Divide the mixture into two parts, one of which will incorporate the grated chocolate and rum to taste. White composition flavor taste with remaining lemon zest. In tray lined with baking paper cake poured white uniform composition, and above it the chocolate. Dam tray in the oven at medium heat until cake passes toothpick test and is firm to the touch.

Remove the cake on a rack, complete with baking paper. Once cooled partitioned.
