Secrets to Health and Happiness

In 2004 National Geographic, the National

Institutes on Aging, and AARP came together

to identify places around the globe where peo-

ple live longer and report better health. There

were five places world-wide where people

reach age 100 at rates 10 times greater than in

the United States. These places are Sardinia,

Italy; Okinawa, Japan; Loma Linda, California;

Nicola, Costa Rica; and Ikaria, Greece. The

people of these areas were studied to

determine why they live longer and healthier

than people from other areas of the world. The

secrets revealed were not so much about

genetics or diet but instead related to the

lifestyle of these healthy people. The following

nine lifestyle characteristics were found in all

five locations:

Just move - walk everywhere possible

Purpose – have a reason to wake up in the

morning

Down shift – find ways to eliminate stress

80% rule – stop eating before you are full

Plant slant – eat more fruits and vegetables

and limit meat

A glass of wine – wine in moderation can

be good

Belong to a faith-based community –

Cost of Meals 2011: Individuals 60 years orolder pay by donation. The suggested donationis $3.00/meal. Individuals under the age of 60must pay the total cost of the meal.Meal Site: $6.10 Delivered Meal: $6.35.

Orders/Cancellations: Participants mustmake reservations or cancellations by 1:00 PMthe day before a requested meal. Any cancella-tions made on the day of a previously scheduledmeal are still subject to payment to the caterer.

What is Vitamin B12 and what does it do?

Vitamin B12 is a nutrient that helps keepthe body's nerve and blood cells healthy andhelps make DNA, the genetic material in all cells.Vitamin B12 also helps prevent a type of anemiacalled megaloblastic anemia that makes peopletired and weak.

Vitamin B12 is found naturally in a widevariety of animal foods and is added to somefortified foods. Plant foods have no vitamin B12unless they are fortified. You can get recom-mended amounts of vitamin B12 by eating avariety of foods including the following:Beef liver and clams, which are the best sourcesof vitamin B12. Fish, meat, poultry, eggs, milk,and other dairy products, also contain vitaminB12. Some breakfast cereals, nutritional yeastsand other food products that are fortified withvitamin B12. To find out if vitamin B12 has beenadded to a food product, check the productlabels.

Vitamin B12 deficiency causes tiredness,weakness, constipation, loss of appetite, weightloss, and megaloblastic anemia. Nerve problems,such as numbness and tingling in the hands andfeet, can also occur. Other symptoms of vitaminB12 deficiency include problems with balance,depression, confusion, dementia, poor memory,and soreness of the mouth or tongue. VitaminB12 deficiency can damage the nervous systemeven in people who don't have anemia, so it isimportant to treat a deficiency as soon aspossible.

Vitamin B12 can interact or interfere withmedicines that you take, and in some cases,medicines can lower vitamin B12 levels in thebody. Tell your doctor, pharmacist, and otherhealth care providers about any dietarysupplements and medicines you take. They cantell you if those dietary supplements mightinteract or interfere with your prescription or over-the-counter medicines or if the medicines mightinterfere with how your body absorbs, uses, orbreaks down nutrients*Information provided by the Office of Dietary Supplements National

Pineapple andCoconut Cake

1 ½ Cups sweetenedshredded coconut

1 ½ Cups all-purpose flour1/2 tsp. salt1/2 tsp. baking soda1/2 Cup butter1 Cup sugar3 Large eggs1 Cup Greek yogurt (may use regular also)½ tsp. baking soda1 can (20 oz.) crushed pineapple (drained)

Preheat oven to 350 degrees.Spread coconut on a rimmed baking sheet.Bake until lightly toasted, tossing occasionally6-10 minutes; set aside. Butter and flour 9”x 9”square pan; set aside. In a medium bowl,whisk together flour, baking soda & salt; setaside. Using an electric mixer on high speedbeat butter and sugar until light and fluffy. Addeggs, one at a time, beating well aftereach addition. Reduce speed to low, andalternately add flour mixture in three parts andyogurt in two, beginning and ending with flourmixture. Mix just until combined. Usinga rubber spatula, fold in the drained pineappleand 1 cup toasted coconut into batter. Spooninto prepared pan, and smooth top; sprinkle with

remaining ½ cup coconut. Bake for 1 houror until a toothpick inserted in center comes outclean, (cover pan with foil halfway through).Let cake cool. Try a little whip cream or vanilla icecream on the side.

Meeting Highlights for August 2, 2011

Compliments/Concerns:

Cindy relayed appreciation and compliments tostaff members helping out during her medical leave ofabsence. All have gone above and beyond their regu-lar duties.

Jeanne Schwaas-Long also gave compliments tothe staff and thank you for allowing her to use thefacilities for her cooking class for individuals withdisabilities.

Carol Heidenway gave a compliment regarding theSenior Center newsletter. She says that our newsletteris among the best in the area for the information oncommunity news, services, support groups andespecially legislative issues.

Director’s comments:

Cindy informed the group that former Commissionmember Elaine Halverson passed away.

Cindy shared that there are 40 applicants for theAssistant Director position. She will ask a member ofthe COA to sit on the interview committee. She hopesfor it to take place soon.

The Budgeting for Outcomes process continues for theCity. Ranking meetings will be taking place. Budgetingfor 2012 will be directed by this process.

Discussion of legislative issues took place, mostlyregarding the Voter ID issue. Several gavecompliments regarding the article in the Senior Centernewsletter outlining the process. Transportationremains the biggest concern. RSVP will be able to giverides to older adults to the DMV, but some membersquestioned if volunteers were needed to assistindividuals at the DMV. Cindy will check into thatpossibility.
