Psalm 51:11 Beloved parishioner Montie Montenegro remembered St. Francis with a most generous bequest of $100,000. The funds have been received and deposited in the church’s money market account. The Finance Committee, composed of JD Polley, Craig and Karen Korn, and Jan Leisner, will make recommendations to the Bishop’s Committee, who will determine how the money will be invested and the nature of the endowment created for it. All of us are grateful for Montie’s generosity and faithful devotion to this parish, which he loved. This gift is a statement of his commitment to the future of St. Francis and his belief that God will continue to work with and through the people of this special parish.  Ascribe   e  Lord   e  glory due his name  ;  bring an  o  ff ering  , and  come before him . 1 Chronicles 16:29

Several of you asked for the recipe for this casserole, brought to our picnic. This is especially goousing tomatoes fresh from the garden. Here is the link to the recipe, or see it below. Enjoy!

9x13 pan, 350-375 degrees, 40-60 minutes.

1 medium potato1 medium yam2 carrots1 red bell pepper

1 red onion, sliced into thin rings2 small or 1 large zucchini2-3 large ripe tomatoes1/2 C grated Parmesan, or more as desired2 Tbsp dried Italian-style bread crumbssalt and pepper5 Tbsp. olive oilfresh basil sprigs for garnish, optional

1. Slice first 4 ingredients into 1/2 inch pieces.2. Slice zucchini and tomatoes into 1/4 inch thick slices.

3. Toss the potato, yam, bell pepper and carrots with 2 Tbsp of olive oil in a 9x13 pan.4. Sprinkle with salt and pepper and toss until coated. Spread evenly.(I sprinkle with parmesan here for more cheesy goodness.)

5. Arrange onion slices evenly over vegetables.6. Arrange zucchini over the onion.7. Drizzle with 2 Tbsp oil.8. Sprinkle with salt and pepper and arrange a layer of tomato slices over all.9. Stir parmesan and bread crumbs together, sprinkle over the vegetables and drizzle with last

Tbsp. of olive oil.10. Bake uncovered at 350 - 375 degrees until the vegetables are tender and the topping golden

brown, 40-60 minutes.

11. Garnish with basil if you have it.

Can be served warm or room temp.
