LETTER FROM THE ADMIN ISTRATORTime for the May flowers to bloom after all the April showers! And time to dance around the May Pole! May is a fun month, but also a busy month. We have Cinco de Mayo, college graduations, kids getting out of school for the summer, high school graduations, and Memorial Day all here in May. Some of us are going to be busy.
When I was in the 4th grade back in 1975, our elementary school put on a May Day celebration for the town, and my role was to be one of the kids who danced around the May Pole. We had ribbons of different colors connected to the top of the pole, and as we dances around the May Pole, the ribbons all wove together around the pole until all of us kids were right near the pole and falling over each other. When it was over, the pole itself was beautiful with all the different colors woven down the pole. I still
remember the sight of that pole in my mind and how pretty it was. That is all I remember of the celebration, and it seemed like we had a really fun time as well. And yes, I have danced around the May Pole.
I was always so excited to see the month of May come around. I knew it would not be long until we would be out of school for the summer. And as the month progresses, it seemed like the end of school would never come. We always finished school around May 25, and then it was summer play time for 3 months!! We always had a big Memorial Day celebration and cook out either at the river or at the beach. One year while I was in college, there were several families that got together and we all headed to the beach that year for cooking out and playing in the sun and surf. I remember this day very well because we were there from sun up to sun down that day.
On the way home that evening, I began to hurt from the sunburn, and what a sunburn I had. I ended up with 2nd degree burns and could not wear much clothing for a week. Everything that touched the sunburn hurt so much. It took months for that burn to heal up. And since that time, I have always been very careful not to get sunburned again. A lesson learned from that.
I hope all of you look forward to this month of May and enjoy all it has to offer. Celebrate the times you can, and get ready for summer to get here. Just be sure to apply sunscreen!!

TEAM MEMBERS OF THE MONTH
We appreciate all our staff for their hard work. It’s hard for our
residents to choose the team member of the month. So many
of you are voted for, keep on with all you do.
Our featured team member this month Laura M.
She is very calm and accommodating with all
she does. She’s always on the go, making sure
we got what our needs meet. During breakfast
and lunch she’s a great server. She is a happy
person and great to have around.
Lata B. is our second team member of the
month. Lata is a different culture and loves
to tell us about it. We enjoy seeing it in her
dancing. She has a good sense of humor and
is very caring. She gives the best showers.
SHORT TERM SUCCESS STORYWe all go through hard moments in life. The beauty of life is that it can’t
control us as long as we make steps to a better you. So, women let’s take
a stand and encourage each other not just in the month of May but
always. We are all strong, beautifully and wonderfully made!

We would like to thank these two beautiful hearted ladies (Jan and Shari)
for coming back home for a visit and showing us their love. Their hearts
are attractive as their mothers, Ms. H. You made our hearts full and warm.
Red, White & Blue TiramisuIngredients:• 1 cup ricotta cheese• 1 cup confectioners’ sugar• 1/4 cup sour cream• 1/4 cup coffee liqueur• 1 1/2 cups shortbread cookies
(about 30 2-inch cookies)• 1/2 (21 ounce) can strawberry
pie filling• 1/2 (21 ounce) can blueberry
pie filling
Directions:In large mixing bowl, combine ricotta cheese, confectioners’ sugar, sour cream and coffee liqueur; mix well. Mixture will be very thin but will set up after chilling. Set aside.
Set aside a tablespoon of both the pie fillings to use later for garnish.
Break apart and crush cookies into the bottom of each parfait glass, until desired thickness is created.
To assemble dessert, spoon 2 tablespoons ricotta cheese mixture into each of 6 (8-ounce) parfait or stemmed glasses on top of cookie layer. Top each with 2 tablespoons strawberry filling. Repeat ricotta layer, then top with blueberry layer. Continue alternating layers. Top with remaining cheese mixture. Chill 2 to 3 hours.
Garnish with reserved strawberries and blueberries. Makes 6 servings
