The quality of a mineral water will depend on the site of its source and the nature of the aquifer, the porous rock through which the water trickles. Just l ike wine, natural mineral

waters have their own ‘terroir’, a French word that means that each place on earth has its own signature taste.

S.Pellegrino is a fine quality natural mineral water that flows from natural springs in Val Brembana in the San Pellegrino Terme area, at the foothills of the It alian Alps near

Bergamo (Lombardy). S.Pellegrino surfaces as perfectly sparkling and naturally enriched with mineral salts.

SPECIALTY GIN

BROCKEN SPECTRE ‘Gin For Tonic’ Tasmania, Australia 18

Gin for Tonic was the brainchild of an avid gin lover, frustrated with the way tonic over powers the delicate flavours of the spirit. The goal was to create a beautiful and elegant gin that stood its ground to become perfectly balanced and that's how Broken Spectre Gin For Tonic was born. We recommend serving on ice with any Fever Tree tonic or martini.

BROCKEN SPECTRE ‘Summer Gin’ Tasmania, Australia 20

The Tasmanian Summer Gin is infused with locally grown saffron post distillation, giving the liquid and golden hue and allowing the full rich flavor of the spice to create a distinct powerful spirit. We recommend serving on ice with Fever Tree Light Tonic or Martini.

FOUR PILLARS ‘Shiraz Gin’ Vic, Australia 18

Pine Forrest notes, white pepper and spices, and the gin is beautifully balanced with a delicious Sweetness and nice tannins to finish.Nice with fresh lemon and a quality tonic.

HUSK DISTILLERS ‘Ink Gin’ Tweed Valley, NSW 18

Bright blue and indigo hues changing to pink when mixed with natural acidity including tonic water, lemon and lime. The nose is shows fragrant citrus followed by fresh pine, coriander, juniper and sweet orange. The taste begins from fresh lemon myrtle then leads onto subtle pepper berry and citrus notes We recommend serving on ice with Fever Tree Mediterranean Tonic.

HARTSHORN ‘Sheep Whey Gin’ Tasmania, Australia 21

This distillery is a new Tasmanian micro distillery making boutique batches of gin from their own sheep whey. They are the first in the world to create this unique product. Hartshorn use only Australian native botanicals (plus juniper). 3 of them never used before in any other gin. We recommend serving on ice with Fever Tree Indian Tonic.

MALFY ‘Con Limone Gin’ Italy 18

Malfy used a selection of coastal grown Italian lemons-some from Amalfi and some from Sicily to give the gin a fresh zesty aroma. Using Italian juniper and five other botanical including coriander, angelica and cassia bark to give the gin a delicious and refreshing bite. We recommend serving with Fever Tree Mediterranean Tonic or Martini.

NEVER NEVER ‘Juniper Freak Gin’ South Australia 21

2017 Limited batch release. The Juniper Freak is a celebration of Juniper. Its an oiled-up beast of a gin. Wonderfully intense, aromatic, flavoursome gin. Fragrant pine and earthy angelica with a touch of pepper berry spice. Incredibly long finish, with resinous juniper oils coating the palate and pepper berry developing late. We recommend serving on the rocks with Fever Tree Indian tonic or martini.

NOSFERATU ‘Blood Orange Gin’ Australia 18

A delicious viscous gin with a noticeable orange tang, spice, vanilla and just a hint of bitterness. We recommend serving on the rocks or a great substitute for the standard Negroni.

THE SPLENDID GIN ‘Summer Cup’ Tasmania, Australia 18

Delicate notes of mandarin, rosemary and bergamot are carefully preserved through vapour infusion and balanced with juniper and coriander botanicals We recommend serving on ice with Fever Tree Mediterranean.

APEROL SPRITZ 18 Aperol, Famiglia Cielo Prosecco, San Pellegrino Sparkling

Aperol Spritz became popular in the 1950s, inspired by the Venetian mix of white wine and soda. The drink incorporates the Italian aperitif Aperol, which originated in Padua, Italy, in 1919 as a light liqueur alternative. It is the most popular summer drink of Italy and is perfect for a nice spring or summer day in Mooloolaba.

CARDINALE 18 Bombay Saphire, Dry Vermouth, Campari, Cloudy Apple Juice

The Cardinale was invented by a Cardinal who frequented the Excelsior Hotal on Via Veneto in Rome.

He suggested the recipe to his bartender, and the idea was a success with the other clients too, so the bartender

christened the cocktail with the name ‘Cardinale’.

CARIBBEAN COOLER 18

Plantation Pineapple has a rich and delicious bouquet, accented by smoky notes and aromas of tropical fruit, pineapple, citrus peel, and a touch of clove. The palate opens with a structured, pleasant sensation of ripe banana, pineapple, and spices layered in a smoky finish.

LYCHEE BOMB 19 Lychees, Russian Standard ‘Gold’ Vodka, Apple Liqueur, Lychee Liqueur, Egg White

MANHATTAN 18 Slow & Low Rye Whiskey, Sweet Vermouth, Cherry

The original "Manhattan cocktail" was a mix of "American Whiskey, Italian Vermouth and Angostura bitters".

During Prohibition (1920–1933) Canadian whisky was primarily used because it was available.

MOCKTAIL 16 Ask our bar tender for our ‘In Season’ fruit based non-alcoholic mocktail

NEGRONI 18 Campari, Tanqueray No10 Gin, Martini Rosso,

While the drink's origins are unknown, the most widely reported account is that it was first mixed in Florence, Italy, in 1919, at Caffè Casoni (formerly Caffè Giacosa),located on Via de' Tornabuoni and now called Caffè Roberto Cavalli. Count Camillo Negroni concocted it by asking the bartender, Fosco Scarselli, to strengthen his favorite cocktail, the Americano, by adding gin rather than the normal soda water. The bartender also added an orange garnish rather than the typical lemon garnish of the

Americano to signify that it was a different drink.

VERY SEXY MARTINI 19 Fresh Raspberries, Mint, Lime, Praire Organic Vodka, Sparkling Rose

VESPER 20 Hendricks Gin, Russian Standard ‘Gold’ Vodka, Lillet Blanc

The drink was invented and named by Ian Fleming in the 1953 James Bond novel Casino Royale.

A Vesper differs from Bond's usual cocktail of choice, the martini, in that it uses both gin and vodka, Kina Lillet instead of the usual dry vermouth, and a lemon peel instead of an olive. Although there is a lot of discussion on the Vesper, it is only ordered by Bond once throughout Fleming's novels – although Bond drinks the Vesper in the film Casino Royale – and by later books Bond is ordering regular vodka martinis, though he also drinks regular gin martinis. Felix Leiter ordered a Vesper for Bond in the novel Diamonds Are Forever, albeit with Cresta Blanca in place of Kina Lillet, which Bond politely remarks is the "Best Vermouth I ever tasted." It may be that Fleming decided not to have Bond order a Vesper again due to the way in which Casino Royale ends.

"Part hand, part machine-picked, part wile and part cultured yeast, matured for 11 months in new French oak. Incredibly youthful quartz-green colour: a great colour: a great chardonnay, its intensity and length right up there with

the best prior vintages; white peach and nectarine open the batting, pink grapefruit coming swiftly thereafter, creamy/nutty oak almost lost in the crowd. If this were’t enough, the aftertaste is a work of art, complete in itself”

Gamay-based wines are typically light bodied and fruity. Wines meant to be drunk after some modest aging tend

to have more body and are produced by whole-berry maceration. The latter are produced mostly in the designated

'Cru Beaujolais' areas where the wines typically have the flavour of sour cherries, black pepper, and dried berry,

as well as fresh-cut stone and chalk.

Red Burgundy is wine that is made in the Burgundy region of eastern France using 100% Pinot Noir grapes. That’s right, red Burgundy is just a Pinot Noir. These wines are considered to be the best money can buy, which is why they’re some of the most expensive in the world. What makes both Burgundian wines so special, is that Burgundy, more than probably any other wine region in the world, is completely influenced by its terroir. Terroir is a sense of place, it means that when you drink a wine, you completely taste the region where the wine was made. Most simply, terroir is the concept that the land from which the grapes are grown imparts a unique quality that is specific to that single vineyard. Over the centuries, Burgundy has become known for being the best land in the world for producing both Pinot Noir and Chardonnay.

2007 Faiveley ‘Mazis-Chambertin’ Grand Cru

The wine reveals a deep ruby red hue and intense notes of oak, spice and red fruits on the nose. The palate offers the same aromas and the nose with a harmonious combination of fruity and oaky notes. With its smooth tannins and long, lingering finish, this well-balanced wine is the epitome of elegance.

WINE REGIONS OF BORDEAUX

As a very broad generalisation, Cabernet Sauvignon (Bordeaux's second-most planted grape variety) dominates the

blend in red wines produced in the Médoc and the rest of the left bank of the Gironde estuary. Typical top-quality

Châteaux blends are 70% Cabernet Sauvignon, 15% Cabernet Franc and 15% Merlot. This is typically referred to

as the "Bordeaux Blend". Merlot tends to predominate in Saint-Émilion, Pomerol and the other right bank appellations.

These Right Bank blends from top-quality Châteaux are typically 70% Merlot, 15% Cabernet Franc and 15% Cabernet

Sauvignon.

The Bordeaux Wine Official Classification of 1855 resulted from the 1855 Exposition Universelle de Paris, when Emperor Napoleon III requested a classification system for France's best Bordeaux wines that were to be on display for visitors from around the world. Brokers from the wine industry ranked the wines according to a château's reputation and trading price, which at that time was directly related to quality.

The wines were ranked in importance from first to fifth growths (crus). All of the red wines that made it on the list came from the Médoc region except for one: Château Haut-Brion from Graves

2015 Dominus Estate Napa Valley, California USA 1500 (86% Cabernet Sauvignon/9% Petit Verdot/ 5% Cabernet Franc)

In the late 1960’s, while attending the university of California at Davis, Christian Moueix fell in love with the Napa Valley and its wines. Son of Jean-Pierre Moueix, the fames wine merchant and producer from Lisbourne, France, Moueix returned home in 1970 to manage the family vineyards, including Chateaux Petrus, La Fleur-Petrus, Trotanoy in Pomerol and Magdelaine in Saint Emilion.

His love of Napa Valley lingered and in 1981, he discovered the historic Napanook vineyard, a 124-Acre site west of Yountville that had been the source of fruit for some of the finest Napa Valley wines of the 1940’s and the 1950’s. In 1982, Moueix entered into a partnership to develop the vineyard and in 1995, became its sole owner. He chose the name ‘Dominus’ or ‘Lord of the Estate’ in Latin to underscore his longstanding commitment to stewardship of the land.

2015 Dominus Estate 100* Points

“The 2015 Dominus is a flawless perfect wine as well as a legend in the making. A blend of 86% Cabernet Sauvignon, 9% Petit

Verdot and the rest Cabernet Franc, from dry-farmed vines and brought up in just 40% new French oak, its ruby/purple colour

is followed by an extraordinary bouquet of blackcurrents, crème de casis, damp earth, smoke tobacco, and spring flowers.

Reminding me of the 2015 Chateau Margaux with its incredible mix of elegance and power, this beauty hits the palate with

full-bodied richness, stunning purity of fruit, building tannins, and awesome length. This sensational textured and voluptuous

Dominus drinks well today yet will evolve for 25-30 years or more.”

~Jeb Dunnuck January 2019

2015 Dominus Estate 100* Points

“Bottled in July 2017 and composed of 86% Cabernet Sauvignon, 9% Petit Verdot and 5% Cabernet Franc, the Dominus 2015

Propriety Red leaps from the glass with notes of fresh wild blueberries, crushed blackberries and black currant juice with touches

of wild thyme, underbrush, iron ore and aniseed with wafts of lavender and pencil lead. Medium to full-bodied, the palate has

incredible energy and vivacity, with the firm, pixelated tannins and lively backbone skilfully framing the muscular fruit,

finishing with wonderful length and depth.

Yalumba ‘The Caley’ 2012 98* Points

“While many Australian winemakers are opting for single-vineyard, single-varietal wines for their top labels, Yalumba is deliberately harking back to the 19th and 20th century traditions of the multi-district, multi-

varietal blend. The Coonawarra component brings gorgeous blackcurrant perfume and fine, grippy tannins to the wine, while the Barossa brings generous, mouth-filling richness. An impressive red that will develop very

well in the cellar over decades.”
