Corn and Black Bean SaladCorn and Black Bean SaladIngredients1 jar Stonewall Kitchen Spicy Corn Relish*The Stonewall special blend is key for exceptional flavor.

1 can Black beans - 15 ounce, rinsed & drained4 ounces Monterey Jack cheese, cut into 1/2-inch cubes1 avocado, peeled, pitted, and diced3/4 cup cherry or grape tomatoes, quartered2 Tablespoons fresh cilantro, chopped

Place all ingredients in a serving bowl. Toss and serve at room temperature.

I met my "bestest" friend Sue on our first day of kindergarten in Wheatonin the early 60s. When we would visit Little Traveler, of course the Toy Roomwas our favorite, especially the stuffed animals (which still are the best). Ifwe were allowed to pick one out, our “system” was to hold two of the samestyle next to each other to see which one had the cutest face. Flash forward30 years when Sue was visiting me from PA, and of course we made a tripto LT.
