“After perfecting his traditional Swiss recipe, Alfred Guggisberg set out to create a new style of Swiss, aimed at better suiting the less-developed American palate. This new cheese would be milder, but equally as flavorful, and favorable to young and old alike. Alfred experimented and eventually developed the perfect recipe for his new cheese, which had smaller eyes and a milder, creamier taste. After seeing his new Swiss and noting that it was a “baby” version of a traditional Emmental Swiss wheel, Alfred’s wife, Margaret, christened the new cheese “Baby Swiss.”

Does cheese expire?No. Cheese does not “go bad.” It simply gets sharper in taste, and eventually surface mold appears. You can simply scrape off the mold and continue enjoying the remaining cheese.

Can you freeze cheese?Yes! Baby Swiss freezes very well. Be sure to wrap the cheese as tightly and securely as possible with plastic wrap. Adding a layer of newspaper around the outside will ensure extra protection. When you are ready to use the cheese, let if thaw in the refrigerator for at least 24 for hours.

Is your cheese Lactose-free?The cheeses made by Guggisberg Cheese are lactose-free, and are indicated by a green “LF” notation throughout the catalog.

Is your cheese Gluten-Free?Yes, all of the natural cheeses made by Guggisberg Cheese are gluten-free.

Does your cheese contain antibiotics?No. Before we even accept the milk and receive it in our plant, it must be thoroughly tested for antibiotics and certified as antibiotic-free.

Do you use Animal Rennet?No. The rennet we use is produced in a lab and is vegetari-an-approved. (Official term is microbially-fermented rennet.)

Can I make a substitution?During the holiday season, we can only ship what is listed in our catalog, and cannot make any substitutionsin gift packs.
