Foreword - My Husband’s Top 10 Recipes from the Slim By Nature Body Slimming Detox Program (Phase 3). You may be wondering why I would write a short recipe book about my Husbands favourite dishes on My Body Slimming Detox Program? Well, the answer is simple enough – the detox program works best if you have support from your family. Support from your husband or partner goes a long way to ensuring success and your continued participation on the program. Now I’m not saying that your husband or partner should be on the same Detox Diet that you may be considering. Nor am I saying that all of the following recipes are allowed on Phase 2 of the Slim By Nature Body Slimming Detox (that is a different recipe book that you will receive when you join the program). However, the dishes within this book are delicious, wholesome and very healthy. They can also be easily customised to allow a little extra “filler” for the men of the house.

Chicken Curry Chicken Curry is without doubt my husband’s favourite dish. It must be an English thing! I think he would eat it every day if he could! Luckily, we have this healthy alternate to the local take away. This dish is delicious served alone the way I eat it, or my hubby enjoys it with rice or crusty bread.

INGREDIENTS (SERVES TWO)

• 200 grams cubed chicken • 100 ml chicken broth or water • 2 tsp curry powder or to taste • Pinch of turmeric • Dash of garlic powder • Dash of onion powder • 30 ml minced onion • Salt and pepper to taste • Stevia to taste • Cayenne to taste

PREPARATION INSTRUCTIONS

1 Dissolve spices in chicken broth in a small saucepan. 2 Add chopped onion, garlic and chicken. 3 Add Stevia to taste for a sweeter curry flavour. 4 Sauté chicken in liquid until fully cooked and liquid is reduced by half. 5 Additional water may be added to achieve desired consistency. 6 Serve hot or cold.

Makes two enjoyable servings (1 protein)

Tomato Basil Chicken Tomatoes and Basil are a classic combination that works in so many different recipes from across the world. This simple recipe combines those flavours with delicious flavoured chicken. My husband loves to soak up the juices with a piece of chunky bread.

INGREDIENTS (SERVES TWO)

• 200g cubed chicken • 400ml chopped tomato • 100ml chicken broth or water • 60ml lemon juice • 60ml chopped onion • 2-4 cloves garlic sliced • 6 leaves basil rolled and sliced • 1ml oregano fresh or dried • Dash of garlic powder • Dash of onion powder • Cayenne to taste • Salt and pepper to taste

PREPARATION INSTRUCTIONS

1 Lightly brown the chicken in small saucepan with lemon juice. 2 Add garlic, onion, spices and water. 3 After chicken is cooked add fresh tomatoes and basil. 4 Continue cooking for 5 to 10 minutes. 5 Salt and pepper to taste, garnish with fresh basil.

Makes two enjoyable servings (1 protein, 1 vegetable)

Baked Apple Chicken Baked Apple and Chicken? It really does work magnificently. The first time I cooked this for my husband, he said that it was like a delicious chicken desert!

INGREDIENTS (SERVES TWO)

• 200 grams cubed chicken • 1 finely chopped apple • 60 ml lemon juice • 30 ml apple cider vinegar • 1 ml cinnamon • Salt and pepper to taste • Stevia to taste • Dash of cayenne

PREPARATION INSTRUCTIONS

1 Lightly brown the chicken in lemon juice.

2 Add chopped apple and evenly coat with a mixture of apple cider vinegar, lemon juice, stevia, cinnamon, cayenne and pinch of salt.

3 Place in small baking dish and add additional vinegar and lemon juice. 4 Serve with the rest of the apple in thin slices on the side. 5 Makes two enjoyable servings (1 protein, 1 fruit)

Spicy Mustard Chicken Mustard is a bit of an acquired taste. Being English, my husband always prefers Hot English whereas I usually go for milder Dijon. The beauty of this recipe is that you can completely change It by changing your flavour of mustard.

INGREDIENTS (SERVES TWO)

• 200 g chicken • 240 ml chicken broth or water • 60 ml lemon juice • 30 ml mustard (choose your heat level) • 2 ml dried basil • 1 ml tarragon • Salt and pepper to taste • Stevia to taste

PREPARATION INSTRUCTIONS

1 Lightly sauté the chicken in chicken broth, lemon juice, and spices until cooked. 2 Simmer for additional 10 minutes and periodically deglaze the pan with a little

water or additional broth to make the sauce. 3 Makes two enjoyable servings (1 protein)

Cheesy Cauliflower Mash This recipe is different – it is one that my husband introduced me to!! It is a variation on the classic Cauliflower Cheese. You can mix this recipe up by using different types of cheese such as red cheddar or even blue stilton!

INGREDIENTS (SERVES TWO+)

• Steamed cauliflower (1 head) • 200 ml sharp cheddar cheese • 50 ml half and half or sour cream • 15 ml butter • Salt and black pepper to taste

PREPARATION INSTRUCTIONS

1 Steam the cauliflower in water until soft. 2 Puree in blender or food processor with the half and half and cheddar cheese. 3 Pour cauliflower mixture into a saucepan and heat. 4 Add salt and pepper to taste and serve. 5 Can also be enjoyed plain just omit the cheddar cheese.

Makes multiple servings.

Slow Roasted Beef Brisket This is the SBN version of the Sunday Roast. What man doesn’t enjoy a Sunday Roast? Cook yours this way & you can enjoy it without the extra calories. Just be careful when measuring out the portions!! Hubby can have a bit extra though ;)

INGREDIENTS (SERVES MANY)

• Lean beef brisket in weighed 100 gram increments (example 600 grams = 6 servings)

• 4-6 stalks celery • 15 ml garlic powder • 15 ml onion powder • 15 ml paprika • 50 ml chopped onion • cloves of garlic crushed and chopped • Cayenne pepper to taste • Chili pepper to taste • Salt and fresh ground black pepper to taste

PREPARATION INSTRUCTIONS

1 Combine spices in a small bowl. 2 Rub the mixture into the beef on all sides. 3 Salt the meat liberally. Place the brisket in a crock pot. Fill about ½ ways with

water. 4 Add celery to the liquid and set crock pot on high for 30 minutes. 5 Reduce heat to medium or low and allow to slow cook for 6-8 hours. 6 Baste and turn the brisket periodically. 7 You may add more of the spice mixture if you wish. Enjoy with horseradish

sauce. 8 Save the juices, skim the fat, and use to make flavourful sauces and dressings.

Makes multiple servings (1 protein, 1 vegetable)

Phase Three modifications: Sear on high heat in olive oil on each side before adding to crock pot. Horseradish sauce may be modified by adding mayonnaise or Greek yogurt instead of beef broth.

Veal Picatta Piccata is an Italian word, the feminine form of the word piccato, meaning “larded”. My version of the classic Italian dish is anything but “larded”. It’s delicious and light and a treat for any day of the week.

INGREDIENTS (SERVES TWO)

• 200 g veal cutlet • Serving Melba toast crumbs • 120 ml vegetable broth or water • 60 ml caper juice • 60 ml lemon juice • 2x clove of garlic crushed and minced • Pinch of paprika • Bay leaf • Salt and black pepper to taste

PREPARATION INSTRUCTIONS

1 Mix Melba toast crumbs with paprika, salt and pepper. 2 Dip veal cutlet in lemon juice and coat with herbed Melba toast crumbs. 3 Fry veal cutlet in a little lemon juice on high heat until cooked thoroughly. 4 Set aside cooked veal cutlet. 5 Deglaze the pan with vegetable broth, lemon and caper juice and add chopped

garlic and bay leaf. 6 Cook for 1-2 minutes. Remove bay leaf. 7 Top the veal cutlet with remaining lemon sauce and garnish with lemon slices.

Makes one enjoyable serving (1 protein, 1 Melba toast)

Phase Three modifications: Deglaze the pan with 50 ml white wine and whisk in 30ml of cold butter. Pour over veal and enjoy.

Mongolian Beef with Cabbage Another classic dish given the SBN twist. How about serving this delicious spicy dish on a bed of red cabbage! It tastes much better than rice and doesn’t pack those carbs!

INGREDIENTS (SERVES TWO)

• 200 grams sliced beef • Cabbage cut into fine strips • 200 ml beef broth or water • 30 ml apple cider vinegar • 90 ml orange juice (optional) • 60 ml lemon juice • 60 ml Bragg's liquid aminos • 4 cloves garlic crushed and minced • 30 ml green onions chopped • 2 ml chili powder or to taste • Salt and pepper to taste • Stevia to taste

PREPARATION INSTRUCTIONS

1 Combine all liquid ingredients. 2 Add spices to liquid. 3 Stir Fry in wok on high heat to combine flavours and cook beef and cabbage. 4 Add additional water if necessary to keep dish from burning. 5 Add additional orange slices for added sweetness if desired.

Makes two enjoyable servings (1 protein, 1 vegetable)

Phase Three modifications: Stir fry with additional vegetables such as bell pepper or zucchini. Cook Mongolian beef with sesame, chili, peanut, or coconut oil and use soy sauce to add additional flavour. Top with 15 ml of crushed peanuts if desired.

Baked Curried Fish Another beautiful light dish. Ideal for lunchtime. You can mix this one up by using different types of fish.

INGREDIENTS (SERVES TWO)

• Your choice of white fish • 60 ml lemon juice • Serving Melba toast crumbs • 30 ml finely chopped onion • clove garlic crushed and minced • 1 ml onion powder • 1 ml garlic powder • 1 ml curry powder • Salt and pepper to taste • Fresh parsley

PREPARATION INSTRUCTIONS

1 Combine dry spices and Melba toast crumbs. 2 Dip fish into Melba and spice mixture to coat thoroughly. 3 Broil fish until fish is cooked and herbed crumb mixture is slightly brown. 4 Garnish with lemon slices and fresh parsley.

Makes two enjoyable serving (2 protein, 1 Melba toast)

Prawns Scampi Scampi was a regular dish for my husband whilst growing up in the UK. This SBN Scampi is different but still delicious. No deep frying on the SBN Program!

INGREDIENTS (SERVES TWO)

• 200 g prawns • 100 ml vegetable broth or water • 90 ml lemon juice • 8 cloves of garlic crushed and minced • Dash of garlic powder • Dash of onion powder • Dash of chili or cayenne pepper powder to

taste • Salt and pepper to taste

PREPARATION INSTRUCTIONS

1 Add garlic to liquid ingredients. 2 Add prawns and additional spices. 3 Cook for 5-7 minutes until prawns are pink and liquid is reduced. 4 Serve hot or cold with a salad or on a bed of spinach.

Makes two enjoyable serving (1 protein)

Brussels Sprout Salad (Vegetarian) This recipe was my contribution to Christmas Dinner when we enjoyed Christmas in the UK with my husband’s vegetarian family. Everyone was amazed that you could eat “raw” sprouts in such a way. This really is a standout fine dining course for your next dinner party. Give it a try!

INGREDIENTS (SERVES FOUR)

• tablespoons lemon juice • 1 tablespoons Dijon mustard • 1 small shallot, minced • 1 garlic clove, minced • Salt and pepper • tablespoons extra-virgin olive oil • 500g Brussels sprouts, trimmed, halved, and sliced very thin • 50g Parmesan cheese, shredded (1/2 cup) • 1/4 cup pine nuts, toasted

PREPARATION INSTRUCTIONS

1 Whisk lemon juice, mustard, shallot, garlic, and ½ teaspoon salt together in large bowl.

2 Slowly whisk in oil until incorporated. Toss Brussels sprouts with vinaigrette.

3 Let sit for at least 30 minutes or up to 2 hours.

4 Fold in Pecorino and pine nuts. 5 Season with salt and pepper to

taste. 6 Serve.
