St. Augustine Style

Directions:In a large soup pot, fry diced slab bacon until crisp. Remove from pot and then set aside. Add diced onion, celery, garlic, green pepper and datil peppers to pot and cook until onions are translucent. Add tomatoes, tomato sauce, clam juice, and bay leaves (remove before serving), then bring mixture to a boil. Reduce heat and simmer for 1 hour. Add potatoes, thyme, and clam or conch meat; simmer 45 minutes. Season with salt and pepper; remove from heat. For best �avor- simmer all day or chill overnight and reheat it the next day.

Serves 6. Enjoy!
