Cajun Crab Rice
Ingredients
1 tbsp (15 mL) vegetable oil
1 cup (250 mL) chopped onion
½ red pepper, chopped
½ green pepper, chopped
1 pkg (227 g) Clover Leaf Crab Delectables™, flake style
¼ cup (50 mL) bottled Cajun marinade
1 small tomato, diced
1/8 tsp (0.5 mL) ground red pepper (optional)
1 cup (250 mL) instant white rice
1 cup (250 mL) water
Preparation
In a large skillet heat oil on medium-high heat. Add onion and peppers. Cook and stir 5 minutes until tender.
Stir in all other ingredients. Bring to a boil. Cover and remove from heat. Let stand 5 minutes. Serves 4

Crab and Spinach Salad
Ingredients
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake Style
1 pkg (300 g) frozen chopped spinach, thawed
2 stalks thinly sliced celery
4 green onions, sliced
½ cup (125 mL) Each: low fat yogurt and light mayonnaise
2 tbsp (30 mL) chopped fresh dill or 2 tsp/10 mL dried
dillweed
½ tsp (2 mL) salt
¼ tsp (1 mL) ground pepper
Preparation
1. Separate crab flakes into medium bowl. Drain and squeeze all moisture from spinach and add to crab
with celery and onions.
2. In small bowl mix yogurt, mayonnaise, dill, salt and pepper; add to crab mixture and mix well.
3. Cover and chill 1/2-1 hour or longer. Serve on lettuce leaves with cucumber slices or melon wedges.
Makes 4 main course servings.

Portabello Mushroom Caps with Crab Florentine
Ingredients
8 portabello mushrooms (3-4
1 pkg (300 g) frozen chopped spinach, thawed
2 tbsp (30 mL) butter or margarine
1 medium onion, chopped
2 tbsp (30 mL) all-purpose flour
1 can (160 mL) 2% evaporated milk
1 pkg; (227 g) Clover Leaf Crab Delectables™, Flake Style
1/3 cup (75 mL) grated Parmesan cheese, divided
1/2 tsp (2 mL) hot pepper sauce or to taste
Preparation
1. Remove stems and scrape brown gills from mushroom caps with a spoon and discard. Spray a baking
sheet or shallow baking pan with non-stick cooking spray or lightly brush with vegetable oil; place
mushrooms, cap side down on baking sheet. Drain spinach pressing out all moisture; set aside.
2. In a medium saucepan melt butter over medium heat; add onion and sauté until softened, about 2-3
minutes. Stir in flour and cook 1 minute. Add evaporated milk; bring to boil, stirring constantly. Remove
from heat. Stir in drained spinach and 3 tbsp (45 mL) Parmesan cheese; add hot pepper sauce. Season to
taste with salt and pepper.
3. Spread half creamed spinach in bottom of Portabello caps; divide crab evenly on top of spinach. Spread
remaining spinach mixture on top.
4. Sprinkle remaining Parmesan cheese on top. Bake at 375°F (190°C) for 20 minutes or until hot.
Makes 4 servings.

Lemon & Dill Crab Rolls
Ingredients
1 pkg (250 g) spreadable light cream cheese
2 tbsp (30 mL) chopped green onion
1 ½ tbsp (22 mL) chopped fresh dill (Or use 1 tsp/5 mL dried
dill weed)
1 tbsp (15 mL) lemon juice
¼ tsp (1 mL) pepper
4 (20 cm (8 in)) spinach wraps
1 (227 g) Clover Leaf Crab Delectables™, Leg Style
Preparation
1. Combine cream cheese, green onion, dill, lemon juice and pepper; mix well. Spread evenly over spinach
wraps.
2. Place 2 crab legs, end to end, on each wrap; roll up tightly to enclose crab. Wrap in plastic wrap.
Refrigerate 2 hours (or overnight) . Remove plastic wrap; slice into 1-inch (2.5 cm) pieces. Makes 32 pieces.

Pasta with Crab and Wild Mushroom Sauce
Ingredients
3 cups (750 mL) rotini pasta
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake Style
1 tbsp (15 mL) olive oil
2 cloves garlic, minced
1 medium onion, chopped
8 oz (250 mL) mushrooms (white, cremini, shiitake), sliced
¾ cup (175 mL) dry white wine
1 ½ cups (375 mL) cut green beans (fresh or frozen)
¼ tsp (1 mL) each dried thyme leaves and salt
½ cup (125 mL) light sour cream
1 tbsp (15 mL) all-purpose flour
grated Parmesan cheese (optional)
Preparation
1. Cook pasta according to package directions. Drain.
2. Meanwhile, heat oil over medium-high heat in large skillet. Sauté garlic, onion and mushrooms 5
minutes. Stir in crab, wine, beans, thyme and salt; bring to boil and simmer 2 mins. until beans are tender.
3. Mix sour cream and flour; add to skillet. Cook and stir until thickened. Spoon over hot pasta. Serve with
grated Parmesan cheese, if desired. Serves 4.

Seafood Lasagna Roll-ups
Ingredients
6 lasagna noodles
1¾ cups (425 mL) Italian-style tomato sauce
Filling:
1 pkg (227 g) Clover Leaf Crab Delectables™, flake style or
leg style
1 cup (250 mL) low fat (1%) cottage cheese, drained
¼ cup (50 mL) grated Parmesan cheese
1 egg
1 tbsp (15 mL) dried parsley flakes
¼ tsp (1 mL) onion powder
Preparation
1. Cook noodles according to package directions. Rinse in cold water; drain well.
2. Keep aside some grated cheese for garnish. Thoroughly combine filling ingredients with fork. Spread 1/3
cup (75 mL) filling on each noodle. Roll tightly; place seam-side down in a 9-inch (23 cm) square baking pan.
3. Pour sauce over roll-ups. Bake, covered, at 375°F (190°C) for 30 minutes. Garnish with grated cheese.
Makes 6 rolls.

Crab Corn Puffs
Ingredients
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake Style,
chopped
1 tbsp (15 mL) seafood seasoning
1 pkg (220 g) corn muffin mix
1 egg
½ cup (125 mL) creamed corn
½ cup (125 mL) shredded mild or medium Cheddar
cheese
½ cup (125 mL) diced tomato
¼ cup (50 mL) milk
¼ cup (50 mL) minced celery
¼ cup (50 mL) sliced green onions
Sauce:
¾ cup (175 mL) sour cream
1 ½ tsp (7 mL) seafood seasoning
Hot pepper sauce, to taste (optional)
Preparation
1. Mix Crab Delectables and 1 tbsp (15 mL) seafood seasoning with all remaining ingredients.
2. Generously grease 12-cup mini muffin pan. Fill each muffin cup with about 1-1/2 tbsp (22 mL) batter.
Bake at 400°F (200°C) for 20 minutes or until a toothpick inserted in centre comes out clean. Remove from
muffin pan and cool on wire rack. Makes 12 puffs.
3. For sauce, blend sour cream, seafood seasoning and hot pepper sauce, if desired.

Ingredients

¼ tsp (1 mL) dried Italian seasoning
4+ lettuce leaves
2-4 wedges fresh lemon
Grated Parmesan cheese (optional)
Preparation
Mix Lobster Delectables, mushrooms, pepper, olive oil and Italian seasoning. Serve on lettuce leaves with a
good squeeze of fresh lemon juice. Top with Parmesan cheese, if desired.

Warm Chunky Crab Spread
Ingredients
1 pkg (250 g) light cream cheese, softened
¼ cup (50 mL) light mayonnaise
1 clove garlic, minced
¼ tsp (1 mL) pepper
½ cup (125 mL) dry white wine
2 green onions, chopped
¼ cup (50 mL) grated Parmesan cheese, divided
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake
Style, chopped, divided
2 tbsp (30 mL) chopped fresh parsley
Preparation
1. Beat cream cheese, mayonnaise, garlic and pepper until smooth. Gradually beat in wine. Stir in green
onions, 2 tbsp (30 mL) Parmesan cheese and half the crab.
2. Spread evenly in 8” (20 cm) pie plate; sprinkle with remaining crab and Parmesan. Bake at 375°F (190°C)
about 20 minutes or until bubbling. Cool slightly; sprinkle with parsley. Serve with crackers.
Makes 2 ½ cups (625 mL).

Ingredients

1 container (500 mL) sour cream
1 pkg (42 g) onion soup mix
3 tbsp (45 mL) lemon juice from concentrate
Preparation
In a medium bowl, combine all ingredients; mix well. Chill for
30 minutes; stir before serving. Makes 2 cups (500 mL).

1 bottle (236 mL) cocktail sauce
1 ½ cups (375 mL) diced tomato (1 large)
1 cup (250 mL) diced onion (1 medium)
½ cup (125 mL) diced green pepper (1/4 medium)
Optional: salt, pepper, chopped jalapeno pepper or chopped
cilantro, to taste
Crab Nachos
¼ bag tortilla chips
2 cups (500 mL) shredded Mexican cheese blend
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake Style
1/3 cup (75 mL) sliced black olives
Optional: guacamole, sour cream, chopped tomatoes and chopped green onions
Preparation
1. Crab Cocktail Salsa: In a mixing bowl, place salsa ingredients and stir
to combine. Store in refrigerator until ready to serve. Makes 2 ½ cups (625 mL).
2. Crab Nachos: To make nachos, place the tortilla chips on a baking dish in an even layer. Evenly distribute
the cheese over the top of the chips and top with the Crab Delectables and olives. Bake the nachos at 375°F
(190°C) for about 10-15 minutes until cheese is melted and chips are hot and browned at edges. Serve with
seafood salsa.

Ingredients
1 ½ tsp (7 mL) oil
4 cups (1 L) fresh or frozen stir-fry vegetables

1/3 cup (75 mL) purchased stir-fry sauce

Preparation
1. In a large skillet, heat oil over medium-high heat. Add vegetables, ginger and garlic. Cook, stirring often,
until barely tender (cover with lid and add a little water for fresh veggies) . Add Crab Delectables and sauce;
stir to combine. Serve over hot cooked rice and sprinkle liberally with toasted sesame seeds. Serves 4.
Options: Add 1 can (227 mL) sliced water chestnuts, drained or 1 can (14 oz/398 mL) baby corn, drained.

Lobster and Asparagus Quiche
Ingredients
1 (8-in (22 cm)) unbaked deep-dish pie shell
½ cup (125 mL) Break•Free liquid Eggs, well shaken
1 cup (250 mL) 35% whipping cream
1 tbsp (15 mL) Dijon mustard
1 tsp (5 mL) dried tarragon
½ tsp (2 mL) each salt and white pepper
1 cup (250 mL) cooked asparagus tips
1 pkg (227 g) Clover Leaf Lobster Delectables™, Flake
Style
Preparation
1. Preheat oven to 400°F (200°C) . Prick pastry shell all over with fork; line with foil and weigh down with pie
weights or dried beans. Bake in oven for 20 minutes. Reserve.
2. Reduce oven temperature to 375°F (190°C) . In medium bowl, whisk eggs with cream until well
combined. Whisk in mustard, tarragon, salt and pepper. Scatter asparagus and lobster in bottom of baked
pie shell.
3. Pour in egg mixture; place dish on baking sheet. Bake in centre of oven for about 35 minutes or until
filling is set around edges but centre is still slightly jiggly. Cool for at least 15 minutes before slicing.

Ingredients
1 pkg (227g) Clover Leaf Crab Delectables™, Flake Style
¼ cup (50 mL) Break•Free Liquid Eggs, well shaken
¼ cup (50 mL) mayonnaise or light mayonnaise
1 tbsp (15 mL) ketchup
1 tsp (5 mL) each Dijon mustard and lemon juice
¼ tsp (1 mL) each salt and pepper
1 green onion, very thinly sliced
Preparation
1. Preheat oven to 350°F (180°C) . In large bowl, combine half the crab with the eggs, mayonnaise, ketchup,
Dijon mustard and lemon juice, salt and pepper in a food processor. Pulse until blended but not smooth.
Stir in remaining crab flakes and green onion. Transfer to a lightly greased 2 cup (500 mL) baking dish.
2. Cover with foil and bake for 20 minutes or until heated through. Broil for 1 to 2 minutes or until golden.
3. Serve immediately with flat bread, crudité or crackers.
Makes 2 cups (500 mL).

Seafood Pesto Rosettes
Ingredients
6 regular or spinach lasagne noodles
1 ½ cups (375 mL) ricotta cheese
½ cup (125 mL) basil pesto
1 tbsp (15 mL) lemon juice (optional)
½ cup (125 mL) Break•Free Liquid Eggs, well shaken
¼ tsp (1 mL) each salt and pepper

Preparation
1. Prepare noodles according to package instructions. Let cool to room temperature. Preheat oven to 400°F
(200°C) .
2. In large bowl, mix together ricotta cheese with pesto. If using, add lemon juice. Stir in eggs, salt and
pepper until smooth. Chop seafood into bite-size pieces; stir into mixture.
3. Spread tomato sauce in the bottom of a 13 x 9-in (3L) glass baking dish. Spread equal amounts of seafood
mixture over each noodle. Roll each noodle, starting from the short end, into a cylinder. Arrange rolled
noodles, frilled side up, on top of tomato sauce. Sprinkle evenly with Parmesan cheese.
4. Cover dish with foil; cook in oven for 20 minutes or until heated through. Spoon a little sauce onto

4 strips (4) cooked bacon, chopped

Preparation
In a bowl, mix together the ranch dressing, mayonnaise and milk. Then, stir in the Crab Delectables, bacon
and green onions. Divide mixture among French bread pieces and top with lettuce and tomato.

Creamy Crab and Artichoke Dip
Ingredients
1 pkg (250 g) cream cheese, at room temperature
1 cup (250 mL) mayonnaise
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake Style
1/3 cup (75 mL) chopped onion
1 can (398 mL) artichoke hearts, drained and chopped
¾ cup (175 mL) grated Parmesan cheese
Preparation
1.Preheat oven at 375°F (190°C) .
2.In a medium mixing bowl, blend together cream cheese and mayonnaise until smooth.
3.Stir in remaining ingredients and place mixture into a greased glass pie plate. Bake, uncovered, for 15-18
minutes, until heated through and lightly browned.
4.Serve with crackers or French bread. Serves 6.

Preparation

3.Serve right away.

Mango Salsa on Lobster Quesadilla
Ingredients
Salsa:
1 mango, peeled, seeded and chopped
3 tbsp (45 mL) chopped red onion
1 jalapeño pepper, seeded and minced
1 tbsp (15 mL) lime juice
Quesadilla:
1 pkg (227 g) Clover Leaf Lobster Delectables™,
flake style
3 tbsp (45 mL) chopped cilantro
2 cups (500 mL) shredded Monterey Jack cheese
4 (10-inch/25 cm) flour tortillas
Preparation
For salsa, mix first 4 ingredients. Next, toss lobster with cilantro and cheese; scatter over 2 tortillas. Cover
each with another tortilla. Heat in skillet until cheese melts, turning once. Cut into wedges. Serve with salsa.
Serves 4-6.

Ingredients
1 (250-270g) baguette loaf
1 pkg (227 g) Clover Leaf Crab Delectables™, Flake
Style, chopped or try new Pre-Shredded Crab

½ tsp (2 mL) grated lemon rind
1 tbsp (15 mL) lemon juice
¼ cup (50 mL) light sour cream
2 tbsp (30 mL) each chopped chives (or green onions)
and parsley
salt and pepper
1 pkg (250 g) Light Cream Cheese, Mediterranean
Salsa
Preparation
1. Cut baguette into 30 1/2” (1 cm) thick slices. Place on large baking sheet. Bake at 425°F (220°C) 5-7
minutes or until lightly browned and crisp. Cool.
2. Combine crab, lemon rind and juice, sour cream, chives and parsley. Add salt and pepper to taste.
3. Spread each bread slice with a heaping teaspoon of cheese. Top with crab mixture. Makes 30 pieces.

Crab Patties
Ingredients
1 pkg (200 g) Clover Leaf Crab Delectables™, Pre-Shredded
1 ½ cups (375 ml) fine, fresh breadcrumbs
2 tbsp (30 ml) each minced red onion and fresh parsley
2 tbsp (30 ml) each mayonnaise and Dijon mustard
1 egg beaten
½ tsp (2 ml) each finely grated lemon zest and pepper
Preparation
1. Blend the crab shreds with the breadcrumbs, onion, parsley, mayonnaise, Dijon mustard, egg, lemon zest
and pepper until well combined. Form into four lacy-edged round patties.
2. Chill for 15 minutes.
3. Heat a large nonstick skillet or grill pan over medium heat. Spray with cooking spray. Add the crab patties
in batches (work if the pan is crowded) .
4. Cook, turning once and pressing gently with a flexible plastic spatula, for about 6 minutes or until golden
on each side. Makes 4 servings.

Crab Delectables California Wrap
Ingredients
½ cup (125 mL) mayonnaise
¼ cup (50 mL) softened, finely chopped sun-dried
tomatoes
1 small clove garlic, minced
½ tsp (2 mL) dried basil
½ English cucumber
1 firm, ripe avocado
4 salsa-flavoured large flour tortillas
4 to 8 leaves red or green leaf lettuce
1 sweet yellow pepper, cut into thin strips
1 pkg (227 g) Clover Leaf Crab DelectablesTM, Shreds Style
Preparation
1. In a small bowl, mix together mayonnaise, sun-dried tomatoes, garlic and basil; set aside.
2. Cut cucumber into thin 3-inch (7.5 cm) sticks.
3. Peel and thinly slice avocado.
4. On tortillas (use one-quarter of ingredients for each), place lettuce leaves to cover two-thirds of the area.
Place cucumber, avocado and pepper strips on lettuce. Place Crab Delectables along centre of vegetables.
Top with sun-dried tomato mayonnaise mixture. Fold uncovered third of tortilla over filling ingredients,
then fold in one side and roll into a tight wrap.
5. Serve immediately. Makes 4 servings.

½ cup (125 mL) sliced yellow sweet pepper
1 lb (500 g) asparagus, cut into 2-inch (5 cm) pieces
1 clove garlic, minced
½ cup (125 mL) each: white wine, chicken broth (or all
broth)
1 pkg (250 g) cream cheese, softened

Preparation
1. Cook pasta according to package directions.
2. Meanwhile, heat oil in large skillet over medium heat. Add shallots, sweet pepper and asparagus. Cook,
stirring for 3 to 5 minutes, until vegetables are tender crisp.
3. Stir in garlic; cook 1 minute.
4. Add wine, broth, cream cheese and lemon rind. Cook, stirring, until smooth and bubbly.
5. Stir in drained linguine and Crab Delectables. Toss until well coated with sauce. Sprinkle in cheese.
6. Serve immediately. Makes 4 servings.

Father's Day Crab Omelet
Ingredients
3 tbsp (45 mL) butter
8 oz (250 g) sliced cremini or white mushrooms
1 pkg (200 g) Clover Leaf Crab DelectablesTM, Shreds
1 green onion, finely chopped
¼ tsp (1 ml) finely grated lemon peel (optional)
½ tsp (2 ml) each salt and pepper (approx.)
4 oz (125 g) cold, cubed Brie cheese
12 eggs

Preparation
1. Heat 1 tbsp (15 mL) of the butter in a nonstick skillet set over medium heat. Add mushrooms and cook
until lightly browned, about 6 minutes. Stir in the crab, green onion, lemon peel (if using) , salt and pepper.
Cook, stirring, just until warmed through. Remove to a bowl and wipe out the pan.
2. Whisk 3 of the eggs with 1 tbsp (15 mL) cold water. Season with salt and pepper. Add a dab of the
remaining butter to the pan, using a pastry brush to distribute it evenly. Pour the eggs into the pan and
cook, stirring with a heat resistant rubber spatula, for 30 seconds. Cook, without stirring for 30 seconds.
Smooth the top with the flat side of the spatula. Reduce the heat to low. Cover the pan and cook for 2 to 3
minutes or until eggs are almost set.
3. Spoon one quarter of the filling onto one side of the omelet. Sprinkle with 1/4 of the cubed cheese and
fold over the remaining side. Transfer to a buttered baking sheet and set in a warm oven. Repeat with
remaining eggs and filling, adding more butter to the skillet as needed.

Creole Crab Stuffed Chicken
Ingredients
8 boneless, skinless chicken breasts, tenders removed
1 tsp (5 mL) each salt and pepper
¼ cup (50 mL) each thawed corn kernels and shredded
Cheddar cheese, finely chopped red pepper and green
onion
2 tbsp (30 mL) mayonnaise
3 tbsp (45 mL) grainy Dijon mustard, divided
1 ½ tsp (7 mL) hot pepper sauce
½ tsp (2 mL) each cumin and chili powder
1 pkg (227 g) Clover Leaf Crab DelectablesTM, Flake Style
3 tbsp (45 mL) lemon juice
2 tbsp (30 mL) each tomato paste and olive oil
2 tsp (10 mL) liquid honey
Preparation
1. Preheat the grill to medium. Between two sheets of plastic wrap, pound each chicken breast to an even
thickness with a mallet or the back of a small heavy skillet. Sprinkle four chicken breasts evenly with salt
and pepper.
2. Blend the corn with cheese, red pepper, green onion, mayonnaise, half of the mustard, hot pepper sauce,
cumin and chili powder. Place one quarter of the crab in the centre of each piece of chicken. Spoon one
quarter of the corn mixture on top. Top with a second piece of chicken. Tucking in the edges, truss each pair
with kitchen string to make four, enclosed bundles.
3. Stir the remaining mustard with the lemon juice, tomato paste, olive oil and honey. Brush the chicken
with enough of this mixture to coat evenly. Cover and grill chicken for 20 minutes, turning as needed and
basting often with remaining lemon mixture. Grill, covered, for about 10 minutes longer or until an instant
read thermometer registers 175 F (80 C) . Rest for 5 minutes before slicing.

Creamy Crab Roll-Ups
Ingredients
1 pkg (200 g) Clover Leaf Crab DelectablesTM Shreds
8 oz (250 g) Light, brick-style cream cheese, softened
2 tbsp (30 mL) Lemon juice
1 tbsp (15 mL) Dijon mustard
½ tsp (2 mL) each dried dillweed, salt and pepper
4 Large wheat flour tortillas, any flavour
4 blanched asparagus spears (approx)
Preparation
1. Blend the crab shreds with the cream cheese, lemon juice, Dijon mustard, dillweed, salt and pepper until
well mixed. Lay the tortillas out on a clean working surface. Divide the crab mixture equally between the
tortillas, spreading in an even layer and leaving a 1-inch (2.5 cm) border around the edge.
2. Place one or two pieces of blanched asparagus at one end of each tortilla. Roll up tightly to enclose the
filling, making a pinwheel. Tightly wrap and chill for 30 minutes or for up to 24 hours. Slice each tortilla into
8 rounds; discard the ends.

Lobster Cheese Puffs
Ingredients
1 pkg (227 g) Clover Leaf Lobster Delectables™
2 tbsp (10 mL) bottled teriyaki marinade
1 tbsp (5 mL) minced garlic
¼ cup (50 mL) sliced green onions
2 tbsp (30 mL) minced celery
1 pkg (125 g) cream cheese, softened
1 pkg (454 g) wonton wrappers
Water or beaten egg white for sealing won tons
Preparation
1. In a mixing bowl, lightly shred the Lobster Delectables. Add the next five ingredients and stir to combine.
Lay the wonton wrappers on a clean dry work surface with the corners turned in a diamond shape. In the
centre of each wonton, place about 2 tsp (10 mL) of the filling. Moisten the top half of the diamond with a
dab of water or egg white, and bring the bottom half up, sealing the triangle. Turn the two side points of
the triangle towards each other and press the tips together. Store in the refrigerator, lightly covered on a
baking sheet, until needed.
2.To cook: Place in fryer or a hot wok with preheated oil at 360°F (185°C) for about 5 minutes until golden
brown and crispy. Rotate occasionally. Remove from oil, drain and serve with dipping sauce.

Ingredients
12 Lasagne Noodles
3 cups (750 mL) 35% whipping cream
1 cup (250 mL) grated Parmesan cheese
2 tsp (10 mL) finely grated lemon rind (optional)
½ tsp (2 mL) Salt
¾ tsp (4 mL) pepper
2 pkgs (227 g each) Clover Leaf Crab DelectablesTM,
Flake Style
1 ¼ cups (300 mL) shredded mozzarella cheese
2 tsp (10 mL) finely chopped parsley
Preparation
1. Prepare noodles according to package directions. Preheat oven to 350F (180C) . In saucepan over
medium-high heat, mix together cream, Parmesan cheese, lemon rind (if using) , salt and pepper. Cook,
stirring often, until bubbles form around edge of pan and sauce is slightly thickened.
2. Spread approximately 1/2 cup (125 mL) of the sauce in bottom of 13 x 9-in (3L) baking dish. Top with 3
noodles. Spoon one-quarter of the remaining sauce over and sprinkle with one third of the crab.
3. Repeat twice and top with last three noodles. Sprinkle with mozzarella cheese; pour remaining sauce
evenly over top. Sprinkle with parsley. Cover with foil; bake for 45 minutes. Remove cover; broil for 3 to 4
minutes or until golden. Let stand for 10 minutes before slicing.

Crab Salad Stuffed Bell Peppers
Ingredients
¼ cup (50 mL) plain yogurt
2 tbsp (30 mL) light mayonnaise
1 tsp (5 mL) each Dijon mustard and white wine vinegar
¼ tsp (1 mL) each salt and pepper
1 pkg (200 g) Clover Leaf Crab DelectablesTM, Preshredded
½ avocado, diced
¼ cup (50 mL) finely chopped celery
2 tsp (10 mL) finely chopped fresh tarragon
2 red bell peppers
Frisée or other lettuce (optional)
Preparation
1. Stir yogurt with mayonnaise, Dijon mustard, vinegar, salt and pepper until smooth. Reserve. Combine
crab with avocado, celery and tarragon in a bowl. Add the dressing and stir gently to combine.
2. Halve the peppers lengthwise from stem to bottom. Trim out the core and seeds and discard. Spoon the
crab salad into the peppers and arrange on a bed of frisée lettuce (if using) .
