Wash½pack(7oz)offirmtofuunderrunningwaterandplaceonseveralpapertowels.

Wrapthetofuwiththepapertowelsandplaceonaplate.

Putanotherplateonthetofu.

Placesomebottlesofwaterasaweightontopandletsitfor30minutes.

Ifthetofuisnotdriedwell,theoilwillsplashalotduringcooking.

l Dredge Cutthetofuintosmallcubes.Dredgeinthe¼cupofcornstarchandtapoffexcess.

l Cook

Heat1Tbsp.ofsesameoilinapanandcookthetofuonallsidesovermediumheatuntilnicelybrownedandcrisp;about7minutes.

l Season

Turntheheatdowntolow.Add2Tbsp.ofcookingSake,1Tbsp.ofsugar,2Tbsp.ofsoysauceand1Tbsp.ofMirintothepan.

Stirforabout2minutes.Halfwaythrough,add1Tbsp.ofwhitesesameseeds.
