Whipped

Shortbread

1lb butter1 cup icing sugar

1/2 cup corn starch

3 cups Flour1 tsp. VanillaChopped nuts or cherries (optional)

Preheat oven to 350degrees F

Cream butter. Add ingrdients in order. Drop

from teaspoon on to cookie sheet. Adorn with

tiny pieces of nuts or cherries. Do NOT bake

until brown!Enjoy!

WinterFruit-Stuffed

Pork Tenderloin

SERVES 81/2 cup dried apricots

1/2 cup dried cherries

1/2 cup dried � gs

2 pork tenderloins

(about 3 lbs total)

1 teaspoon salt

1 teaspoon freshly ground black

pepper1 cup crumbled blue cheese

2 tablespoons extra-virgin olive oil

4 tablespoons butter

1/4 c up honey, preferably sourwood

honey

1. Mince the apricots, cherries and � gs by hand or in a food processor.

2. Slice the tenderloins lengthwise, almost all the way through. Open them

up and lay them � at. Place each tenderloin on a large piece of plastic wrap.

Cover with another piece of plastic wrap and pound each piece of meat with

a meat tenderizer until it is about 1/2-inch thick. Remove the top piece of

plastic.3. Season the surface of the pork with the salt and pepper. Divide the fruit

mixture in half and spread evenly on the cut surface of each tenderloin. Top

each with half of the cheese. Roll up each tenderloin, using the bottom piece

of plastic to help you, tucking in the fruit and cheese as you go. Tie kitchen

string every 2 inches around the tenderloins, continuing to push in any fruit

or cheese that may fall out.

4. Preheat the oven to 450 F.

5. Heat the oil in a large skillet over medium-high heat. Sear the tied

tenderloins, turning as each side is browned. Be careful when searing the open

side, as some fruit and cheese might fall out. You are just trying to seal in the

meat juices, not trying to cook the pork all the way through.

6. Combine the butter and honey in a microwaveable bowl and microwave

on high for about 20 seconds, or until the butter is melted. Drizzle the butter

over the tenderloins.

7. Place the tenderloins on a baking sheet. Bake for 15

to 20 minutes, or until the meat reaches an internal

temperature of 150 F. Remove the baking sheet and

allow the tenderloins to sit for at least 10 minutes

before slicing. This will keep the juices in the meat

rather than all over your kitchen counter.

8. Snip off and discard the strings. Slice the pork

into 1-inch-thick pieces and serve.

30 marshmallows (large)

1/2 cup butter

green paste food coloring

1/2 teaspoon vanilla

4-1/2 cup corn flakes or Granola

cinnamon red hots

Microwave marshmallows, butter, and food

coloring on 1/2 power 2 minutes, or until

melted. Add vanilla and mix thoroughly. Fold

in corn flakes or granola until they are covered

with cooked mixture. Form into holly shape on

waxed paper. Add candy for berries while still

warm. Tie on a red ribbon and serve.

Mulled Wine or

Glögg5 whole white cardamom pods, cracked

2 whole cloves

1 1-inch piece of cinnamon stick

1 teaspoon dried orange peel

2 tablespoons brown sugar

1/3 cup Madeira or port

1 bottle good-quality red wine such as burgundy

Put all of the ingredients in a stainless steel pan and slowly heat. Do not

boil. Strain and drink immediately. For a more intense � avor, let spices

steep for several hours or overnight; strain and gently reheat.

Serve in a heat proof bowl, with mugs or glasses and a large ladle. Enjoy

welcoming in Christmas with this traditional Swedish beverage!

The Night Before ChristmasA Visit From St. Nicholas - Henry Livingston, 1808‘Twas the night before Christmas, when all through the house, not a creature was stirring, not even a mouse.

The stockings were hung by the chimney with care, in hopes that St. Nicholas soon would be there.

The children were nestled all snug in their beds, while visions of sugar-plums danced in their heads; and mamma in her ‘kerchief, and I in my cap, had just settled down for a long winter’s nap, when out on the lawn there arose such a clatter, I sprang from the bed to see what was the matter.

Away to the window I � ew like a � ash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow, gave the lustre of mid-day to objects below. When, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer.

With a little old driver, so lively and quick,I knew in a moment it must be St. Nick.More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name;“Now! Dasher, now! Dancer, now! Prancer, and Vixen! On! Comet, on! Cupid, on! Donner and Blixen! To the top of the porch! to the top of the wall! Now dash away! dash away! dash away all!”

As dry leaves that before the wild hurricane � y, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they � ew, with the sleigh full of toys, and St. Nicholas too.

And then, in a twinkling, I heard on the roof

the prancing and pawing of each little hoof.As I drew in my hand, and was turning around, down the chimney St. Nicholas came with a bound.

He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot.A bundle of toys he had � ung on his back,And he looked like a peddler just opening his pack.

His eyes – how they twinkled! His dimples – how merry! His cheeks were like roses, his nose like a cherry! His droll little mouth was drawn up like a bow, and the beard of his chin was as white as the snow;

The stump of a pipe he held tight in his teeth, and the smoke it encircled his head like a wreath; he had a broad face and a little round belly, that shook, when he laughed like a bowlful of jelly.

He was chubby and plump, a right jolly old elf, and I laughed when I saw him, in spite of myself. A wink of his eye and a twist of his head, soon gave me to know I had nothing to dread.

He spoke not a word, but went straight to his work, and � lled all the stockings; then turned with a jerk, and laying his � nger aside of his nose,and giving a nod, up the chimney he rose.

He sprang to his sleigh, to his team gave a whistle, and away they all � ew like the down of a thistle.

But I heard him exclaim, ere he drove out of sight, “Happy Christmas to all, and to alla good-night!”
