BRANDY CRUSTACreated by Joseph Santini, an Italian who owned Jewel Of The South Saloon in New Orleans back in the 1850s. Brandy, maraschino cherry and orange liqueurs, splashed with lemon and Angostura bitters, garnished with a rim of our own pomegranate sugar and a lemon peel.

MINT JULEPThe word Julep derives from the Arabic word 'Julab' meaning rosewater. The drink travelled from Persia to Europe in the 18th century, where the rosewater then changed into mint and the spirit used was Cognac. Arriving in the US, where the Cognac changed into Whiskey, it became a historical drink of tradition for the famous Kentucky Derby. It is simply crushed mint mixed with our homemade mint syrup and rye whiskey, served in our own Brass Cup. BOURBON MINT JULEP

MANHATTANFamous in the late 1800s, some claimed it to be created at the Manhattan Club New York, while others believe it was already being created by bartenders, and named it as part of one of the five New York borough's cocktails. Some say full credit goes to a bartender by the name of Black from the 1860s. A mixture of rye whiskey, sweet vermouth and Angostura bitters, garnished with our own twist of black cherry. OLD-FASHIONEDIt is probably the oldest Whiskey Cocktail since the word 'Cocktail' first appeared in the American Dictionary in 1806, which is defined as a drink composed of a Spirit of any kind, Sugar, Water and Bitters.

IRISH COFFEECreated in 1942 at a restaurant in the old Foynes airport in Ireland, by a chef named Joe Sheridan, for the cold and tired passengers waiting for the storm to pass. One of the passengers asked Joe if it was a Brazillian Coffee, and to this he replied, "No, it's an Irish Coffee."

It is a mixture of Irish whiskey, black coffee and sugar, layered with cream.

NEGRONIInvented at Caffè Casoni in Florence, Italy, in 1919. It is a twist by Count Camillo Negroni who asked the bartender to add Gin to an older Cocktail called Americano. A combination of dry gin, Campari bitters, sweet vermouth and a twist of orange.

SINGAPORE SLINGInvented by a Bartender called Ngiam Tong Boon in Raffles Hotel Singapore in 1915. Unfortunately the original recipe was lost and forgotten, and today's recipe used by the hotel was a result of recreating the original recipe based on the memories of former bartenders and some written notes that they were able to discover. It is a mixture of dry gin, cherry liqueur, Bénédictine herbs liqueur,pomegranate syrup, Angostura bitters, lime and pineapple juice, topped with soda water.

MOJITOIt may be linked to a 16th century Pirate Drink called "El Draque" (The Dragon) made by the English sailor Sir Francis Drake (known for terrorizing the Caribbean), who used mint, lime and sugar to mask the rough flavour of the local rum. But it could simply be a drink made by the African Slaves working in the sugar cane plantation, and the name could stem from the Spanish word Mojadito, which means "a little wet".Crushed mint, lime and our own sugar cane reduction mixed with Cuban rum, topped with soda water and garnished with a sugar cane stick.

DAIQUIRIInvented in Cuba (1902), by Jenning Cox, an American Engineer who ran out of gin to serve for his guests, so instead he used local rum and masked the rough flavour by adding lime and sugar. This invention is probably more about the name rather than the ingredients used. Squeezed limes and our own sugar cane reduction mixed with Cuban rum, served over crushed ice and garnished with a sugar cane stick. We also serve the famous shaken and frozen versions. PLANTER'S PUNCHA 19th century punch with its first recipe for single-serving drinks published in the Washington Post in 1906, wrote …"Take two of sour (lime let it be), to one and a half of sweet - Of Old Jamaica pour three strong, and add four parts of weak."Jamaican dark rum, lime and orange juice, our own sugar cane reduction and pomegranate syrup, topped with soda water and served with cuts of citrus fruit.

MAI TAI (Trader Vic Original)In 1944, Victor 'Trader Vic' Bergeron created this drink in his bar for his Haitian friends who took one sip and cried "Maita'i Roa Ae" ("out of this world, the best"), hence the name. Aged Jamaican rum, orange liqueur, lime, rock candy and orgeat (almond-rose) syrups, shaken and served over crushed ice.

MAI TAI (Tiki Style)The popularity of the rum cocktail called Mai Tai in the 40s, spurred the demand of this drink, but because of its guarded secret recipe, many bartenders started creating many different versions. One of the most popular is the tropical style (the Tiki style).Light and dark rums, orange liqueur, lime and sugar, topped with pineapple andorange juices, served in a Tiki glass.

ZOMBIEDon The Beachcomber invented this drink (mid 1930s) to cure his customer's hangover before a business trip. The customer came back later and said that he felt like the living-dead, and that "It made a Zombie out of me", hence the name. Dark, gold and overproof rums, homemade 'Falernum' liqueur (spiced Infused rum sweetened with almond syrup), lime and grapefruit juice, pomegranate syrup, Angostura bitters and pastis, served in a tiki mug with flaming rum.

PIÑA COLADAThe name itself means 'Strained Pineapple'. It may have been invented in the early 19th century by a Pirate named Cofresí but it gained its popularity in the 1960s thanks to the bartenders from Caribe Hilton in San Juan, Puerto Rico, and then became the National Drink of Puerto Rico. A combination of Puerto Rican light rum, pineapple juice and coconut milk,garnished with a slice of dried pineapple.

MOSCOW MULEInvented in L.A. around 1941 by a Smirnoff distributor, who tried to popularise his product, and the Cock N' Bull Bar owner, who tried to get rid his over stocked ginger beer, coupled with his girlfriend who owned a copper products company. A mixture of premium Smirnoff vodka, lime and homemade ginger beer, served in a copper mug.

BLOODY MARYThe simple version of vodka, lemon and tomato juice believed to be invented by George Jessel in Palm Beach, 1927 and named after his friend, Mary Brown Warburton, who tried it and spilled some of the bloody drink on her white gown. But it is Fernand Petiot who spiced the drink in the 30s in New York that made this classic what it is today. Crushed flame-grilled tomato wedge with salt, black pepper and a clove of garlic, mixed with lemon, vodka, Worcestershire and tabasco sauces, topped with tomato juice.

LYCHEE MARTINIA modern classic that gained its popularity in South East Asia in the early 2000s, the era where many cocktails served in a martini glass were called 'Something' Martini, and its' recipe varies.Our version is lychee liqueur and lychee brine shaken with vodka and a splash of squeezed lime.

COSMOPOLITANFormally invented in 1987 by a bartender named Toby Cecchini in Odeon Manhattan but definitely popularised in the 90s by the Ladies in the TV series SEX AND THE CITY. Citrus vodka shaken with orange liqueur, lime and cranberry juice.

BLACK RUSSIANCreated in 1949 by a bartender named Gustav Tops in Metropole Hotel, Brussels, this black drink was made for Perle Meste, the American Ambassador to Luxembourg, probably to symbolise the start of the Cold War.

A mixture of vodka and Kahlua coffee liqueur. WHITE RUSSIAN (WITH ADDED CREAM)

ESPRESSO MARTINIIt may have been started by Dick Bradsel, a bartender in London, circa 1984, but many bartenders have claimed their own recipe since.

Our recipe is vanilla vodka, sweetened with coffee & butterscotch liqueurs, shaken with espresso.

CHOCOLATE MARTINILegend has it that the first Chocolate Martini was invented by 2 famous actors, Rock Hudson and Elizabeth Taylor back in 1955, but many versions of it have been made by bartenders since. Our version is the lightest and the simplest of vodka and a clear chocolate liqueur, covered with grated chocolate.

MARGARITAPossibly the most disputed Cocktail regarding 'Who Invented It', this Cocktail was already being enjoyed in the middle of the 1930s, not long after Prohibition.

Reposado tequila, orange liqueur, lime and rock candy syrup, served with a rim ofhomemade lime green salt. We also serve it on the rocks or frozen. FRUIT MARGARITA (ASK YOUR SERVER FOR CHOICES OF FRUITS)

TEQUILA SUNRISE (1930s)The first Tequila Sunrise was born in the 30s, invented by a bartender called Gene Sulit in the Arizona Biltmore Hotel. The same name but different ingredients to the one invented 40 years later, that is more familiar to most of us today.Reposado tequila, crème de cassis and lime, topped with soda water.

TEQUILA SUNRISE (1970s)Created in the early 1970s by a couple of bartenders named Bobby Lazoff and Billy Rice at The Trident, in California, and further popularised by Mick Jagger during his 1972 American tour. Reposado tequila, orange juice and a splash of pomegranate syrup.

PALOMAIt is believed that the drink was invented in the oldest bar called La Capilla in Jalisco, Mexico, by the bar owner named Don Javier Delgado Corona, and this drink became more popular than the Margarita in Mexico. A mixture of reposado tequila, grapefruit juice, lime and rock candy syrup, topped with soda water and garnished with a rim of our own chilli lime salt.

LONG ISLAND ICED TEAIt may have started by a man named Old Man Bishop in the 1920s Prohibition Era, in a community called Long Island, in Kingsport, Tennessee. He then passed the recipe to his son, Ransom Bishop, who then re-touched the drink in the 1940s. But it is either Robert Butt or Chris Bendicksen from Oak Beach Inn, in the 1970s, that twisted the recipe to what we know today.Vodka, dry gin, reposado tequila and light rum, mixed with orange liqueur and lemon, topped with cola.

CAIPIRINHAThis drink was already enjoyed over 3 centuries ago by the slaves working in the sugar cane plantations of Brazil. It is believed that the word means a 'Countryside Drink' and now has become Brazil's National Drink.Crushed lime and our own sugar cane reduction, topped with Cachaça (Brazilian sugar cane spirit) and served over crushed ice. GOLDEN CAIPIRINHA (WITH AGED CACHAÇA)

PIMM'S CUPJames Pimm created Pimm's No.1 (a gin-based herb liqueur) in the 1840s and it became the base of the Wimbledon Tennis Tournament punch, and later became New Orleans' favourite summer drink in the 1940s.Pimm's No.1 mixed with homemade lemonade and ginger beer, served with cuts ofcitrus fruits, mint and cucumber.

JÄGER-BOMBJägermeister herb liqueur was invented by Curt Mast in 1934 and became the famous 21st century 'party drink' 75 years later.Jägermeister Herbal Liqueur dropped in a glass filled with red bull.

B-52One story tells that it was invented in the 70s by a Bartender named Peter Fitch in Banff, Alberta, who liked to name his own concontions after his favourite bands, songs or albums. The B-52's is an American New Wave Band, formed in 1976, and that name itself was taken from a US Bomber Plane called B-52. Kahlua coffee liqueur, Baileys Irish cream and Grand Marnier orange liqueur.

SANGRIAA Spanish and Portugese variation from a Wine Punch that has been around for hundred of years. It is believed the Red Wine used in this drink inspired its name - Sangria - which means 'Blood'.Dry red wine fortified with brandy and orange liqueur mixed with squeezes oforange and lemon, served with cuts of fruit. KIRA French specialty that was called Blanc-Cassis in the 19th century and changed its name post-1945 to 'Kir', to honor a War Hero named Felix Kir.Dry white wine with a splash of crème de cassis (blackcurrant liqueur) KIR ROYALE (REPLACE THE WHITE WINE TO SPARKLING WINE)

CHAMPAGNE COCKTAILFirst mention of the Champagne Cocktail appears in an 1855 journal written by Robert Tomes who enjoyed this drink in the morning before breakfast.Bitters and sugar, topped with sparkling wine. Served in either a flute glass or,like the original, in a rock glass with ice.

FRENCH 75The drink goes as far back as 1867, but it is believed that Harry MacElhone, owner of Harry's American Bar in Paris, who popularised it in his bar, and named it after a 75mm Howitzer field gun used by the French and the Americans in World War 1.Dry gin shaken with lemon and rock candy syrup, strained into a flute glass andtopped with sparkling wine.

BOOTLEG NO.7Bootleg is a term for a booze smuggler who hides a hip flask bottle in their boots or pocket, and the number is lucky number 7, so we won't get caught serving it to you.Canadian whisky, Southern Comfort, Galliano and Aperol bitters mixed with ourhomemade lemonade and ginger beer, served in a hip flask bottle with a bucket of ice.

THE DIRTY THIRTIESInspired by the severe dust storm, also known as The Dust Bowl, that hit the US in the 30s, people then might have nothing to do other than certain "dirty" things, including dirty drinking.A mixture of Bourbon whiskey, Drambuie, tawny Port, orange bitters and tamarind,topped with our own spiced infused tea and served in a copper mug.

SPIRIT OF THE FLYING DUTCHMANA legendary ghost ship from the 17th century, doomed to never make port and sail the ocean forever. It is still out there today and you may even spot it while having a few of its spirits we've summoned.A combination of dry gin and the Dutch jonge jenever mixed with elderflower liqueur,grapefruit juice and our homemade sparkling coconut.

THE BARBER DAIQUIRIJenning Cox may have invented the name Daiquiri in 1902, but not the ingredients. So we will keep the name but twist the elements of the rum, the sweet and the sour of the ingredients to make it ours.Spiced rum shaken with homemade palm sugar syrup and tamarind, served in our own Brass Cup.

FALERNUM MOJITOFalernum is an 18th century recipe from Barbados. When a lady was asked how she made it, she then answered in the dialect, "Haf a learn um" (have to learn how it's done), hence the name. It is a spiced infused rum sweetened with almond syrup and lime juice. So let's try it in a Mojito!Crushed mint, lime, our own sugar cane reduction mixed with the falernum liqueurand topped with soda water.

PASIÓN PICADOROther than a name of a classic cocktail, a Picador in the old days was more popular than a Matador, as their job was to weaken the bull by jabbing it with a lance, which proved to be quite a dangerous job. To honour their bravery, we spiced the drink up...dare to try?Reposado tequila shaken with a red chilli pepper, lime juice, rock candy syrup andpassionfruit, served with a rim of our own chilli lime salt.

FROM DUSK TIL DAWNFrom sunset to sunrise, from the all nighter to vampires (well, if you watch the movie), this drink was named for its beautiful red and yellow to orange colour gradation.A combination of vodka, maraschino cherry liqueur and cranberry juice, layered withhomemade passionfruit foam.

VANILLA WHITE CHOCOLATINIInspired by the 2 celebrities, Rock Hudson and Elizabeth Taylor, who created the famous Chocolate Martini, we simply created the white chocolate version. Is it tastier? You be the judge.Vanilla vodka shaken with white crème de cacao and white chocolate syrup, covered with grated white chocolate.

MACCHIATO MARTINIIf the world has the Espresso Martini, then why not the Macchiato Martini? We even go further than just adding the milk; it is our own Baileys fortified cream foam that makes it special.Vanilla vodka, coffee & butterscotch liqueur, shaken with espresso and layered withour own Baileys fortified cream foam.
