1.1 INTRODUCTION TO THAI FOOD

What is Thai food?

Every country in the world has its own food profile. It reflects it’s culture, environment, ingenuity and value.

HISTORY OF THAI FOOD Until 1939,thailand was known as Siam. only southeast Asian country never colonized by the west.

helped Thailand to maintain its own especial cuisine. The Thai people migrated to their present homeland from

southern china about 2000 years ago. brought spicy cooking from their native Yunnan province and as

well as dietary staple rice. Other Chinese influence included the use of noodles, dumplings,

soy sauce and other soy products. Thais based their recipes on blending five basic flavor i.e. salty,

sweet, sour, bitter, and hot.

•From south asia came not only the Buddhist religion but also spicy seasonings such as cumin, cardamom, and coriander, as well as curry dishes.

RECIPE

tom• 3 kaffir lime leaves• 1lemon grass• 1-2 lime

yum •3 chili peppers•5 spring cilantro •2 table spoon fish sauce

goong •1 cup shrimp•4 cup water•5 mushroom

boil water over high heat in a saucepan.

Add the lemon grass, galangal, kaffir lime leaf, fish sauce and

tamarind paste .Add the shrimp, bring to a boil &

cook 3 mins. Add the onion, nam prik paoand

straw mushrooms. Boil for another 7 minutes until the shrimp is cooked through. Add the chile peppers and tomatoes. Turn off the heat

Add the lime juice. adding fish sauce to taste.

Garnish with cilatantro, roasted whole chili peppers and a splash

of coconut mik if desired and serve hot.

is grilled on skewers with water chestnuts, green and red bell pepper slices, and chunks of sweet onion.

INGREDIENTS 1/4 cup crunchy peanut butter 1/4 cup finely chopped green onions 2 tablespoons soy sauce and lemon juice 1 1/2 tablespoons brown sugar 2 teaspoons minced garlic,1 teaspoon ground coriander 1/8 teaspoon ground cayenne pepper 1 pound pork tenderloin, cubed (can be other ingredient also) 1 (8 ounce) can water chestnuts, drained 1 medium green bell pepper, medium red bell pepper, cut into 2 inch pieces 1 small sweet onion, chopped skewers

DIRECTIONS

Thread marinated pork, water chestnuts, green bell pepper, red bell pepper, and sweet onion alternately onto skewers.

Transfer remaining marinade to a small saucepan, bring to a boil, and cook for several minutes.

Lightly oil grate. Cook skewers for 10 minutes, or to desired doneness. Turn skewers while grilling to cook evenly, and brush with boiled marinade during last few minutes.
