We had a great time at the Mardi Gras last Saturday. People asked me how I made the Louisiana Red Beans and Rice. Here it is: 1 lbs Red Kidney beans 1 Andouille sausage, spicy, cut into 1/2 - 1 inch discs 1 Smoked ham hock (optional), ask the butcher to saw it in half. Olive Oil or bacon fat onion, green pepper, celery — diced. 1 clove of garlic crushed fresh parsley chopped 2 bay leaves small can of tomato sauce salt to taste cayenne pepper to taste 1/2 Caribbean squash (calabaza) optional. cold water Soak the beans in 4 cups of cold water with the ham hock (for extra flavor) for 2-3 hours. The beans will soak up most of the water. In a large pot heat the oil or fat and sauté the onion, green pepper, celery, garlic and parsley, then add the sausage pieces and the ham hock to brown. Carefully add the beans and add another 4 cups of water, tomato sauce, salt and cayenne pepper, stir. Once it boils reduce the heat and cook uncovered for 2-4 hours until it thickens. Stir occasionally to prevent sticking. Add Calabaza (optional) when one hour is left to cook, uni soft throughout. Taste and adjust the seasonings. Turn flame off and let it rest for another hour. reheat before serving. Refrigerate and enjoy leftovers or make refried beans. Serve over white rice. You can garnish with chopped green onions.

The Bread and Wine that are being offered at our Eucharistic Celebration this week are in loving memory of Alma Michaud. This is a gift from NBTHS Math Dept.

WORD OF LIFE

It is important to remember that no matter what you have done, you retain your dignity as a son or daughter of God, loved by the Father. What sin has disintegrated, grace can reunite and make whole.” - “Wash Me Throughly”: Healing from Pornography Use and Addiction - Daniel Spadaro/USCCB Committee

Catholic Trivia

Where do the ashes we use on Ash Wednesday come from? Last week’s answer: How can you tell Lent is here? Spr ing is coming. It’s after Ash Wednesday. At Mass there is no “Gloria” and we do not say “Alleluia.” We abstain and fast. The statues are covered in violet cloths which reminds us to do penance.

By now you have received a letter from Bishop Checchio inviting your participation in the 2017 Bishop’s Annual Appeal. The diocesan ministries supported by the Appeal directly impact many of the parishioners here in St. James the Less. Your gift provides formation opportunities for our catechists, deacons, youth and young adults. Among other important ministries, your sacrificial giving also allows our hospital chaplains to minister to those experiencing physical and emotional pain and helps to prepare our seminarians for a life in the priesthood. If you have yet to make your pledge to this year’s Bishop’s Annual Appeal, you will have the opportunity to do so next weekend, March 11/12, which has been designated as Bishop’s Annual Appeal In-Pew Weekend. Please prayerfully consider a gift to the Bishop’s Annual Appeal to help our parish reach its goal. If we can exceed our goal, 50% of the amount collected over goal will be returned to us in the form of a parish rebate. Just as important as our financial goal is our goal of reaching 100% participation. Every gift, no matter the size, is important and greatly appreciated. Thank you.
