Chicken Enchilada-Stuffed Spaghetti Squash
Recipe By: Breana Killeen “This healthy 5-ingredient spaghetti squash recipe is a satisfying low-carb alternative to taco night. If you have leftover cooked chicken on hand, skip Step 2 and stir 2½ cups into the filling. Look for an enchilada sauce with less than 300 mg of sodium per serving, such as Hatch brand.”
Ingredients: 2 (8-ounce boneless, skinless) chicken breasts, 1 (2 ½ - 3 lb.) spaghetti squash, (halved lengthwise and seeded), 1¼ cups red enchilada sauce (divided), 1 medium zucchini (diced), 1 cup shredded pepper Jack cheese
Directions:
1. Position racks in upper and lower thirds of oven; preheat to 450 degrees F. 2. Place chicken in a medium saucepan, add water to cover and bring to a boil. Cover, reduce heat to low and
gently simmer until an instant-read thermometer inserted into the thickest part registers 165 degrees F, 10 to 15 minutes.
3. Transfer the chicken to a clean cutting board and shred with 2 forks. Transfer to a large bowl. 4. Meanwhile, place squash cut-side down in a microwave-safe dish and add 2 tablespoons of water.
Microwave, uncovered, on High until the flesh is tender, about 10 minutes. (Alternatively, place squash halves cut-side down on a rimmed baking sheet. Bake in a 400°F oven until the squash is tender, 40 to 50 minutes.)
5. Use a fork to scrape the squash from the shells into the large bowl. Place the shells on a broiler-safe pan. Stir 1 cup enchilada sauce, zucchini, ½ teaspoon pepper and ¼ teaspoon salt into the squash and chicken. Divide the mixture between the shells; top with the remaining ¼ cup enchilada sauce and cheese.
6. Bake on the lower rack for 10 minutes. Move to the upper rack, turn the broiler to high and broil, watching carefully, until the cheese starts to brown, about 2 minutes. To serve, cut each shell in half.

Healthy Eating What kinds of foods do I need to eat as I age? When you get older, your body begins to need fewer calories, but you need just as many nutrients. Nutrient-dense foods pack a lot of vitamins, minerals, and other nutrients your body needs into a small amount of calories. Eat more of these nutrient-dense foods Older adults, along with other Americans, are advised to "eat from the rainbow" of foods rich in nutrients, like these:
fruits and vegetables (choose a range of types with vibrant colors) whole grains, like oatmeal, whole-wheat bread, and brown rice fat-free or low-fat milk and cheese, or soy or rice milk that is fortified with vitamin D and calcium seafood, lean meats, poultry, and eggs beans, nuts, and seeds
Eat less of these foods Some foods have many calories but offer few nutrients. Older adults should eat less of these foods:
sugar-sweetened drinks and desserts that have added sugars foods with butter, shortening, or other fats that are solid at room temperature white bread, rice, and pasta made from refined grains
Control portion sizes A portion is the amount of one food you eat in one sitting. Many people eat more than they need, especially when eating out or getting takeout. Try these tips:
Avoid eating in front of the TV, computer, or other screen. You may not notice how much you are eating if you are distracted. Read the Nutrition Facts label found on food and drink packages to see how many calories and how
much fat are in a single serving size of an item. Eating healthy meals can be easier when you plan ahead and make them enjoyable. Try the tips listed below. Cook ahead and freeze portions for days when you don't want to cook.
Keep frozen or canned vegetables, beans, and fruits on hand for quick and healthy meal add-ons. Rinse canned foods to remove extra salt. Drain juice and syrup from canned fruit to remove extra sugar.
Eat often with someone you enjoy. If you can't cook for yourself, contact the Eldercare Locator listed in the Resources section for local programs that deliver meals.

September 23, 2019 is Falls Prevention Awareness Day! The annual Falls Prevention Awareness Day (FPAD) raises awareness about how to prevent fall-related injuries among older adults. Did you know that 1 in 4 Americans aged 65+ falls every year? Falls are the leading cause of fatal and non-fatal injuries for older Americans. Falls are costly—in dollars and in quality of life. However, falling is not an inevitable part of aging. Through practical lifestyle adjustments, evidence-based programs, and community partnerships, the number of falls among seniors can be reduced substantially.
6 Steps to Prevent a Fall: Every 13 seconds, an older adult is seen in an emergency department for a fall-related injury. Many falls are preventable. Stay safe with these tips!
1) Find a good balance and exercise program. Look to build balance, strength, and flexibility. Contact your local
Area Agency on Aging for referrals.* Find a program you like and take a friend.
2) Talk to your health care provider. Ask for an assessment of your risk of falling.
3) Regularly review your medications with your doctor or pharmacist. Make sure side effects aren’t increasing
your risk of falling. Take medications only as prescribed.
4) Get your vision and hearing checked annually and update your eyeglasses. Your eyes and ears are key to
keeping you on your feet.
5) Keep your home safe. Remove tripping hazards, increase lighting, make stairs safe, and install grab bars in key
areas.
6) Talk to your family members. Enlist their support in taking simple steps to stay safe. Falls are not just a
senior issue.
St. Lawrence County Office for the Aging offers evidence-based programs that help with balance. Tai Chi for Arthritis has this benefit. Classes are presently being offered at LBSH in
Brasher Falls and classes will be offered at different dates and locations.
