The Sodexo Foundation is delighted to be working in partnership with The Scout Association to sponsor the Scout Chef Activity Badge.

It has worked with the Scout Association to produce a series of resources to guide Scouts through the requirements of the Chef Activity Badge. The aim is to develop knowledge and proficiency in the areas of health and nutrition, food safety, planning and cooking skills.

There are six activity resources in total, each available as a downloadable PDF from www.scouts.org.uk/sodexo

They are:

These leader’s notes will guide you through each requirement of the Chef Activity Badge, and the resources required to help Scouts complete them.

THE BADGE REQUIREMENTS

DID YOU KNOW...?

1. Discuss how and where to shop for food and how to transport it. 2. Demonstrate proper storage and cooking. This should include knowledge of hygiene in the

kitchen and how to prevent food poisoning. 3. Create a menu for a three-course meal for two to four people, including the following menu items:

• two cooked dishes• a cake or pastry dish• two sauces such as mornay, apple, curry, mustard, parsley, chocolate, custard etc

4. Cook and serve this menu, demonstrating the necessary preparation and serving skills.5. Plan a full balanced menu for a small group of Scouts for at least one weekend. Discuss the choices made, assuming full kitchen facilities are available.

Since its UK launch in 2005, the Sodexo Foundation has raised over £1.5 million through its STOP Hunger initiative to support charitable causes linked to hunger, health and nutrition, and life skills such as cooking.

ACTIVITY: FOOD STORAGE ACTIVITY

Duration: 20 minsWhat you will need:

• Copies of the food storage activity on pages 4 & 5 of the activity pack

• Scissors• Glue

Instructions:

1. Split the Scouts into groups of three and ensure each one has a copy of the food storage activity, a pair of scissors and some glue.

2. Ask the Scouts to cut out the foods on page 4 of their activity packs.

3. They should now spend five minutes trying to stick the foods into the correct places in the fridge.

Answers:

Everything must be stored in the fridge apart from the bread which can be stored somewhere cool and dry outside the fridge. The fish, ham and chicken must be stored on the bottom shelf so that they don’t drip onto any other food.

REQUIREMENT 1

Before undertaking any cooking activity it is essential that Scouts are familiar with the basic principles of food safety and hygiene. Download and print the ‘Scout Food Safety Cards’ from www.scouts.org.uk/sodexo. These are an excellent introduction to the facts behind food safety and hygiene.

Ensure that each Scout can see a copy of the cards, and ask them to spend 15 minutes going through them, and discussing with their fellow Scouts. Once they have done this, it may be a good idea to ask them to take them home and study further.

ActivitiesPlease download and print sufficient copies of the Scout Chef Activity Badge resource pack from www.scouts.org.uk/sodexo. There are two activities in here designed to reinforce the principles of food safety and hygiene.

ACTIVITY: SPOT THE HAZARDS

Duration: 10 minsWhat you will need:

• A copy of the Spot the Hazards exercise for each Scout• A pen or pencil for each Scout

Instructions:

1. Turn to page 13 of the activity pack where you will find the Spot the hazards exercise. Give one to each Scout, along with a pen.

2. Ask them to spend five minutes finding as many hazards as they can and circling them on their sheets.

3. Once their five minutes are up, ask the Scouts to swap papers with a friend and read out the answers.

4. Give a prize to the Scout who spotted the most hazards. Answers:

1. Mop bucket beside the fridge2. Toaster wire in the filled sink3. Knife on the counter edge4. Water on the floor5. Bleach on counter top beside the cheese

6. Cheese not in the fridge7. Microwave wire hanging down8. Cupboard door open9. Open bottle on the counter10. Banana skin on the floor

ACTIVITY: BUYING AND TRANSPORTING FOOD

Duration: 20 mins

What you will need:

• A copy of the Buying And Transporting Food ‘true or false’ exercise for each Scout• A pen or pencil for each Scout

Instructions:

1. Turn to page 14 of the activity pack where you will find the Buying And Transporting Food ‘true or false’ exercise. Give one to each Scout, along with a pen.

2. Ask them to spend 10 minutes discussing the guidance and how they prefer to shop before spending a couple of minutes on the ‘true or false’ exercise.

ACTIVITY: DIET DISCUSSION

Duration: 20 mins

What you will need:

• A whiteboard (or similar)• Board pen• Copies of the Eatwell Plate on page 17 of the activity pack for

each Scout• Completed food diaries for each Scout (see page 6) - you may

also want to play the Funky Food Facts game first.

Instructions:

1. Divide the whiteboard into five sections. Write each of the five food groups in one of the sections. These are:

• Fruit and vegetables• Meat, fish, eggs• Starchy foods like rice, potatoes and pasta• Dairy• Foods high in fat and sugar

2. Invite each Scout to read out the different foods that they have logged in their diary. Write each food into the correct section of the board. Do it clearly enough so that the Scouts can see which food group each food belongs in.

3. Now ask the Scouts to turn to the Eatwell Plate on page 17 of their activity packs. Ask them to use the foods written on the board to come up with their perfect meal. They will notice that their plate is divided into five, according to how much of each food they should eat.

4. Ask them to draw their foods into the right section of the plate. Remind them that they can fill the plate, but they cannot draw any foods outside it, or in the wrong food group.

ACTIVITY: FOOD DIARY

Now that the Scouts have learned about different food groups, it is time to put their own diets to the test. On pages 18-20 of the activity pack you will find three plates; one for breakfast, one for lunch, and one for dinner. Ask the Scouts to take these home and fill in all of the foods that they ate at mealtime during the day. They can either write or draw them in. Ask the Scouts to bring their completed food diaries to your next meeting...

To earn their Scout Chef Activity Badge, Scouts must cook a balanced three course menu. It is therefore essential that they learn the principles of a balanced diet. Sodexo has created a fun, interactive way of doing this.

FUNKY FOOD FACTS GAME

Download the Funky Food Facts Game from www.scouts.org.uk/sodexo. This is an entertaining and engaging way of reinforcing the principles of a balanced diet to the Scouts.

What you will need:

• A copy of the Fun Food Facts Game for each group. Cut out the cards prior to the Scouts playing the game and

put them into sets.

Instructions:

1. Split the Scouts into groups of three and give each group a set of cards, including an instruction card.

2. Allocate one member of each group to split the cards equally between them.

3. The person to the left of the dealer will go first. 4. Make sure they read the instructions carefully before

they begin.

PREPARING EFFECTIVELY Finally, before the Scouts begin assembling their three course menu, download and print copies of the Meal Map Booklet from www.scouts.org.uk/sodexo. This contains a questionnaire for the Scouts to fill in before they get cooking. This will help ensure that they cook an appropriate amount of food, cook safely, and cook meals that their guests are able to eat.

We would suggest the Scouts take this booklet home a couple of weeks before they are due to cook their meals. This will give them plenty of time to plan their meals and assemble all of the necessary ingredients.

COOKING!Now that the Scouts are aware of how to cook safely, hygienically and healthily for their troop mates, they each need to cook a three course menu to complete their badge. They may cook individually, or in teams – it is up to you.

Download the Scout Chef Activity Badge recipe pack from www.scouts.org.uk/sodexo. This contains cooking instructions for twenty different dishes. They vary in complexity and difficulty so take a good look through the booklet to decide which recipes are suitable for your Scouts. But remember, their three courses must contain at least two hot dishes, one pastry or cake, and two sauces.

CONGRATULATIONS!

Once your Scouts have completed all of these activities, then they have successfully earned their Scout Chef Activity Badge. As well as presenting them with their brand new Sodexo branded badge, you may also download and print off a copy of the badge certificate.
