers, or veg-etables) are normally not categorized as spiced ales. The ideal examples from this style typically do not include extreme or overpowering quantities of the spices, herbs, or vegetables, but rather complementary and sup-porting levels that add creativity or help to enhance the base beer style. Pumpkin, Winter specialty, Gruit, Heather, Spruce, and Chili are some examples of spiced ale substyles that have gained notoriety within craft brewing.

Stouts- Dry Stout - Dry stouts (often referred to as Irish Stouts) are ma-hogany brown to black in appearance and normally feature a generous tan to brown head with excellent reten-tion. The aromas and flavors normally consist of roasted barley, coffee, caramel, chocolate, and sometimes astringent and / or acidic qualities. As their name suggests, the finish is typi-

fied by a bitter dryness that comple-ments the underlying creaminess of the body. The bitterness, dryness, and acidity should never dominate to the point of removing the smooth quality of these beers.

Stouts - Foreign / Extra Stout - For-eign stouts were originally brewed as export products for tropical islands. They are usually based on a dry stout or sweet stout foundation with an extra level of maltiness and higher alcohol levels. They fall short of an imperial stout in both alcohol level and hopping (both less with hops playing a minor role at most). Beyond the basic caramel and roasted malt flavors, the interpretations can vary a bit. Frequently, extra stouts start malty and finish with a dry bitterness, although either sweetness or bitter-ness can overall characterize these beers. These beers have medium to full-bodied mouthfeel (sometimes with some acidity) and are dark brown

to black in appearance.

Stouts - Imperial Stout - As with most “imperial” beers, the imperial stout is “boss” of the stout world, emphasizing more maltiness, more alcohol, and often more hops than its non-imperial peers. The style origi-nated in England as an export product to the Baltic States, where the Russian Imperial Court purportedly

enjoyed these products. This style has intense flavors including those typical of any stout (but magnified and more complex), as well as dark fruitiness (prunes, plums, and raisins). Some of the more popular imperial stouts of today include a hoppy balance in the finish.

Stouts - Sweet Stout - The sweet stout category includes both “milk”(or “cream”) and “oatmeal” stouts. They are thus named be-cause they are brewed with lactose or oatmeal to increase their sweetness and complexity. Both tend to have roasted grain and coffee aromas and flavors, and the milk stouts often include chocolate malts in their profile. Their color is typically dark brown to black along with a rich tan to brown creamy head. While both are malty stouts, the milk stouts tend to be sweeter than oat-meal stouts, as they normally contain more unfermented sugars. The body of any sweet stout is rich, full, smooth, and sometimes silky.

Strong Ale - The strong ale category includes ales of essentially any style with higher alcohol levels (generally at least 7%) than what is common for that style. The amount of alcohol can be quite high in a strong ale (over 20% in some cases). The category is essentially a catch-all category and incorporates multiple base styles into the group, except for those styles that explicitly have their own strong (often “imperial” or “double”) category. The target of strong ales should not be overpowering and harsh flavors, but instead an enhanced overall quality from the additional alcohol.

The best way to do that is pick up a couple of singles and drop one in their stocking. Or get a six-pack and divide it up, or create mix and match six-packs for several friends.

Coldplay Quick to Isolate Themselves in Studio Coldplay sometimes forgets there are actually “other people in the world” when they are doing their thing in the studio. The ‘Viva La Vida’ rockers have spent much of the last year working on their fifth album, and said they have to make sure they don’t get too absorbed in themselves and their recording process. Singer Chris Martin recently stated: “Sometimes you can get very insti-tutionalized in the studio. You can for-get you’re going to have to play this for other people. That’s when music can get a bit silly.” Guitarist Jonny Buckland added: “You can forget that there are actually other people in the world.” The album is being made by the band which also features bassist Guy Ber-ryman and drummer Will Champion - alongside two producers, Brian Eno

and Markus Dravs. Chris and Jonny explained how they fulfil very differ-ent roles in working with the band. “Brian is very much the sower of seeds, ideas, experimenting and liberating,” said Chris. “Markus’ job is to come in after all that has been done and sculpt it into some kind of releasable format. They’re very much like a tag team and we’re very lucky to have them.” Jonny added: “At the moment we’re working with Marcus on the sculpture bit.” Coldplay’s as-yet-untitled fifth album is set to be released next year.

Ne-Yo Eager to Reunite ‘Girls Aloud’ Ne-Yo wants to reunite Girls Aloud. The ‘Beautiful Monster’ hitmaker is keen to write songs for the girl band - consisting of Cheryl Cole, Nadine Coyle, Sarah Harding, Kimberley Walsh and Nicola Roberts - even though they haven’t worked together for over a year, because he wants them to put their differences behind them and get back together. He recently stated: “It’s Christmas, time for putting whatever dramas you have behind and making sweet music. I’m a huge fan of curvy Kimberley Walsh and I’d love to do something with them all. “Let’s make some hits, girls. Give me a call. I’m always up for making music, it’s something we’ve talked about.” Girls Aloud last performed together in September 2009, supporting Cold-play at London’s Wembley Stadium,

but the girls have since soured as they have all worked on different projects. While Cheryl, Kimberley, Nicola and Sarah are said to still be close friends, they are currently not in contact with Nadine and it was recently revealed they had hadn’t spoken to her in over a year. However, all members have insisted they will get back together, but just don’t know when.
