Supercool IPA employs open fermentation with our house blend of saison yeasts at cool temperatures, allowing the profile to only hint at its Belgian-esque roots. Draft Supercool drinks like a dry American IPA, with a complex and balanced

hop character spanning light tropical fruit, under-ripe apricot, diesel, and cedar, while the unique yeasts and processing lend pleasant floral notes.

Bottle conditioned tasting notes:

Bottle conditioned Supercool is an entirely different experience from the draft

version. It starts with a softer, drier nose of lemon and salty sea breeze, while the fruity aromas found otherwise are replaced with earthy hop farm notes more

appropriate to an old school saison. The flavor follows suit, where pale fruit esters and white pepper phenols that are only background notes in draft Supercool

become the dominant character.

Upright Brewing specializes in farmhouse inspired beers rooted in France and Belgium but made with a Pacific Northwest twist.

The name references the primary instrument of Charles Mingus, the great musician whose compositions defied categorization. At Upright the recipes and processes are decidedly unbound,

yielding brews that share Mingus’ spirit of exercising creativity & craft.

The brewery produces its year round beers using a blend of saison yeasts perfectly suited to our open fermentation vessels. They are available in both draft and bottle conditioned form.
