I hope the new year is treating all of you well. Even at this early month 2010 is promising to bring many positive

changes to the Club.

The recent bylaw change regarding the initiation of the float sales program for both Regular and Social Memberships has generated a great deal of interest, from both Members and Prospective Members. I have received several inquiries for clarification on the program from both sellers and buyers. Although some Members agree and other Members disagree with the program, it is clear the float sales program will achieve the desired goal of selling memberships and generating capital funds. These funds will allow the Club to maintain its assets, make improvements and sustain a high level of value as a Member of Shady Canyon Golf Club.

I have been asked on many occasions about the AT&T cell tower; and I have been informed we remain on track for completion in April 2010.

The course closure project will be upon us before we know it. The staff and I have been working on our course of action and plans. Arrangements have been made with local clubs to accommodate your golfing needs. A final list and specifics will be provided shortly.

As previously communicated, during the course closure the Clubhouse and Practice Facilities will remain open as usual, but the Men’s Grill will be closed. Additional activities will be planned to keep Members engaged as much as possible. The Patio Expansion Project will be constructed during the closure in order to avoid any inconvenience to you during construction.

A small fact I would like to share: many Members have stated selling memberships with a 4 month closure looming will be difficult; but in fact, most clubs who have undergone a large project with a closure have experienced greater sales as a result of the project itself. Potential Members recognize the improvements and are likely to join immediately following the reopening. In our case the project is not linked to a large assessment making it even more appealing. Hopefully we will experience the same results.

3 S H A D Y T H E M E M B E R S ’ M A G A Z I N E

The beautification of the landscape around the Spa and Fitness Center and the Clubhouse will be taking place over the next several months. It is our goal to enhance the aesthetics of these areas with a little more color, and in some locations design.

Another project you will see taking place will be the completion of the flooring in the fitness center. The soft floor will be extended into the entire work out room. The hardwood flooring in the studio will be refinished, mirrors replaced where needed and a limited amount of equipment replaced.

On another note, I am seeking the assistance of Members with the car show planned for Saturday, August 14, 2010. Last year’s show was great; I would really like to make this event a Shady Canyon Tradition. If you belong to a Car Club or are associated with a group you think would add to this year’s show please let me know. Anything we can do to make the show better, I am all ears... I am also depending on our many Members who brought their vehicles to do so again. I would like to expand into motorcycles this year as well. Please give me a call if you have any great ideas.

Please feel free to drop by my office at any time to simply discuss what is going on at the club, I am very accustomed to Members simply dropping in to say hello and chat; please do so.

We are officially into the first sale period of the “Float” and it has

generated quite a lot of “buzz.” I have received many phone calls and inquiries from your friends, family and coworkers over the past few weeks. I am pleased to announce that at the moment, we have 15 Regular Applicants and 4 Social Applicants in the process – and applications continue to be returned almost daily. If you have not had a chance, please take the time to review the Applicants’ information that is currently posted in the Men’s and Ladies Locker Rooms.

Thank you to all who have passed on information about the new program - now is a great time to be encouraging those on the fence to join. I am confident we will continue to see a lot of activity from the implementation of this program.

Please feel free to contact me with any questions you may have about the Float Program or the new resale instructions – as I understand the policies and paperwork can be a little confusing.

If you missed the first Member Open House be sure not to miss the next one on Thursday, May 20th. This is a great opportunity to bring someone who may be interested in Membership to visit and learn more about the benefits of Membership in Shady Canyon Golf Club. The Membership Committee and key staff members will be on hand to answer any questions. Complimentary hors d’oeuvres and cocktails will be served and tours of the facilities will be given to those who are interested.

As communicated in past issues, Shady Canyon is one of the highest trafficed websites in the industry, with

12,000 to 18,000 Member page-hits a month, and an almost 50% weekly email readership. We are excited to announce that we’ve entered into new contracts to redesign our current website both on the public and private side.

The objective is to have an online presence that reflects our Club lifestyle, streamlines our communication and further develops as an extension of the Club; through Photos, Event Promotions and Club News. In addition Members will be able to monitor their quarterly minimums from their personal home pages, opt-into email groups based on personal interests and preferences and update contact information online.

The public website will better inform Prospective Members and Residents on what our Club really is. This will serve as a great resource for you to refer Membership candidates and Sponsored Private Events.

I hope that the new site continues to grow as an extension of the Club, to keep all Members informed with what’s going on at Shady Canyon even when you’re not in town. This will serve as a critical marketing tool during the course closure as there are many new and exciting social and dining events coming up this summer. Please continue to login frequently to see what’s going on out on the Driving Range, at the Pool, in the Mixed Grill and Bar as well as the addition of our new al fresco Patio Dining.

I recommend that all Members stay connected with Club happenings, if you would like to add your spouse’s email address to receive our weekly announcements, please shoot me an email at [email protected] or call anytime (949) 856-7012.

His work is instantly recognizable for his signature flair. Dazzling color, lush texture, hot house blooms, imported blossoms and unique embellishments. He can often be found working behind the scenes in his own studio adding his touch to everything from a bud vase to a ballroom. His floral art adorns some of Orange County’s most gracious tables and premier events. He offers all Club Members special pricing for your social events as well as your club events. In 2007 Youngsong was honored as Entrepreneur of the Year by an Orange County association of Asian businesses. For that recognition she was presented with more than a dozen formal commendations from the U.S. Congress and the California Legislature. In 2009 Youngsong was nominated for the Women in Business Award, presented by the Orange County Business Journal. INGREDIENTS

Pot Roast with Caramelized Onions and Roasted Carrots

1/2 cup canola oil

Kosher salt and freshly ground black pepper

5 pounds boneless short ribs, denuded (all surface fat removed; have your butcher do this)

1 cup dry sherry

4 carrots, peeled and roughly chopped

2 large onions, peeled and roughly chopped

8 stalks celery, peeled and roughly chopped

8 cloves garlic, unpeeled

1 bay leaf

About 8 cups (2 quarts) chicken stock or low-sodium chicken broth

For Roasted Carrots and Caramelized Onions

6 medium carrots (about 2 pounds) peeled, halved lengthwise, then halved horizontally

1/4 cup extra-virgin olive oil

Kosher salt and freshly ground black pepper

2 tablespoons canola oil

3 medium Spanish onions, sliced crosswise into 1/4-inch-thick slices (about 6 to 7 cups)

P osition racks in upper and lower thirds of oven and preheat to 350°F. Season beef liberally with salt and pepper. In large

Dutch oven or heavy ovenproof pot over moderately high heat, heat oil until hot but not smoking. Add beef and sear until dark brown and crisp on both sides, about 10 minutes total. Transfer beef to large plate. Pour off oil in pan and discard. Add sherry and simmer uncovered, scraping up browned bits on bottom of pan, until reduced by half, about 5 minutes. Pour reduced sherry into heatproof liquid measuring cup.

In same pan, combine carrots, onions, celery, garlic, and bay leaf. Lay beef on top of vegetable mixture and pour reduced sherry over. Add enough chicken stock to cover 3/4 of meat. Cover and transfer to lower rack in oven. Roast until fork-tender, about 3 hours.

While Beef is Roasting, prepare Roasted Carrots and Caramelized OnionsDuring final hour of roasting, in large bowl, toss carrots with olive oil until well coated. Season generously with kosher salt and freshly ground black pepper. Spread on baking sheet and transfer to upper rack in oven. Roast until slightly tender and browned, about 45 minutes. Transfer to large bowl and keep warm.

During final 30 minutes of roasting, in heavy 12-inch skillet over moderately high heat, heat canola oil until hot but not smoking. Add onions and sauté, stirring constantly, until caramelized, about 20 to 25 minutes. Season to taste with kosher salt, add to roasted carrots in large bowl, and keep warm.

Finish DishWhen beef is tender, transfer to serving platter; tent with foil. Skim fat from liquid in pot. Strain liquid through fine-mesh sieve, pressing on solids with back of spoon to extract all juices, then discarding solids. Return liquid to pot, set over high heat, and bring to boil. Reduce heat to moderate and simmer, uncovered, until reduced slightly, about 5 minutes. Season juices to taste with salt and freshly ground black pepper.

Pour half of juices into bowl with carrots and onions; toss to combine. Pour other half of juices into gravy dish. Arrange carrots and onions around beef on serving platter and serve immediately, with extra juices on side.

The Inaugural Champions’ Dinner was held on Saturday, January 16 to celebrate all of our Perpetual Winners and

Runners-up from all Perpetual Tournaments in 2009. In addition to the celebration we recognized some of our previous Team Play Captains and MVP’s.

Chef Dominique prepared a delicious four-course dinner and our attendees were honored with a special guest speaker, Mr. Eddie Merrins, Pro Emeritus of Bel-Air Country Club. Mr. Merrins shared many interesting stories about his playing, coaching and teaching days and answered questions from the audience.

There was a surprise and special Champions’ Honoree Award presented to Mr. Se Young Yoon for his time, commitment and education to the game of golf. Mr. Yoon has become a massive part of the growth of the game around the world and we all congratulate

him in his undying efforts to make the game open to all.

We would like to give special thanks to Mr. Chris Smith for his vision and hard work in pulling off this wonderful evening and helping to “Build a Tradition”

We look forward to celebrating our Champions again next year and the addition of the “Players of the Year” Awards.

I have been fielding several inquiries about the course closure this summer. The question has

been; “Will we delay the turf transition project as the course is in such great shape at this time?”

The answer is no. The course closure will move forward as scheduled this summer. The next obvious question is Why?

The entire project revolves around one common problem: The quality of water.

The success of the turf transition project is dependant on the “Sooner the Better” approach. There is a very short window of opportunity to utilize good quality water to germinate the new princess 77 seed. This water will not be available in the future so we must capitalize on the current supply. To delay the project would certainly ensure a much more difficult transition, resulting in additional expense, coping with poor playing conditions for a longer period of time and quite possibly the failure of the project all together. If you have any further questions I am happy to meet with you to discuss the project in more detail.

During the winter season this is common on bentgrass greens. The purplish or bluish-gray color may occur

uniformly over the green but is more likely to appear as patches on older creeping bentgrass greens. These patches represent segregated out creeping bentgrass clones. The purpling is especially evident on Penncross greens but will likely occur on all seeded bentgrass cultivars. The purplish color occurs when temperatures get cold in late fall.

During relatively warm sunny days (60 to 65F) the plants are actively photosynthesizing, creating photosynthates (sugars). At night the sugars are translocated down into the storage areas of the plant. However, if nighttime temperatures are cold, some of the sugars fail to translocate. The molecules left in the leaf attach to a pigment called anthrocyanin (purple or blue pigment). The buildup of anthrocyanin results in the expression of the purplish color.

The purplish color will persist through the winter and into early spring. Once temperatures rise and turf growth begins the purplish color will disappear.

10. No need to close the course for 3 weeks every fall for overseeding

9. Healthier turf conditions during the end of summer

8. Improved divot recovery

7. Fewer cart restrictions on fairways

6. Bermuda is much more disease tolerant than Rye

5. Can spray Poa out of Bermuda but not out of Rye

The participants were treated to a summer day in the middle of winter with temperatures in the high 70’s. It was an excellent turnout as 78 players participated in the 9 hole scramble format. The players enjoyed lunch and cocktails on the Golf Shop patio before heading onto the course to take in the awesome weather with a bit of golf. Thank you to everyone who participated as a great time was had by all. It was a wonderful way to kick off our first couple’s event of 2010.

By Steve Zarate

At this time of year you may notice a white bird fluttering it’s wings in an unusual way in what appears to be a

backward rowing motion to keep it suspended in air, similar to how a paper kite holds its place hanging against the wind. The kite got its name from this bird. What is it?

It is a White-tailed Kite, one of only five kite species in the United States and the only one in California. The White-tailed Kite is a medium-sized raptor that is unique in its ability to hover in the air. The word raptor comes from the Latin word “rapere” which means to seize or plunder. Raptors are also known as birds of prey and are characterized by a hooked beak, strong feet with sharp talons to catch and kill prey, keen eyesight, and a carnivorous diet. Hawks, Eagles, Falcons, and Owls are examples of raptors.

Sometimes called the white hawk, its body is 15” long with more than a 3-foot (39”) wingspan. In flight it can be confused as a gull because of its white coloring and long

pointed wings. The hovering behavior, however, is unique and cannot be confused with other birds. When it hovers it typically has its wings held high, tail down, and legs dangling while it scans for food, preparing to swoop in on its prey in nearly vertical descent.

If you get a good look you will see that the White-tailed Kite is a beautiful bird. The tail is conspicuously white, white underside, and pale gray body with black shoulders. The beak is black, eyes are red, legs and feet are a buff-yellow. Males and females have the same appearance. Researchers have yet to determine whether the White-tailed Kite is migratory, nomadic, or both. They can be seen any time of year in Shady Canyon, but they seem more common in the Fall and Winter. Look for them particularly in the early morning and late evening. They often will perch at the top of a tree and then you can get a really good look.

The population was decimated during the 1800s and early 1900s, shot in large numbers for sport and by farmers who thought it threatened their chickens, although they feed almost entirely on small rodents and insects. In the 1920s only a remnant population of approximately 70 pairs remained in isolated areas of central California and it was feared the species would become extinct. Since then the population has rebounded and they are a protected species.

Join us Friday, April 16, 2010 for an exclusive wine dinner with Duckhorn Wine Company Founder, Margaret Duckhorn.

Duckhorn Wine Company is a collection of small winery estates focused on site-specific wines of distinction from the Napa and Anderson valleys. The Duckhorn Wine Company family includes Duckhorn Vineyards, Paraduxx, and Goldeneye.

Duckhorn VineyardsCo-founded by Dan and Margaret Duckhorn in 1976, Duckhorn Vineyards has been crafting Bordeaux varietals from the Napa Valley for over 30 years.

ParaduxxParaduxx is a unique Napa Valley red wine with its foundation in Zinfandel, California’s resident grape, and Cabernet Sauvignon. Created in 1994.

GoldeneyeGoldeneye began making premium quality, cool climate Pinot Noir from its estate winery in the Anderson Valley in 1997. The winery also produces an enticing, sister Pinot Noir called Migration. The first Chardonnay is scheduled for release on March 1st.

Three questions to the founder Margaret Duckhorn:

What would you consider to be the most enjoyable part of your job?I love to travel. I have been to every major city in the U.S. on behalf of Duckhorn and have met so many

wonderful people who share a common interest in great food and wine. It’s great to have that immediate bond with people.

What is the most enjoyable part? The wine industry is a way of life; from enjoying the seasons in the vineyards and the furious activity at harvest to the stimulation of planning how to market and sell our wines, I find my

work engaging and fascinating. In addition, when on the road I meet some incredible people who live very interesting lives and who share a common interest in food and wine and foreign travel.

What is your favorite food and wine pairing?I’m not sure I have a single favorite food and wine pairing, but I really enjoy red wine, so Pinot Noir with salmon, Merlot with lamb, or Paraduxx with a rich pasta dish are some of my absolute favorite combinations. And, a cheese course with any red wine is always a “must.”
