Agave TerminologyAgave - A succulent plant with rosettes of narrow spiny leaves, native to hot and arid regions of Mexico.
Añejo - Agave Spirit aged for at least 1 year in wood.
Blanco/Plata/Silver – Unaged Agave Spirit.
Chamoy – A sauce made from a variety ofpickled fruits, with a salty/sweet flavour.
Extra Añejo – Agave Spirit aged for at least3 years in wood.
Joven – Young.
Mezcal – Made from the hearts of variousstrains of agave plants, roasted in the ground, crushed, fermented with natural yeasts and distilled in either clay or copper stills.
Piña - Heart of the agave plant.
Raicilla – An ancient distilled spirit made from wild agave, using rudimentary techniques.
Reposado – Agave Spirit aged for 2-11 months in wood.
Shrub – A cocktail or soft drink made from fruit, spice and vinegar. Popular in theAmericas during the colonial era.
Tequila - A Mexican distilled spirit made from only the blue agave variety.
