The Story of ShunIn Japan, “shun” (pronounced shoon) is a concept that is at once very simple and yet imbued with deep meaning.

It is the word used to describe local, seasonal food at the very peak of its flavor and freshness. “Shun” is a time—the exact moment when a fruit has reached its perfect ripeness, when a vegetable is at its very best, when meat is at its most mouthwateringly flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time.

We named our fine cutlery Shun to honor this tradition of seasonal, mindful eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too.

Shun Cutlery is from Japan’s Kai Corporation. For over 100 years, this family company has been making fine blades in the tradition of the legendary samurai swordsmiths of ancient Japan. Each Shun takes 100 or more handcrafted steps to complete. Yet even with the weight of ancient tradition behind each blade, Shun cutlery is also thoroughly modern. We craft our fine kitchen cutlery using state-of-the-art technology, the most advanced premium-quality steels, and handle materials that are both beautiful and durable.

Classic Pro offers traditional Japanese blade styles, a classic handle design, and a razor-sharp 16° single-bevel edge that makes cutting with the precision required for Japanese cooking a pleasure. These solid VG10 blades have a high, flat front grind and a gentle, hollow-grind on the back, which helps food release from the blade. The gorgeous etched blades make this series visually striking as well, whether in use or on display in the kitchen.

ETCHED BLADEThe etched design on the blade—different for each blade style—is similar to etching found on custom Japanese knives and used to identify the blade’s maker.

The six-inch length of the Shun Blue Butchery is the precise length needed for effi cient butchery—not a quarter inch more, not a quarter of an inch less. It can be used to bone and trim meat as well as to portion it. The six-inch length is also handy for anything you’d do with a utility knife—from trimming vegetables to slicing salami. Until now, it was considered almost impossible to create layered and roll-forged Damascus from two high-carbon stainless steels. But now Shun brings together 71 alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels in one beautiful, high-performance blade: Shun Dual Core. The welding and forging process produces a very fi ne grain in the steel, enabling Dual Core to take and hold an exquisitely sharp edge. What’s more, during normal use, the two steels will wear at different rates creating micro serrations along the edge so that Dual Core maintains its high level of performance even longer. It’s no wonder Dual Core was named 2014’s Kitchen Knife of the Year.

Use & Care Shun recommends taking the best care possible in order to prolong the life of your knives. Proper cutlery care includes giving extra attention to your cutting surface, washing and drying, storage, maintaining the cutting edge and sharpening when needed.

The cutting surface you use makes a big difference in keeping your knives sharp. A good cutting board will help retain a sharp edge for substantially longer. Soft woods such as hinoki, and polypropylene boards are excellent choices. Tile, ceramic, marble, granite, or any kind of glass cutting boards are poor choices and are very hard on your knives.

It is important to protect your investment by hand washing your knives with gentle dish soap. Do not use soaps with citrus extracts or bleach; they can promote rust. Rinse and towel dry immediately. Take extra time to get ALL of the water/moisture off of the sharp cutting edge. Be careful not to injure yourself. Do not drag the edge of your knife on your absorbent cloth. Please blot dry the cutting edge.

Honing your ShunRegular honing with a Shun Honing Steel will be necessary to maintain the edge. Weekly honing will signifi cantly extend the time between sharpening.

1. Place steel tip down on a sturdy, non-slip surface. (You may also place a damp dishcloth on top of the surface to further guard against slipping.)

2. Align the flat side of the blade with the 16° angle guide on the hand guard.

3. Maintaining that angle, gently pull the blade down the steel from heel of blade to tip. Do this three to four times.

4. Repeat on the other side of blade with an equal number of strokes.

When the time comes to sharpen these premium blades, we recommend using a whetstone, the Shun Electric Sharpener (specifi cally designed to sharpen Shun’s 16° blade angle), or returning them to Kai-USA Ltd. for free sharpening.

Cutting TechniqueShun cutlery is designed to be used in a smooth, slicing motion—never in an up-and-down “chopping” manner.

Imagine cutting wood with a handsaw, then slice through your food with a similar motion, intentionally pushing the knife forward and down as you slice, then pulling it back toward your body. Repeat as needed to cut the food. Always pay attention to where your fingers are in relation to the knife. Your skill and experience level should determine the speed at which you cut. When first slicing with a Shun, it’s best to slow down and enjoy the effortless precision cutting ability of your new knife.

The Classic 8” Western Chef’s Knife (DM0766), and the Classic Meat Cleaver (DM0767) are designed to handle more aggressive work in the kitchen such as breaking down chicken (DM0766 & DM0767) and thick-skinned vegetables, such as spaghetti and butternut squash.

The pinch-gripA professional pinch grip provides excellent cutting control, especially when using wide-bladed knives such as chef’s knife, santoku, or nakiri. Here’s how to get a professional pinch on your Shun:

1. “pinch” the back of the blade a little forward of the handle between your thumb and your curved index finger.

2. Then simply wrap the rest of your fingers lightly around the handle. You want a firm grip, but not a strained grip; trust the knife to do its work.

With this grip, the blade will feel more like a part of your hand, enhancing your control of the blade and making even quite long knives manageable. You can even use this grip on paring knives or utility knives when doing tasks like dicing shallots or mincing garlic.

You may also see some Japanese chefs placing an index finger on the spine of the knife. This is usually employed with a yanagiba or deba when slicing at an angle and can provide additional tip control.
