HHello! My name is Myron Mielke, editor and publisherof I’m a Bodybuilder magazine. I’ve been under the influ-ence of the iron bug for a repectable number of years andpublishing my own muscle magazine has been a lifelongdream. I’m very excited to be launching the first issue. Ipromise that I’m a Bodybuilder will be refreshing changeof pace from the muscle muscle mags. It’s going to be forbodybuilders of all ages. If you’re a teenager, it’ll steeryou down the correct path. If you’re approaching themasters division (like myself) you’re going to love someof the nostalgic things I’m bringing back from musclemags in the early 1980s.

I was twelve years old when I started weight training,That was the year before Arnold came out of retirementto win the 1980 Mr. Olympia. My bodybuilding lifestylebegan in 1981—the year Franco Columbu won his sec-ond Mr. Olympia. (I still think Tom Platz should havetaken that show.)

As a teenager I bought every muscle magazine I couldafford. I trained, ate and slept bodybuilding. I read every-thing I could get my hands on that pertained to trainingand nutrition. I scanned the TV Guide on the weekendslooking for a Mr. Universe or Mr. Olympia to be broad-cast on Wide World of Sports or other such shows. Ibegan my competition days at age 17. I won an overallteenage show at 19 and decided to retire from competi-tion. Competitive bodybuilding was taking too much ofmy time. I needed to spend time focusing on a careerand a family. After training 4-5 days per week for nearly20 years since my last contest, I still love the sport ofbodybuilding. but things have changed.

One thing that’s really changed is the content of mus-cle mags. Oh sure, they have more and more photos ofmightlily built behemoths every month. And they also

have more and more scantily clad women gracing thepages each month. It’s gotten to the point where I can’teven buy them and leave them on my coffee table forconversation pieces because they’re borderline porno-graphic. Things have changed. Bikini babes don’t haveanything to do with the sport of bodybuilding. They’rein the mags to just increase sales.

Supplement magazines have taken the place of themuscle magazines. Look at any magazine these days.They all sold out to some huge company showing offdrug-induced physiques (as if they actually got that wayby taking powdered sugar with creatine in it). I said tomyself, “Enough is enough! If no one else is going tomake a quality magazine about the sport of bodybuild-ing, then I'll do it myself.” And I did.

Welcome to the first issue. I think you’re going to likewhat you see.

IAB is going to start out small, but we’re going to makea big impact on the world of bodybuilding. Look at itthis way: as your muscles grow bigger, so will this maga-zine. Let’s have fun growing together. I’m going to beputting things in IAB that got me motivated to trainwhen I was a teeenager. You’re going to see lots of fea-tures profiling hard-training amateur athletes. I knowour “Tomorrow’s Superstar” and “Other Rising Stars” aregoing to be sure-fire hits. There’s going to be readerinvolvement with contests and chances to win prizes.And best of all IAB is going to be free. Download a newissue every three months at not cost to you.

In 1981 I could proudly say, “I'm a bodybuilder.” Thatstatement sums up a lot of dedication, tenacity andperserverance. Some call it blood, sweat and tears. I’m abodybuilder says it all.■

always liked Superman. He also hasstated that he wanted to be fre a k ylooking like He-Man from theMasters of the Universe.

So is there something inside of usthat makes us prone to be a body-builder and begins to be unlockedt h rough hours of reading comics?Well, I’m not a psychologist and I’venever played one on a TV talk show,but I’ve got a theory that holds just asmuch water as a bodybuilder eating adozen hot dogs and a bag of Doritos.DORMANT SUPERHERO SYNDROME

DSS begins at a very young age.After the eyes have develeoped to dis-tinguish colors and shapes, thebrightly colored costumes of super-h e roes are extremely attractive.P r i m a ry colors are most often used inthe construction of a hero ’s crime-fighting ward robe. So this proves thatcolor can be attributed for the begin-ning stages of DSS.

The next trigger is during the peri-

od of when a child is about able towalk. He or she wants to emulate thepeople around them and wants tobe mobile like everyone else.When this occurs the next nat-ural progession is noticingthat some animals fly.When primary colors areshown to a toddler duringthis crucial period it triggers aflight or fight response. Sincethe toddler is unable to fly, thenatural tendency is to fight. Thisperiod is commonly called"the terrible twos."

At about age three thetoddler may still be inthe fight stage, buty e a rns subcon-sciously to fly. In100% of case stud-ies perf o rmed onthese subjects, the nexttrigger in the timeline onDSS will be the most damag-ing. That trigger would be they o u n g s t e r ’s first cape. Normally itwill be a primary color of red or blue,but it may also be black. (Parents bew a re: black capes will cause a desireto fight crime at night, which is mored a n g e rous than day-time crime fight-i n g . )

If the child likes to run around sohe can see his cape billowing behindhim, the disease is at the inflamma-t o ry stage and the child should bem o n i t o red for safety. Jumping off offlights of stairs or rooftops couldo c c u r.

During the ages of 10 to 11, thedisease may go into remission. It isnot unheard that the disease may berepressed and will not surface again.

During adolescence, seeing a probodybuilder in the pages of a musclemagazine will bring the disease outof remission. Once the connectionhas been made through cognitiverecognition and the reality that it ispossible to look like a superhero, thedisease may become full-blown.Combine the burning desire to looklike a superhero with a strong workethic and an appetite like a horseand you will have an individual inthe final stage of DSS. When thisstage occurs, the best thing that can

be done is to let it run its course. DSS is best treated with a high-pro-

tein diet of up to seven meals a day.Eating wholesome foods and avoid-ing simple sugars has shown postiveeffects. Plenty of rest has also beenproven to alleviate the trauma ofDSS.

I know the ins and outs of this dis-ease. Over my life I’ve learned tocope with it the best way I knowhow. You see, I have DSS too. Justlike Victor Martinez, Aaron Baker,Lee Priest and Rich Gaspari, but theyhave it worse than I do. Some peo-ple, like myself, have been able todeal with it better and haven’tbecome the lurking hulks that dwellwithin each of us. Some experts saythis has to do with genetics and theability to build muscle easier thanothers. They say it’s not a disease.Well, you can decide for yourself—now that you know the truth.

Oh, and by the way, gamma raysfit into this whole disease somehowtoo, but that’ll be the discussion ofanother article.■Lee Priest has become He-Man!

So youwant to be abodybuilder...Here’s a foundational program thatwill get you started building the typeof physique that’ll turn heads.

The first in a continuing series on beginning bodybuilding.

So you saw Conan the Barbarian forthe first time. Or maybe you saw thelocal bodybuilding hero at your gymhitting some check poses after hisherculean workout. Maybe it was aphoto on a box of supplements.Whatever the case may be, you havemade a decision. You want huge, rip-pling muscles. Congratulations! Youwant to be a bodybuilder. Nowwhat? How do you go about gettingthere? “I wanna get big!” you say.Well, wait no more. This article willget you started on a life-long adven-ture as a bodybuilder. The first thingyou want to focus on when becom-ing a bodybuilder is your body —your whole body. You’re not settingout to be an armbuilder or a chest-builder or a benchpresser for thatmatter. You have to look at your

body as a complete package.Nothing can be overlooked. You willdefinitely have your favorite body-parts to train and some bodypartswill indeed respond better than oth-ers, but in order to build that impres-sive physique, you need to traineverything from head to toe.

The routine I’m about to share isone to kickstart your body into someincredible growth. It works. I fol-lowed one very similar to this whenI was age 13. I made some impressivegains. I gained more than an inch onmy arms in a little more than amonth and I was gaining about twoto three pounds of bodyweight perweek the first month and a half.Sound good? Keep reading. You canachieve the same results.

B e f o re you start this endeavor,

weigh yourself and take measure-ments of your arms, chest, waist,thighs and calves. Write them downand date it. And put in a place whereyou'll never lose track of it. If you gethooked on bodybuilding, you'llcherish this little piece of paperwhen you’ve been at it for 20 years!

This program is a basic, total-body,t h re e - t i m e s - p e r-week weightliftingroutine. It can be done at any gym orat home if you have a weight benchand a barbell. (I started with this rou-tine in my basement.) Perform thee x e rcises on Monday, We d n e s d a yand Friday or on Tuesday, Thursdayand Saturd a y. The whole ro u t i n eshould take you less than an hour.

Now, before we go any further, youmay have read or heard of split rou-tines where you train only certain

body parts on one day and othersthe next. That’s for intermediate andadvanced training. This is to breakyou into the world of bodybuilding,make some quick gains and getaquainted with the exercises, bal-ance and your new muscle pumps.You have an entire lifetime to tryother routines. This is a foundation.Take your time and enjoy it. Back tothe routine.

( You’ll notice you don’t seedeomonstrations of each exerc i s eaccompanying this article. There areplenty of web sites and books that’llgive you a photo on how to do it.The routine is what is being stressedhere.)

Nope, we’re not starting with thebench press. We’ll start with thelargest muscle groups and work ourway through to the smaller muscleg roups. Your legs are the biggestmuscle group and will require themost energy so we'll do those first.Squats are king here. I've done thou-sands in my career. If you don't havea squat rack to hold the bar, you'llhave to use a weight that you canpress over your head and then let thebar rest across the back of yourshoulders. There ’s a little “sweetspot” that'll fit perfectly on. Don't let

rest on that bone that sticks out onthe back of your neck. Wear a t-shirtand wrap a towel around the bar forextra comfort. With your legs aboutshoulder width apart, squat down toa position where your thighs areroughly parallel with the floor. Dofour sets of 10 reps with the sameweight. (You'll be going light enoughwhen you start out so don't worryabout warmups sets.)

The next exercise is barbell rows.Bend over at the waist and keep yourback straight with a little arch. Pullthe weight up to your stomach andconcentrate on using the upper backmuscles—not your arms. Don'tround your back. Remember keep itslightly arched. This will help you tocontract the upper back muscles. Dofour set of ten reps.

Okay, now you can do the benchp ress. Start with a medium grip,which will be just a little wider thanshoulder width. Slowly lower theweight to your chest. Touch yourchest briefly and push the weightright back up. Use a nice smoothmotion and never bounce theweight off your chest. Do five sets ofeight reps.

The next body part to blast in thisroutine is shoulders. The best exer-cise for building cannon-ball-sizedeltoids is the overhead barbellpress. It’s also called the militarypress. Do them seated and lower thebar to the front just under the chin.Pressing the weight behind the neckcould give you shoulder joint painwhen you start going heavier. Dofour sets of 10 reps.

Next up is calves. Do four sets of15 reps of standing calf raises. Youcan do these on a machine or with abarbell on your shoulders. Don’tneglect your calves. Many guys havetrouble building them. Some of it islaziness because sore calves make ithard to walk. Do them anyway.

There are only two exercises left—barbell curls for your biceps andlying extensions for your triceps. Dotwo sets of 10 reps for each exercise.

That’s it. Stick with this routine foryour first couple of months and reapthe rewards. Good luck!■

SS p o rting a NASCAR tatoo on oneshoulder and a Superman logo on theo t h e r, Lee Priest, the world’s mostpopular bodybuilder will walk onstage in a few weeks and battle for them o s t - p restigious title in pro f e s s i o n a lbodybuilding. Lee is a two-time, for-mer Mr. Australia and his wife Cathywon the 1995 Wo m e n ’s Canadianchampionships. The couple haverecently taken up residence in theAntelope Valley and are training hardand are setting their sights to take onthe best in the world.

The soft-spoken Lee is curre n t l yp reparing for the coveted Mr.Olympia title—the same title Arn o l dS c h w a rzenegger garn e red a re c o rd -setting seven times. The contest willbe held in Las Vegas on October 17.The Mr. Olympia is the Superbowl tothe world bodybuilding. The re i g n i n gM r. Olympia, Ronnie Coleman, haswon the title the last four years andseems unstoppable. Coleman’s domi-nance of the Mr. Olympia can bec o m p a red to the World ChampionLos Angeles Lakers in basketball orthe dynasty of the Dallas Cowboys inthe 1990s. Although Priest won theSan Francisco Gran Prix Bodybuilding

Championships in March, placed sec-ond in the Ironman Championshipsand placed fourth in the Arn o l dS c h w a rzenegger Classic this year,L e e ’s goal is to make the top 10 andre-qualify for next year’s Mr.Olympia. It is predicted, however,that Priest will most likely make thetop six in the Mr. Olympia.

After the Mr. Olympia both Lee andCathy will be competing in theirrespective divisions in the GNC ProInvitational in New Orleans onNovember 7 and 8. The prize moneyfor the event will be more than$ 1 0 0 , 0 0 0 .

Lee Priest was originally inspired tobecome a bodybuilder by his grandfa-t h e r, who was a wrestler and intoweightlifting. Another inspirationwas He-Man from the Masters of theUniverse cartoon. He “liked the fre a k-iness” of the character’s muscles. Hewanted to look like He-Man. Oneglance at Priest confirms he hasreached his goal. He looks like amightily muscled superh e ro. EvenHollywood thinks so because Lee’sphysique was selected by IndustrialLight and Magic to be the model forthe computer-generated Incre d i b l eHulk in the new upcoming film.

Priest began training at age 13 andwon his first bodybuilding contestthe same year. He won the Mr.Australia twice—the first time at theage of 17. He turned professional atage 20 and moved to Ve n i c e ,C a l i f o rnia in 1993.

The Priests moved to Lancaster inSeptember of 2001. When asked whyhe moved to the Antelope Va l l e y, Leereplies in an accent that sounds likethe rapid-talking Crocodile Hunter,“ With all the dust and wind, it lookslike the Outback. I’m still looking fork a n g a roos in my back yard ! ”

S e r i o u s l y, the Priests enjoy the slowerpace of the Antelope Va l l e y. They saythe people are more friendly and gen-uine and, of course, the housing ism o re aff o rdable. The Priests have fourdogs and can now have a big backy a rd for them to run and play in. Theback yard was very small in Ve n i c e .

Lee and Cathy split their trainingbetween Powerhouse Gym inLancaster and their home-trainingf a c i l i t y, which has been supplied withplenty of state-of-the-art equipmentby PowerTech Equipment, who is oneof their sponsors. Lee’s training maytake up to six hours per day as he getsn e a rer to a contest. He’ll perf o rm two,two-hour weight-training sessions—one in the morning and one in thea f t e rnoon. Two additional one-hourc a rdio workouts are also fit into theschedule—one before breakfast andanother later on in the day.

The twelve weeks before a contest iscommonly re f e rred to as the pre c o n-test phase. During this phase Lee con-centrates on losing body fat whileretaining his extreme muscle massand improving muscular definitionand shape. This “ripped” condition isachieved with a re d u c e d - c a l o r i e ,h i g h - p rotein diet and extra card i owork to burn off every last ounce ofbody fat under the skin, which makesthe muscles extremely visible.

During the precontest dieting stage,Lee and Cathy eat only chicken, leansteak, rice, green vegetables and pro-tein shakes. “It sounds okay to mostpeople. One day isn’t too bad, butwhen you eat that every day for 12weeks, it gets a little old. The last

t h ree months—you’re pretty muchlike a robot. Train at this time. Eat atthis time. Get up at this time.”

Cathy was training with Lee for awhile but found it too difficult tokeep up with Lee’s intense training.T h e re was also a safety factor. “It was

a little hard spotting him. He’d havefour (45-pound) plates on each side ofthe bar. That got to be too much forme. I only weigh 130 pounds,” saidC a t h y. She now trains under the tute-lage of PJ Bowen. Bowen is the ownerof Max Muscle in Lancaster and hasm o re than 20 years of experiencetraining athletes. Lee and Cathy wererecently featured as her special guestsfor the re-grand opening of the MaxMuscle store. One of the door prizesPJ gave away was a Lee Priest bobble-head figure .

In one of Lee’s training videos thereis a short segment, which shows hisextensive collection of Superm a nmemorabilia. When asked if he stillcollects it, he replies with hisAustralian drawl, “Nah, for the lastcouple of years its been all NASCARs t u ff.” The reason for the newly-a c q u i red NASCAR collection isbecause, in addition to his pro f e s s i o n-al bodybuilding status, Lee has hiss h o rt-track NASCAR license, whichhe received through the drivingschool in Bakersfield.

Lee has done very well in his newNASCAR endeavor. He won theNevada Open last March—the samemonth he won the San FranciscoGran Prix BodybuildingChampionships. He’s now thinkingof getting into the American Tru c kseries and is currently looking for as p o n s o r. Look out Deion Sanders,t h e re ’s another two-sport athlete onthe rise!

When the couple are not pre p a r i n gfor a competition they relax there dieta little. Well, Lee tends to relax it a lit-tle more extensively than his wife.Cathy likes to nibble at her favoritet reat of M&M’s candy while Lee likesto hit every restaurant in sight. Beingf rom Australia it’s not a surprise Leelikes to dine at The Outback re s t a u-rant. But if you want really want agood chance at seeing the couple,your best bets are Lee’s two favoritehangouts—Krispy Kreme in Palmdaleand KFC on Avenue K in Lancaster.Lee jokes about wanting one of thoseTeam KFC hats the workers wear. “I’veplugged those guys so many times,they have to give me one.” Are youlistening KFC?■

Cathy and Lee Priest—pro bodybuilding’s hottest couple—are all smiles.

IIt was a rainy night in southernCalifornia. A buddy of mine and hisson were driving down together toPasadena. Our destination was theIronman Pro Invitational. Halfwaythere I realized I had forgotten mycamera because I was in a rush whenI left. No pictures this time. Waituntil next year.

Now I've seen dozens of amateurshows—even the Nationals in 1990,which was won by Alq Gurley, butthis would be my first pro show thatI had attended. It would be the firstpro show for all three of us actually.

Despite the rain, we were makinggood time. I had gotten directionsfrom a printout at my gym. Theyweren’t exactly correct so we had totravel a little further on the 210Freeway than we expected and thenlooped back to find the correct exit.We arrived at the Pasadena CivicCenter a few minutes before 7:00pm. We were right on time. We pur-chased three balcony tickets andfound our seats and waited eagerlyfor the show to start.

The show started with LonnieTeper introducing the Figure portionof the show. My apologies to anylady figure competitors, but this wasa yawner. Womens bodybuildingand fitness competitions are interest-

ing to watch, but these quarter-turncharades are very boring. Nothinghappens.

Well the first competitor to posefor the mens pro division was DavidHenry. He was in good shape andreally lean. David possessed nicelines and separation. His routine wasfilled with bouncy and jerky move-ments. It was sort of cool lookingwhen he started, but watching thatfor a couple minutes made me loseinterest. In my opinion, it needed tobe broken up with some smoothfluid movements.

I’m not going to critique eachc o m p e t i t o r ’s physique. Both mybuddy, Gary, and I thought the judg-ing was fair and was in line withwhat we had called. The top five wascorrect. Titus was in fifth. He was atad smooth and just didn’t have thecrisp muscle separations of the fourathletes in front of him. Haidar wasin fourth, but could have easilytaken third. It was very close.Newcomer Gustavo Bodell was thesurprise of the show and garnered aw e l l - d e s e rved, Olympia-qualifyingt h i rd. He was shredded and hadthese little muscles popping out inhis upper thighs, which no one elsehad.

Well, what can I say? The mighty

Lee Priest took second. At 199pounds he looked rugged, polishedand chiseled. He was definitley thecrowd favorite. Dexter "The Blade"was just a little sharper and hadcleaner lines and muscle shape. Itwas great to see Lee back in competi-tion despite the rumors of his sup-posed retirement.

Reflecting back on this show, Irealized the greatest diff e re n c ebetween this pro show and all theother amateur shows I’ve seen is—surprise—the size of the competitors.With the exceptions of CliftonTorres (Tell me again. How did hebecome a pro?) and Ken Jones all theathletes were huge. In most amateurshows you’ll have a bunch of reallyripped guys and a couple mass mon-gers. The thing that set the top fiveaside from the rest was their condi-tioning. They had plastic wrap forskin. Dialed in as it were. I guess Iwas surprised that among these prosonly the top four really had ittogether and knew what to do. I wasexpecting it to be more difficult tojudge than it was. Overall we had ablast and really enjoyed the show. Ihad been wanting to attend a proshow since 1981. I’m hooked. I can’twait for the Olympia in Las Vegasand next year’s Ironman.■

F i n a l l y, a snack thatisn’t some kind of proteinbar. Over the years I’veeaten a lot of those pro-tein bars. Some of themtaste good. Some ofthem do not. The low-carb bars have about aton of glycerin in themand. if you’re like me,your tummy does not likeglycerin. The after effectsaren’t always pleasant.

Many times when I'mcraving a snack, I wantchips, not a glycerin-laced protein bar that’s coated with some waxy choco-late substance. Then along comes Pro Chips fromMetRX. I tried a sample of Pro Chips at the CaliforniaChampionships last year. I was skeptical on my first bite,but they were surprisingly good.

For about six months I checked Vitamin Worlds,GNCs and any other health food stores and no one wasc a rrying them. I was bummed. Then in aboutNovember, my favorite Vitamin World had them in. Ibought bags and bags of them. (My son bought me afew boxes for my birthday!)

The texture is light and crisp. They’re a little on thedry side, but if you down them with a Diet Pepsi, youalmost feel like you're cheating. I’ve let many friendsand coworkers try them and so far, everyone has giventhem the thumbs-up approval.

Pro Chips come in two flavors, Nacho Cheese andBarbecue. They have a whopping 35-36 grams of pro-tein and only 8 grams of carbs. Give them a try. Therea welcome change from a protein bar. ★★★★

Here’s a tip that may change the look of your wholeposing routine. And it’s very, very simple. Tuck in yourthumbs any time you hit a bicep pose from the front orback. Go look in a mirror and try it. The clenched fistwithout the thumb jutting out makes a big difference inaesthetic lines and will make various poses in your wholeroutine look more polished. You’ll also get a better con-traction in your forearms to display them more effective-ly also. Never overlook the simplest of details whenchoreographing your posing routine. Good luck in yournext contest!

Better warmupsIf your suffer from aching shoulders every once in a

while, you know that warming them up is an absolutenecessity. Try this trick to help them warmup more fully.If you like to train in a tank top like a lot of bodybuildersdo, start with a sweatshirt on top. Do your normalstretching and light warmups with the sweatshirt on.When you’re up to your heavier working sets, remove thesweatshirt. Sometimes you may want to leave the sweat-shirt on through the first exercise. This will help raise yourbody temperature slightly and make your joints feel morelike moving.

WANT SIZE? LEARN TO COOK.If you want to put on muscle mass then you’re gonna have to eat a lot high-qual-

ity food. Yo u ' re going to have to eat at least six times a day. Each meal shouldcontain around 30-50 grams of protein and 25-100 grams of carbs. And let's

face it, the better your food tastes the more apt you are to eat as much as isre q u i red to pack on some serious muscle. Who knows better than you when itcomes to deciding what you like to eat? You know what seasonings you like thetaste of and you know how you like your food pre p a red. So if you don't know howto cook, there's no better time than right now! Grab your frying pan and let's gomake some eggs.

I've been making omelettes since I was in sixth grade. My mom taught me howto make them. She taught me a lot about cooking and let me crack my share ofeggs. (I remember my first egg ended up on the floor, but she gave me manym o re opportunities to crack a lot more eggs before I left the nest.) Mom taughtme the basics of omelette making but I’ve developed a few of my own techiquesof perfection, which are specifically designed to lower the fat and increase the pro-tein and flavor along with it.

H e re ’s what you'll need to get start e d :An eight-inch frying pan with a lid One small bowl One fork One spatula Four large or jumbo eggs A Tablespoon of milk.S a l t Pam cooking sprayOne Kraft 2% cheese slice One ounce of shredded cheddar cheese

Take your first egg and gently tap it on the edge of your kitchen counter. Tap itjust enough to slightly crack the shell. Hold the egg over the bowl and press boththumbs gently into the small cracked hole. It will start to split apart into halves.Now pour the contents of the half of the egg without the yellow yolk into thebowl. (1) Now pour the yolk into the empty half but leak the white into the bowl.Keep shifitng the yolk back and forth until all the white has made its way into thebowl. Now drop the yolk into the garbage disposal. Do the same pro c e d u re withtwo more eggs and then put the entire contents of the last egg into the bowl.

Take your fork and start to stir the eggs together. (2) Beat them with a slight cir-cular motion. When the eggs are thoroughly mixed, add a tablespoon of milk anda couple shakes of salt. The milk helps to make the eggs fluffier and they'll have alighter texture. Adding the salt now helps to flavor the eggs more thoroughly andhelps the texture to be firmer also. Beat the eggs until the milk is mixed in com-p l e t e l y.

Heat the frying pan for a couple minutes on the burner at medium heat. Tu rnthe heat to medium-low. Remove the pan and spray some Pam in the pan. (Don’tdo it while the pan's on the burn e r. You can start a fire that way!) Return the panto the burner and pour in the eggs. Swirl the eggs a bit in the pan so they even-ly fill the pan. Cover the eggs with the lid for about two minutes.

Now here ’s the fun part. Remove the lid and gently pull the outside of the eggsinto the middle with your spatula. (3) Do this all the way aroung the edges. Coverfor a minute and then pull the eggs again. At this point you can gently put thespatula under the eggs and quickly flip the entire egg mass from bottom to top.This technique will take some practice.

Unwrap the slice of cheese and place on top on one side of the eggs. (4) Sprinklesome cheddar cheese on top of that. Cover for about 45 seconds. Fold one-halfof the egg on top of the cheese side. Slide the omelette onto your plate and enjoy!

If you’re wanting cut the calories, add fat-free cheese and use only the eggwhites and discard all the yolks.■
