Charmane Skillen is a champion for shifting consumer lifestyles to a more wholly nutritious and beneficial one. At the same time, she has grown a successful niche business called s.a.l.t. sisters in rural America with an exceptionally determined entrepreneurial spirit.

Charmane’s motivation to create, deliver and distribute an exceptional food product stems from a passion for Nature’s most essential elements and for her strong familial ties. The brand name (s.a.l.t. sisters) is an acronym for her four daughters: Sydney, Alexis, Lauren and Taylor.

Armed with the knowledge of the incredible benefits of unprocessed and unrefined sea salt she sourced and packaged a product under the s.a.l.t. sisters label and scheduled herself to appear at regional farmers markets each week to sell product in 2007. From those humble roots the product line grew in popularity and led to an expansion of its offerings in 2009. Thus, along with a strong portfolio of unrefined salt the company staked a claim in organic cane sugars (c.a.n.e), seasoning rubs (r.u.b.s), vanilla infusion kits (b.e.a.n), and natural herb blends (h.e.r.b). The wide ranging palate of the brand commanded the attention of a wholesale market and many discernible chefs. The products even received a nod from Giada De Laurentiis in a 2009 feature segment of holiday gift ideas for NBC’s TODAY show.

What started as a personal endeavor to educate the populous on the many benefits of unrefined salt has blossomed into a business venture based in Goshen, Indiana comprised of four employees and a healthy distribution of product in 27 states. What has not changed is the mission of the brand:

Herb and Tomato Crusted CodA delightful twist on the traditional herb-crusted fish, this one may be missing the bread crumbs but not the flavor. The potatoes create a crunchy crust with a cheesy herb topping.

2 lbs of fresh cod1 to 2 cups instant potatoes2 teaspoons fresh thyme, chopped2 teaspoons fresh basil, chopped1 ½ to 2 teaspoons s.a.l.t. Sun Ripened Tomato sea salt1 teaspoon garlic powder½ teaspoon pepper1 eggGrated parmesan cheeseCherry tomatoes, slicedOlive oil

Preheat the oven to 350 degrees. Cut fish into 3 to 4 oz pieces. Line a baking sheet with parchment paper and set aside. Drizzle oil over the bottom of the pan and heat until the oil is hot (test by dropping a drop of water into the pan – when it sizzles the oil is hot enough).

Beat an egg in a bowl and add a teaspoon of water. Place the chopped herbs on a plate. Put the instant potatoes on another plate and add the sundried tomato salt, garlic powder and pepper. Place the egg, herbs and seasoned potatoes in a row. Dip the fish in the egg, next lay the fish in the seasoned potatoes and press into the herbs.

Drop the fish gently into the oil. Do not move the fish until it releases and is crispy. Once it is crispy remove the fish from the oil and place it crispy herb side up. Sprinkle the fish with parmesan cheese while still hot and place sliced tomatoes on top. Repeat until all of the fish have the crispy top. Once all of the fish are crispy put the tray in the oven and cook for 10 to 12 minutes until flaky.

Cajun Shrimp Po’ BoyA quick easy sandwich, that gives a slight kick of heat. This is a great recipe to have on hand when you want to impress your guests.

¾ cup mayonnaise½ cup sour cream2 tablespoons apple cider vinegar1 tablespoon sugar½ tablespoon Celery s.a.l.t.1 ½ tablespoons sweet pickle relish½ pkg of coleslaw mix1 lb of peeled and deveined shrimp (51-60 per lb), defrosted and tails removed1 teaspoon olive oil2 teaspoons Blackened Cajun r.u.b5 whole wheat hot dog buns or sub rollsButter, softened

In a medium size bowl mix the first six ingredients. Add in the coleslaw and mix until the cabbage is fully coated, set aside. In a non-stick pan add the olive oil and swirl around until pan is coated and heat over medium-high heat. Once the pan is hot add the shrimp and sprinkle a teaspoon of the Cajun seasoning over the top. Cook until shrimp are pink and just cooked through, turning over half way through and sprinkling with the remaining Cajun seasoning.

Heat broiler to 500 degrees, butter buns and place on a baking sheet with the inside facing up. Broil until golden brown. To assemble the sandwiches, divide shrimp among the buns and top with about a 1/3 cup of coleslaw down the middle.

Tip: Look for already peeled and deveined shrimp for this recipe. Shrimp are usu-ally sold by the number needed to make a pound not be their size.

Vintage Merlot ButterAn herbed butter, created with delicious depth of flavor. Add a pat to a grilled steak, salmon or a baked potato and let the flavors melt in.

½ lb plus 1 tablespoon of butter, softened3 garlic cloves, minced1 large shallot, minced1 teaspoon thyme, chopped1 ½ teaspoon tarragon, chopped1 ½ teaspoon Vintage Merlot sea s.a.l.t.

In a small non-stick pan melt 1 tablespoon of butter and add the shallot and garlic. Sauté until softened, stir in the rest of the ingredients and cook until herbs are wilted slightly. Put on a plate and let cool. In the meantime mash the softened butter in a bowl and lay out a sheet of parchment paper. When the herb mixture is cooled, mix it into the butter gently. Once the herbs are mixed throughout, scoop the fragrant butter onto parchment paper. Carefully roll it in the parchment paper forming a log. Chill until ready to use, preferably overnight.

Mini Chocolate Raspberry CheesecakesDelicious layers of raspberry and chocolate topped with a raspberry whipped topping.

1 cup chocolate graham cracker crumbs3 tablespoons butter, melted3 pkgs (8 oz each) cream cheese, softened½ cup Raspberry c.a.n.e sugar¼ cup sugar1 teaspoon vanilla3 eggs¼ dutch processed cocoa powder3 tablespoons hot water1 cup whipping cream1 tablespoon vanilla pudding½ teaspoon raspberry extractRed food coloringFresh raspberries for garnishing

Preheat the oven to 325 degrees. Mix graham cracker crumbs and melted butter. Press into the bottom of 18 paper lined muffin cups. Beat together cream cheese, sugars and vanilla until creamy. Add eggs one at a time, mixing at low speed in between. Spoon 1 to 1 ½ tablespoon of cream cheese mixture over the graham cracker crusts. There will be about half of the batter remaining.

Mix Dutch chocolate with 3 tablespoons of hot water. Add the Dutch chocolate to the remaining batter and mix in. Divide the batter between the 18 muffin cups being careful not to disturb the layer below. Put cupcakes in the oven and bake 25 to 30 minutes. Take cupcakes out and cool completely and then refrigerate for at least 2 hours or overnight.

Put whipping cream, pudding and raspberry extract in a bowl. Add the food coloring (15 to 20 drops). Using a handheld mixer beat the cream until it starts to solidify and forms soft peaks. Put a dollop of cream on each of the mini cheese-cakes and add a couple raspberries to the top.

Mojo Shrimp Cocktail Sauce1 cup Low Sugar or regular Ketchup 1-2 Tablespoons Mojo Seasoning

Mix both ingredients in a small bowl. Let cocktail sauce sit in refrigerator for 15 minutes before serving.

Cilantro Lime RiceThe aromatic Jasmine rice and other seasonings make for a delicious smell that quickly delights the senses. Use as a base for Asian dishes.

2 cups water1 cup Jasmine rice1 teaspoon ginger, minced2 cloves garlic2 tablespoons fresh cilantro1 lime2 teaspoons Thai Ginger s.a.l.t.

Armed with the knowledge of the incredible benefits of unprocessed and unrefined sea salt, she sourced and packaged a product under the s.a.l.t. sisters label and scheduled herself to appear at regional farmers markets each week to sell product in 2007. From those humble roots, the product line grew in popularity and led to an expansion of its offerings in 2009. Thus, along with a strong portfolio of unrefined salt, the company staked a claim in organic cane sugars (c.a.n.e), seasoning rubs (r.u.b.s), vanilla infusion kits (b.e.a.n), and natural herb blends (h.e.r.b). The wide ranging palate of the brand commanded the attention of a wholesale market and many discernible chefs. The products even received a nod from Giada De Laurentiis in a 2009 feature segment of holiday gift ideas for NBC’s TODAY show.

What started as a personal endeavor to educate the populous on the many benefits of unrefined salt has blossomed into a business venture based in Goshen, Indiana comprised of four employees and a healthy distribution of product in over 27 states. What has not changed is the mission of the brand.
