Directions
1) Inalargesautépan,heatuptheoilwiththeonionandgarlicandcookjustuntiltheonionshavesoftened,abouttwominutes.Addthechipotles,cumin,coriander,oregano,bellpepperandtempehandcookforaboutfiveminutes,oruntilthebellpepperhassoftenedandthetempehisslightlygoldenbrown.
2) Addtheblackbeans,corn,andtomatoesandcookforaboutfivemoreminutes,untilheatedthrough.Seasonwithsaltandpeppertotaste.
