Summer affords a less intense work schedule for many, allowing you the opportunity to go after that client you have been trying to land an appointment with all year long. Also, there are built in networking opportunities at even the most casual of events which might have you fostering new relationships over the potato salad at your next social BBQ. Bottom line, just because the kids are off all summer doesn’t mean your business is too. Look out for upcoming industry specific networking events at the club. I would like to re-invite you to dine and experience summer at Park Avenue Club, starting with Happy Hour in Charity’s Bar and Patio as it provides a great place to have dinner, drinks or lite fare after work. Every Thursday in August, we will be offering live music with Richie Balin on our Pond Patio from 5:30 to 8:00pm, please consider PAC for your next dining venture. My role here is to improve upon the model that was created 20 years ago by a group of incredibly dedicated and philanthropic business people with a vision. As time moves on, so too do the needs of our membership and we strive to anticipate that every need. Although it may seem premature, August is actually a great time to start planning for your corporate and social holiday parties. We hope that you see us as your home away from home where you and your guests will always be met with a warm hello and a fond farewell. Have a safe and fun summer and I will look forward to seeing you soon enjoying your time with us at the club. Conway Wine Dinner

Thursday, August 8th

The Conway Family have made wine their vocation and devote their energies to creating a family of interesting and appealing wines. They are the producers of both Deep Sea and Rancho Arroyo Grande wines from California’s Central Coast. Join Park Avenue Club as we welcome Gillian Conway, for a night filled with delicious wine and cuisine. Gillian will be leading us through the Central Coast where we will learn about her family and their great success in the production of their fresh and modern wines.

honored by the New Jersey Hall of Fame.

Philanthropist, Ray Chambers, will be

inducted into to NJ Hall of Fame Class of

2013. The induction will take place on

October 21st

at the Izod Center.

We are also proud to announce that our

member, the founder and CEO of

Community FoodBank of NJ, Kathleen

DiChiara, was awarded the prestigious

Unsung Hero Award for 2013.

Although we would like to think that we are, most of us are not made of money. There is a common misconception that, by virtue of belonging to a private club, you must be paying more for the same things you purchase in the “outside” world when in reality… the opposite is true. The club is always trying to find new and exciting ways to save you money through our member value-adds. For those of you who do not know, the following are just a few ways in which you may take advantage of some great savings at the club. Every Tuesday morning we host our “Power Breakfast” where you can enjoy a 50% savings on your delicious meal as our healthy and indulgent buffet is only $7.95 per person. Tuesdays don’t end there, its BYOB night. Bring your own bottle of wine, no matter your taste or selection, and we will waive the corkage fee which is a $20 savings

Every Wednesday evening at PAC we have our Sommelier select a few of our favorites from the cellar, and you can enjoy them at a 50% discount.

The Shucks Deluxe

Scallop Ceviche with Avocados and Grape Tomatoes INGREDIENTS: 1 pound fresh, U-10/20 dry day boat scallops, sliced in the horizontal to make smaller disks 1 1/2 cups fresh lime juice 1 bunch finely sliced scallions 2 pint containers of grape tomatoes, sliced 1 small diced red onion Fresh hot green chiles (2 to 3 Serrano’s or 1 to 2 Jalapenos), stemmed, seeded and finely chopped 1/3 cup chopped cilantro, plus a few leaves for garnish 1 to 2 tablespoons extra-virgin olive oil (optional) 2 to 3 dashes of Tabasco (optional) Coarse sea salt Fresh cracked black pepper 3 tablespoons fresh orange juice 1 large or 2 small ripe avocados, peeled, pitted and sliced Tortilla Chips DIRECTIONS: In a 1 1/2-quart glass or stainless steel bowl, combine the scallops, lime juice and scallions. Use enough juice to cover the fish and allow it to float freely; too little juice means unevenly "cooked" fish. Cover and refrigerate for about 2 hours, until a scallop no longer looks raw when broken open. Drain in a colander. In a large bowl, mix together the tomatoes, green chiles, red onion, cilantro and optional olive oil or Tabasco (for heat). Stir in the scallops and season with salt, usually about 1/2 teaspoon. Add the orange juice. Cover and refrigerate if not serving immediately. Place the ceviche in a large bowl and let people spoon it onto individual plates to eat with tortilla chips. Garnish the ceviche with cilantro leaves and sliced avocado before serving.

Scallop Ceviche

Makes 2 Drinks

Serves 8 People

The Shucks Deluxe A peachy cocktail for the dog days of summer... INGREDIENTS: 4 large peaches, pits removed and cut in half 2 tbsp. sugar 2 tbsp. lime juice 3 ounces vodka 1 tbsp. lime juice 1 tbsp. honey 1 cup sprite 4 slices of peaches, garnish 2 rosemary sprigs, garni DIRECTIONS: 1. Using a food processor, add peaches, sugar & lime juice. Pulse until pureed. Pour the contents into a fine sieve over a bowl to catch the nectar. Using the back of a spoon, push through all the nectar you can and toss the bits that don’t make it through. 2. To make Rosemary Simple Syrup: Combine 2 cups of water, 2 cups of sugar, 3 tbsp. corn syrup and 1/4 cup rosemary leaves in a medium saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and rest for 20 minutes. Strain into a glass and refrigerate until chilled. 3. In a cocktail shaker filled with ice, add vodka, lime juice, honey, 2 tbsp. rosemary simple syrup, 4 tbsp. peach nectar and shake. Pour into two cocktail glasses
