1. Preheat oven to 400°F.

2. Combine all ingredients in a medium bowl and stir until well-mixed.

3. Scoop 1/4-cup portions onto baking sheet lined with parchment paper, and press each one down to form �at cakes.

4. Bake for 8-10 minutes, or until golden brown.

5. Serve with your favorite sweet or savory toppings, like hot goat cheese crumbles or green apple slices.
