Serve for 10 persons

2 kg beef fillet100 ml white wine vinegar150 g finely chopped garlic5 bay leaves10 g oregano10 g ground cumin1 table spoon of brown sugar6–8 tablespoons ají panca paste salt according to taste1 tablespoon umami (70gr)freshly ground black pepper For the ají panca paste:

500 g dried ají panca50 ml olive oil100 ml water

How to:

Blanch the dried ají panca in boiling water for a few minutes. Repeat 2 or 3 times with fresh water depend the level of spicyness you want in the paste. (The spicyness will reduce with each blanching.) In a blender process the blanched ají, adding oil and just enough water to make a paste. Pass through a fine sieve to remove any skin or veins.

For the Beef:

Cut the meat into evenly sized pieces of around 2–6cm. Marinate for a minimum of 4 hours with the ají panca paste and the rest of the ingredients as above. Place the meat on the marinade. Grill on the barbecue or a la plancha, brush with the reserved marinade. Serve with boiled yellow potato mash, fresh cheese, black quinoa, aji panca juice

Salmon Ceviche Garnish with Black Onion seeds & Fresh Coriander (Fabcooking)

Serve for 2 persons

500 g salmon 1 red onion2 tbsp yellow chilli paste 2 red chillies100 g tinned sweet corn1 bunch corianderSea saltPepper9 limes, juiced1 tbsp garlic paste

How to:

Step 1: Prepare The Fish. Cut your fresh salmon into small cubes and place into a bowl. Season with a pinch of salt and pepper and mix. Next add the garlic paste and stir through. Now squeeze the juice of the 9 limes over the fish, working as quickly as possible. The lime will start cooking the fish.

Step 2: Make The Ceviche. Pour in the Peruvian chilli paste adding more or less depending on how spicy you would like your ceviche to be. Now add to the bowl the finely sliced red onion, the chopped chilli and finely chopped coriander. Give all the of the ingredients a good mix and then add the corn for extra colour and taste.

Step 3: Serve. Before you plate up your ceviche check to see if you need to add any extra salt or pepper. Once happy with the taste, plate up the ceviche.

Alfajores Serve for 4 persons

400 g plain flour340 g unsalted butter100 g icing sugar140 ml double cream40 g lightly salted butter170 g caster sugar

Step 2: Finish Off The Caramel. Once your caramel is smooth, remove the pan from the heat and pour the mixture into a bowl. Gradually add 110g unsalted butter, whisking each bit until it has dissolved before adding more. After all your butter has melted into the caramel put the bowl into the fridge for at least 30 minutes.

Step 3: Make Your Biscuit Dough. Mix together 230g unsalted butter, 400g plain four and 100g icing sugar in a bowl until it begins to form breadcrumbs. Turn the mixture onto a clean surface and knead for about 2 minutes to form dough. Using a rolling pin roll the dough out to a thickness of about 5mm. Take your cutter, using whatever shape you like, and cut out your biscuits until all the dough is used.

How to:

Step 1: Mix The Caramel Ingredients In A Pan. To begin making your caramel slowly melt your sugar in a pan over a low to medium heat. Do not be tempted to stir the sugar as this will cause crystals to develop. Instead rotate the pan to allow the sugar to melt evenly. If the sugar begins to burn remove the pan from the heat and continue to rotate. Once your sugar has melted add the lightly salted butter and allow this to melt too. Next add the double cream and immediately start whisking the

Step 4: Cook The Biscuits. Place the biscuit shapes onto a baking tray and place the tray into a preheated oven for 10-12 minutes. Once your biscuits are cooked remove them from the oven. Take your cutter and place it over each biscuits to ensure all your biscuits are the same shape. Transfer them onto a wire rack and leave to cool for 30 minutes.

Step 5: Serve. Once your biscuits are cool, remove the caramel from the fridge and spoon into a piping bag. Place a biscuit onto a plate and pipe on a thick layer of the caramel. It’s important your biscuits are cool or else the caramel will start melting. Place a second biscuit on top and again pipe a layer of caramel. Finish with a third biscuit on top. Now start on your second set of biscuits and continue the process until all your biscuits have been used. To finish off the alfajores sprinkle over some icing sugar and decorate with a few berries.

guidance and to attend a technical college, helping a young mother like

Maria towards a brighter future. Maria is seventeen, and lives in a home

for teenage mothers supported by LAFF. She has a son, Gabriel, who is

now one year and two months old. She goes to the local school, where her

favourite lessons are science, technology and environment. In her spare

time she likes to read and play with her little boy. Her life in the home is

a world away from her previous life, where sexual violence in her own

home resulted in her teenage pregnancy. Now she has plans for setting up

her own business, “When I’m older, I want to learn to cook and open my own restaurant”, says Maria.
