The last few months of our chili year are within sight and the big 5-0 is now close enough for many to start planning. Their stacks and piles of must-not-forgets might start, their lists may be beginning, and the excitement is building. For those who have not qualified to cook, I encourage you to not give up. Having as many cooks as possible at TICC this year will make for an exciting Saturday for ev-eryone. Just look at our 2015 winner, James Burns, who qualified on the 27th of September last year. For those chasing show points, keep it up. The more shows at TICC this year, the better. It’s like the CASI version of the Olympics. It is so much

more thrilling to have the best of the best participating, so IF your number is called that glorious Saturday in November, it is more satisfying knowing the competition was stiff.

Keeping that in mind, I must also share those wise old words we’ve all heard many times yet some-times forget: “Winning is luck. As long as you make a good pot of chili, the rest lies in the hands of luck.” Look around you at the amazing chili cooks competing. Every single one of us has a chance to have our number called. All of us made it to that day because we made good chili, and the points we earned are the proof. So be happy for those who win – it is THEIR lucky day. Every single one of us has the same chance. Don’t give up and keep hoping luck will run your way.

This year’s TICC WILL be bigger, WILL be grander, WILL have more on the schedule, and WILL need more people to volunteer. A new way for volunteers to sign up will be launched at the Great Pepper Meeting and available for everyone shortly thereafter. It is an online method that is very easy and will even send you reminders for the slots you’ve signed up to fill. But if you don’t use computers and you want to raise your hand to help, all you need to do is contact the person in charge of that job and they can sign you up. We won’t turn down ANY help. A list of the available jobs and the people to contact about them appears on page 29, so you can start planning the jobs you want. All of the directors have been working hard to prepare for TICC. We cannot do this alone and we all need your help. It is fun, it is re-warding, it gives you a chance to talk with people you might not see but once a year, and it is NEEDED.

Some say, “This is my vacation. I’m not coming to work.” If everyone had these thoughts, nothing would get done…EVER. It would be a gathering of people with no order, no music, no bars, no food, no ice, no parades, no extras. Being a part of TICC beyond showing up to cook on Saturday is what gives this week meaning. Your help is how this week can happen. Plus, how can an hour or two volunteering your time to our biggest event of the year do anything but make it even better and give you a sense of fulfillment? Someone who is very, very, VERY smart once told me, “Be a part of the solution, NOT the problem.” Those are wise words for anyone to live by.

The countdown has begun to the biggest, baddest, bestest chili cookoff in the past FIFTY YEARS! Let’s make HISTORY!

Susan

Let's make history together!

ATTENTION2015 Rule Change

for Qualified Cooks at TICC If your CASI membership expires on or before November 5, 2016, and you think you will be attending TICC as a qualified cook, you MUST make sure your dues are paid by SEPTEMBER 30th. Once you have logged in, click on “Display CASI Membership Information.” You can quickly and easily pay your dues by going to www.casichili.net and clicking on “Join.” You may also contact Keith Longabaugh at [email protected] or 972.841.1630 to discuss your membership status.

I recently had the opportunity to be in contact with one of our former Scholarship recipients. I asked him to give us a report on what is happen-ing in his life today. His letter is on the next page of this issue of the Trails. Please read his letter. He and countless others are why we do what we do!

We make a difference in their young lives.I can never say thank you enough to the Scholarship committee for

their dedication and hard work. Hope his letter lets you know what it means to them!

Remember we are selling raffle tickets to benefit the Scholarship Fund. We have an HP laptop, a pop-up with the 50th Anniversary logo (donated by Statewide) and a flat screen TV to give away at TICC. Tick-ets are 5 for $20 or $5 each. Contact your Great Pepper, call me (214-802-8194), or see me at the Great Pepper Meeting or TICC.

And if you have not volunteered to be on the committee OR sold raffle tickets, it is not too late!

Dear Mrs. Hewlett and CASI Scholarship Committee,I am incredibly honored to have been chosen as a CASI Scholarship

recipient. I am grateful that you see the values and integrity in me worthy of this honor. It means so much coming from an organization so close to my heart. I am proud to be a part of something that not only aids those in need, but brings people closer together as well. Not to mention makes a good chili? I sincerely thank all the members of this organization for all the hard work and dedication put forth to make CASI what it is today. I have experienced first-hand, from seeing and helping my dad, all of the work and energy it takes to keep events running smoothly, so I do not doubt you all do much more than you are recognized for. Thank you again, from not only me but the other CASI Scholarship recipients and CASI members as well, for everything you do.

As I set course for the next step in my life, this scholarship will help me tremendously. I cannot thank you enough for your generosity, and I am humbled by your support of my future. I would also like to assure you that I plan to maintain all of the elements for which I received this award including academic excellence, extracurricular involvement, honorable actions, and of course involvement within the CASI family. The uni-versity I will be attending in the fall, Illinois State, is a short two hours from home, meaning I will still be available for some Saturday morn-ing cookoffs. I consider myself privileged for being so warmly accepted within the CASI community and to have been able to build strong bonds from a very young age. I will always cherish the memories I’ve made, remember the wonderful lives of those members who have passed, and embrace the joyful experiences the future will bring. Thank you so much for the award I have received, but mostly for running an organization that has undoubtedly changed and shaped my life for the better. Thank you so much.

Sincerely,Briana K. Gastaldello

Thank you, CASI...

Hello Nancy,First, I would like to thank you for reaching out to me on Facebook, and I

love to keep in contact with all of the people and organizations that have helped me achieve my dreams. I remember as a high school senior at North Garland High School, CASI was the first organization to award me a scholarship. I still have the original letter in a frame in my classroom now.

The scholarship award may not have been a big deal to the members and board of CASI, but for me, a senior student with a deceased mother, an absent father, and a disabled grandmother who had no way of being able to afford col-lege, it was a game changer. The CASI organization gave me the hope that I may be able to accomplish everything I wanted to. After receiving that scholarship, I applied for several more and was able to have my college completely funded through scholarships and government grants.

Now, six years later, I have completed a Bachelors in English and Education from the University of Texas Arlington, and I am currently working on a Master in Education of Clinical Mental Health from Lamar University. I am also going into my second year of teaching full time. I have worked with children since re-ceiving my scholarship from CASI through being the Basketball Director at the Rockwall Indoor Sports Expo.

I can’t express how thankful and appreciative I am to you and CASI for al-lowing me the opportunity to live out my dream, passion, and purpose. There is nothing in this world that I would rather be doing than teaching and helping the young men and women of our country, and without this organization, I would not be able to do that. So again, thank you so much for allowing me, and countless others, the ability to do what we are placed on Earth to do.

Sincerely, Shelmon Smith

It's been a wild ride!As the 2016 CASI chili year comes to a close,

I’m celebrating with very mixed emotions. Four years ago this month, I rejoined the CASI Board of Directors as Executive Director, returning after a 25+ year span since I left the original CASI board in the mid ’80s. I have “grown up” with this organization, as my history with CASI has

spanned over 80% of the life of our organization and over 60% of my own life.

Looking back on the past four years, so much has changed, but still so much remains the same. It’s been one heck of a roller coaster, that’s for sure. The highs have been spectacular, and the lows have been scary – including dealing with the IRS and making tough decisions to replenish a deficit in the organization’s reserve funds.

It’s been a wild ride, to say the least. Here are the Top Five high-lights from my board experience as Executive Director and President: 1) Rebuilding our reserve and operational funds to their original budgeted amounts; 2) Development of the CASI webstore to brand the CASI logo; 3) Development of the CASI, TICC, and Great Peppers’ Facebook pages and development of a new informational and marketing website, www.casichili.net – hopefully this has improved the communications to the Great Peppers and our CASI members and improved the transparency of our business operations; 4) Planning for the celebration of the 50th – just

Richard KnightRetired (again) CASI Board member

remember that CASI was the only organization that was involved in the first; and 5) Regaining the reason that I started with this organization – Chili, Charity, and Fun. I am proud of our CASI family and the many ways that I have seen our own membership receive the charity and well wishes from within the CASI family.

But probably the greatest highlight was meeting new CASI members throughout this great country and working with some great CASI board members who truly believe in the organization and believe in serving as a volunteer for the betterment of the organization. So after four years, I get to take off my CASI Director’s hat and put back on my CASI cook hat and enjoy the cookoffs with my CASI family. But do not be surprised if I get the urge to serve again and throw my hat into the ring again. I cannot wait to see what the next 50 years looks like for this organization, and I want you all to know how great it feels to have had each of you along for this wild ride.

Page 17Terlingua TrailsSeptember 2016Karaff Announces Candidacy

Greetings, chili peeps!

After many days and evenings speaking with trusted friends and family, I decided to throw my spoon in the pot, as it were, and have sent in my application for CASI Executive Director. This was not a decision made lightly. I believe that the time is right for me to step up and move from the background to the front line. I have a great passion for this “hobby” of ours.

After the benefit cookoff I organized last weekend, I was humbly reminded of why we do this. The entire day was a great show of passion, caring, volunteers and just plain human kind-ness all working towards a common goal – help-ing someone in need. THAT’S THE REASON WE DO THIS. It set my mind to working again and this is the outcome.

If you have any questions, please contact me at [email protected]. I look forward to serving this organization and the membership.

Sun Shines on Pierson at Illinois StateBATAVIA, IL – The 24th Illi-

nois State Open was held July 30 in Batavia’s Riverwalk Park, as usual. It is rather awkward to give an objec-tive report about a cookoff you won, but I’ll try. A couple of our constant issues turned out to be no problem at all. The weather had, during the preceding week, been questionable for that Saturday, but it was dry and at times sunny. The Kane County Health Department had come at us pretty good after last year, but they came and liked what they saw. In fact, the girl who inspected us gave a 100% score. This is a reflection on all of those who cooked.

The IL State has always had great support from out-of-state cooks, and this year was no different. Ten of our 28 cooks were from somewhere else. Zanna Broncy is active military (Air Force) and stopped by on her way home to Virginia. I wish we had had some advance notice she was coming so we could have properly recognized her for cooking with us, but more importantly, for her service to our country. (Maybe this will do it.) Mike Mayenchein is a somewhat regular in Batavia, but it is always great to have him make the trip from Oklahoma. Wisconsin’s Tim Hoffman is becoming one of our regular cooks, and learning the experience is paying

off. Tim was the only non-resident to place. Mike and Gloria Stevens are hardly strangers to us, but they reside in New Mexico now, so it was great to have them come back to cook with us. Then there is Iowa, with a record delegation this year. Virgil Johnson is quite familiar to us all, but we certain-ly appreciate his five-hour drive to be part of the IL State. Virgil once again won the Traditional division, and this year, he tried. The Cedar Rapids Chili Mafia completed the Iowa group with Kim & Paul Kaune and Cher & Kurt Stephenson adding to the excitement.

The awards ceremony produced several special moments, none more special than Chris Apel winning 7th place. As you know, Chris has been quite ill and it was special just to have her and Marty there cooking with us. John Gastaldello and Ron Mattson moved to within a single point of qualifying for TICC this year. It was Ron’s eighth consecutive top ten. Kim Spencer (3rd) and Georgia Weller (2nd) did qualify for TICC. Ken Blaida picked up a valuable chili point and won the first Roylene Johnson Chili Lady Showmanship Award. So, I think it was a very successful day for several cooks.

Meanwhile, back at the Ranch...Rancho CASI de los Chisos, TX -- In the middle of the July heat, Ranch Manager Don Hoy and cohorts Allan "Scotty" Parker and Old 320 Alcalde Bob Steinle spent several days performing electrical work, including new lighting at the front gate, and general mainte-nance. TICC Champ Takes Maryland State TitleBALTIMORE, MD – Chili

sizzled in the soaring heat of a code red day in Baltimore’s Inner Harbor during the Maryland State CASI Championship, held on Sat-urday, August 13 at Christ Luther-an Church. The Mason-Dixon Pod hosted the championship which welcomed 15 cooks from five dif-ferent states, including our reign-ing TICC champion James Burns and his wife Sherry, who made the 20+ hour drive from their home in Point, Texas.

The Texas-like heat did not stop James from cooking a great pot of red which captured the top spot in the CASI Chili competi-tion. The Burnses also took home a well-deserved “Road Runner” award for traveling the greatest distance to cook. This was their second trip to the Mid-Atlantic in the past month, and they cooked in the midst of record heat each time. The Mason-Dixon Pod was proud to host James and Sherry at the Maryland State Championship as part of their country-wide chili tour.

Baltimore’s oppressive 99° heat prompted many to question why the Maryland State CASI Cham-pionship was held in August. “It is hot today! Next time we should have it in October,” CASI Judge Ada Muniz said. Still, the heat and humidity did not deter the 15 cooks and tasting public from tasting some of the finest chili east of Ter-lingua. Marilyn Hage, a member of Christ Lutheran Church and one of the judges on the CASI Chili table, spoke favorably of her peers, in-

cluding those who judged chili for the first time. By choosing Burns as the winner, “This shows that we know what good chili tastes like,” she said.

Adrienne Grant, the cookoff organizer, held a judging seminar the week before after a church service. “This was very helpful in preparing our judges,” she said. “We had plenty of experienced judges for CASI. I am grateful to have so much participation from our church hosts.”

By the end of the day, $1,150 was raised for the Baltimore Out-reach Services. This local charity helps support the church shelter that has 40 beds for women and children.

SOUTH DAKOTA GETS A TASTE OF REDROSHOLT, SD – On July 16, a group of chili cooks gathered in a

small town in northeastern South Dakota pronounced, rôz’sôlt. Anyone who has tried to run a chili cookoff in a land that does not have chili cooks can appreciate how difficult it is. Bill & Cheryl Pierson, Don & Suzy Weber and Wes & Ginny Carlson came to Rosholt to represent the Chillini Pod. We were joined by Texans Louis Gonzales, Barbara Herrin, and Kathy & Sam L’Huillier. We also had a couple of cooks from Minnesota. Louis claimed the victory and joins last year’s win-ner, Cheryl Pierson, in the annals of South Dakota chili lore.

I was truly impressed by how hard the locals worked to put on this event. And it was an event. Besides chili, there was a barbecue competition, bands and other entertainment, a car show, and a cool competition among the firefighters pushing a bucket on a wire above the street back and forth with their fire hoses. They had blow-up bounce houses for the kids. Oh, and we got fed a nice BBQ rib dinner Saturday night. The people new to CASI chili cookoffs really had a good time – good enough to hold the Sunday cookoff also. It was a fun time in Rosholt.

OVERLAND PARK, KS - Fun was had by all at the Sho-Me Pod annual cookoff on July 17. Sho Me-Pod’s Regional Referee, Jim Lilleston, hosted the event in his backyard complete with a pool for the cooks to cool down the hot temperatures. We had a great turnout with the addition of two new cooks to make it very successful. Along with CASI chili, other categories included Homestyle chili, Salsa, and Hot Wings. Everyone pitched in with side dishes to go along with BBQ and hot dogs for the Pod party afterwards. John Mitchell took top honors as this year’s Pod Champion. Other winners include Kim Mitchell 2nd, David Ashby 3rd, Cindy Ashby 4th, Kevin Stovall 5th, Brian Hestend 6th, Cecilia Rivera 7th, Katie Hestend 8th, Kyle Barton 9th, and Rudy Lintner 10th (all shown left).

Farewell and thank you, Jimmy MaturoJimmy Lewis Maturo took his final flight on May 24, leaving behind

his wife of 59 years, Greta. We were fortunate to have known Mr. Jim (as we called him) for 15 years, having met at a cookoff in Florida.

When Mr. Jim’s pastor, Jim Sharpe, asked him what he would like said about himself, he said there were three things: being an Eagle Scout, serving in the Air Force, and marrying Greta.

As a young man, Mr. Jim was interested in joining the Boy Scouts. He sent a letter to the national organization inquiring as to the Troop closet to his home. Upon being advised there were none, he sent another letter asking how to form a Troop – and he did, becoming one of the youngest Boy Scout Troop Leaders ever. Mr. Jim was an Eagle Scout and earned 28 Palms after achieving this rank. He was also awarded three of Scouting’s highest honors at the age of 21 – Eagle Scout with Silver Palm, Scoutmaster’s Key and the Scouters Award.

Mr. Jim graduated from the University of Kentucky with a Bachelor’s degree in Business Administration. While there, he was Cadet Wing Commander of the Air Force ROTC unit and commissioned into the Air Force in 1956. He received his Master’s in Business Administration from George Washington University.

While in the Air Force, he was Operations Officer of the 776th Tacti-cal Airlift Squadron based in the Philippines, Commander of the 374th Tactical Airlift Wing at Clark Air Force Base, Commander of the 834th Airlift Division at Hickman Field in Hawaii, and responsible for all tacti-cal airlift resources in the Pacific. He was assigned to the Pentagon where he served as Chief, Airlift and Tactical Forces Development Branch, Directorate of Plans Division, and was in charge of all responsibilities for Air Force 1. He later became Assistant Chief of the Airlift Forces Divi-sion. Mr. Jim was promoted to the rank of Colonel in 1975.

Mr. Jim flew 293 combat missions in Viet Nam in every type of air-craft assigned to the theater of operations, amassing more than 500 hours in combat. The list of medals and awards he received is too long to list. He was one of the founders of the Airlift Tankers Association.

He loved cooking and travelling, with chili cookoffs becoming his fa-vorite hobby. He always looked forward to the next cookoff and “experi-menting” with recipes. You would not believe the equipment he would bring to a cookoff. On our first trip to Terlingua with him, we had to take everything with us to transfer to our rented trailer. Mr. Jim brought so much stuff that we had to rent a U-Haul just to get to Texas. Over the years, he did learn to cut back on his provisions – somewhat.

Mr. Jim loved CASI and always shared his ideas for making the organization better. He contributed in so many ways to the organization as a whole, and to individual Pods, always willing to step up when asked. When in Terlingua, he attended as many of the activities as he could and cooked in every competition that occurred.

While we’ll miss Mr. Jim, we know he’s in a better place. Miz Greta recently told me that she knew every time we cooked chili, Mr. Jim was dancing in Heaven. We are better for having known him.

Page 22 Terlingua Trails September 2016

This is the history of the Ter-lingua Trails as I think it h a p p e n e d . It is close to accurate but there may be some names

and dates I have missed. The Terlingua Trails was initially

started as a newsletter by director Bob-bie Aldridge of Shreveport, Louisiana. Prior to this all CASI upcomings and info were printed in the Goat Gap Gazette. I think the first issue was in 1989. This was a single issue and was dated April '89. There was some information about the '89 TICC held at Villa de la Mina and pictures of the champion, Barb Britton. It also announced that CASI had bought 360 acres for a permanent site, to be called Rancho CASI de los Chisos, and the establishment of the Old 320. It was printed as a newslet-ter on 8x10” pages and edited by Jim

Ewoldson, an employee of the printer. There were no upcomings or results but it had a great recipe for Gail’s Southern Baked Possum.

In the following issues, more news and features began to appear in the Trails, such as the groundbreaking ceremony for the Rancho in February 1990 and lists of TICC qualifiers and Life Members in September ’91. The October ’91 issue included eight upcomings and the fax form for submitting cookoff information.

Ken Large became editor in De-cember ’92 and began to expand the newsletter. Reports from the ED, Presi-dent, Membership, and the Tallymaster were soon keeping CASI members more “in the know” about how their organiza-tion functioned.

I assumed responsibility for the Terlingua Trails shortly after getting elected to the Board. My first issue was in October '94. The process was simple – I bought a fax machine. The upcom-ings, articles and pictures were either mailed or faxed to me and then I faxed everything to the printer in Shreveport.

Mr. Ewoldson then manually copied everything into the newsletter and mailed it out. This was before the internet and all communications were via fax, mail, or telephone. I started communicating with the printer via modem.

As the Trails continued expanding, we outgrew the newsletter format. With the Board’s permission, I borrowed a newspaper publishing program from a friend and started producing the paper we have now. This caused me additional work, as I now had to type everything into the program. The Shreveport printer couldn’t accommodate the new format, so I moved it to a newspaper in Tucson. I obtained a non-profit mailing permit and the CASI 800 number. The Terlin-gua Trails editor was also responsible for entering the upcomings and mailing the cookoff packages. Many trips to the post office for stamps and mailings and getting copies of the sanctioning forms.

The first newspaper format Terlin-gua Tails was published in April ‘97. The banner on this issue was only the name. I wrote Wendell Rankin and asked him to design a banner, and he sent me six to consider; I chose the one that we’re still using.

Over the next few years, we slowly expanded, even trying color for a few issues. Sometime in 1988 Jim Statec-zny came to Tucson and we worked on

automating the process. After complet-ing the programming, I could enter a cookoff and it would be pasted into the Trails, and with my new laser printer (supplied by CASI – I had used my own equipment before) I could print out the packets automatically for each cookoff. By this time some people were using the internet and email, and during an untimely business trip I even published one issue from Innsbruck Austria.

In 2002 I was voted off the board and Jim Stateczny took over. When I turned the whole process over to Jim Stateczny we were mailing out 1600 is-sues per month. Jim switched to a printer in Kerrville, Texas, several months later.

Editorship of the Trails changed hands several times in '02, until Bucky Seelig took the helm in October of that year; he was Editor through October '09, when he passed it to Dana Plocheck. Dana had responsibility until December ’15, when she handed the reins to Pam Clark.

Myrl Coultas

Editor’s Note: Dana Plocheck is still involved in producing the newspaper, giving me invaluable advice, formatting assistance, and an eagle eye for errors. Thanks, Dana!

Free Quarter Page Ad to CASI Pods, State, Regional and International Opens

As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI" section in the Terlingua Trails. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.

Welcome to the newest way to ask questions about anything CASI. Sometimes funny, sometimes serious, always truthful.

* * * * * * * * *O Mighty Chiligula –

I don’t understand why my chili isn’t doing any better than my friends. They taste almost the same, and my friends’ numbers are called but mine is hardly ever called. What can I do? Frustrated in FriscoDear Frustrated –

On a mere whim, the mighty Chiligula stoops to answer your question. From his perch on Mount Capsaicin, the most volatile volcano in the world, Chiligula instructs you to consider that all chili cooks follow similar recipes, which produce similar tastes. The major differences are the individual preference of each chili judge and the place-ment of your chili cup on the table. Every judge knows what he or she likes, and if your chili does not meet those highly personal and subjective standards, it will not advance to the next table.

The mighty Chiligula’s advice to you is, “Never give up, never surrender!” Keep trying, because someday the tides of fate will turn and you will find yourself on a win-ning streak, while your friends will be left in the proverbial dust.

Don’t give up. Enjoy the day with your friends and wait for your turn.I don’t usually sign my letters, but only for you…

MC* * * * * * * * *

Dear Chiligula – I want to look up my points but don’t remember my password for the CASI site.

What do I do? Lost, but not Forgotten

Dear Lost – You need to make sure your membership is active, so if you have not renewed or

joined you will not have access to this part of the system. If your membership is current and you have just forgotten your password, contact the Membership Director, Keith Longabaugh, and he can help you with the password. MCPS – In the future, remember to be more respectful. The proper term of address is ‘O Mighty Chiligula.’ In a more casual forum, ‘OMC’ is acceptable.

* * * * * * * * *If you have any questions about CASI, chili, pods, directors, referees, or any other aspect of CASI, send your question to [email protected]. Be sure to put ‘Chiligula’ or ‘OMC’ in the subject line. Sign your question the way you wish it to appear; we retain editorial license.
