Please note : All Taittinger wines are suitable for vegans (v). Taittinger remains one of the few Champagne Houses to remain owned and actively managed by the family named on the label. Its origins date back to 1734 when the original house was founded by Jacques Fourneaux. The Taittinger link was established in 1931 when Pierre Taittinger,

the founder of today's company, acquired the House. The hallmark of their Champagnes is the high percentage of Chardonnay used in the winemaking, which can be anything from 40% in the Brut Réserve Non-Vintage to 100% in the prestigious Comtes de Champagne

On the palate it is soft, fresh and mellow with delicate floral and ripe fruit flavours. 3 Taittinger Comtes de Champagne Blanc de Blancs Brut 2006 (v) £155.00 Very pale yellow colour. Fine, light bubbles, rise steadily to form a delicate ring of foam. The nose initially presents a fresh, refined tangerine-like fruitiness. It then develops more mature notes of ripe fruit, raisin pastries and candied fruit. On the palate, the attack is both smooth and very lively.

There are 49 million bubbles in a 750ml bottle of Champagne, give or take a few, as calculated by scientist Bill Lembeck, based on 5.5 atmospheres of pressure, when stored at 20 degrees Celsius. A Champagne cork leaves the bottle at a velocity of approximately 40 mph, but can pop out at as fast as 100 mph (especially after a Formula 1 race). The longest Champagne cork flight recorded in the world is 177 feet, 9 inches, set by American Heinrich Medicus in New York in 1988. Marilyn Monroe is said to have once taken a bath in Champagne. According to her biographer, it took 350 bottles to fill the tub. Try this at home sometime, or by special request with the management of the Coniston!

The envelope slides and stretches, and the wine becomes more complex and edgy, silkier than it is creamy. English bottle fermented sparkling wine has now established itself as a serious wine category and direct pretender to the Champagne throne, so much so that some Champagne houses, most notably Taittinger, are investing directly in English vineyards. With similarities in climate, and especially the chalky soils, it is no surprise that by planting classical Champagne grapes, blending and producing to the “Champagne method”, these wines are starting to challenge Champagne at the Non Vintage level. Nyetimber was First recorded in the Dooms Day Book in 1086, with the first vines planted almost 900 years later. The modern vineyard celebrated its 25th “vinous” anniversary in 2015. Based in the chalky South Downs in Hampshire and West Sussex, Nyetimber is now broadly regarded as England’s finest sparkling wine. In the last five years or so, these wines have emerged from an already high base to a new level of refinement and quality.

We are delighted to be able to offer a collection of older, mature vintages, which are ideal to mark a special occasion or anniversary. These include classic examples from Bordeaux, including from great years such as 1989, 1990 and 1996 – all now perfectly mature.

Burgundy and the Rhône weigh in with fine examples from 1996 and 2006 – and a superb Châteauneuf-du-Pape from 2004. Please also note the classic, oaky Gran Reserva Tondonia Rioja from 1980!

And finally if you like Chateau Musar we have some rare bottles from the great 1999 vintage – considered by the estate to sit alongside wines such as the revered 1959 as one of their finest ever releases.

These wines are stored at cellar temperature and in most cases we strongly recommend these wines to be decanted. Please advise us a

Burgundy (b = biodynamic v = Vegan)

Another classic region where Producer/Domaine names are as important as the communes - or Villages - they originate from. Again we have striven to find a fine mix of classic producers and famous communes. The whites - spiritual home to Chardonnay, we have

a selection from the steely, racy Chablis style in the north to the richer, more buttery and oaky whites from the Côte de Beaune and Mâconnais areas further south. The reds - this time home to the great Pinot Noir - include benchmark examples from the great

Côte de Beaune and Nuits regions, which truly reflect this areas reputation for both power and finesse. Our selection includes some top Domaines, a number of whom are specialist in their villages, such as Billaud-Simon, Alain Chavy, Patrick Javillier,

Follin-Arbelet and Henri Gouges.

Beaujolais

So often the bridesmaid in the Burgundy district, Beaujolais remains a great source for lighter bodied, not too dry red wines made from the local Gamay grape. Amongst the rolling hills of this picturesque region are star villages - or “Crus” - which are the epitome of this

fruity and appealing style. Those of note include Fleurie, Juliénas, Régnié and Moulin-a-Vent. And yes your eyes don’t deceive you there is also a little white Beaujolais made - from the Chardonnay grape as in the rest of the Burgundy region

While attending the annual Bordeaux dinner in April 1989 at the Four Seasons restaurant, New York City, Manhattan wine merchant, William Sokolin, broke a bottle of 1787 Château Margaux. Having received this celebrated Bordeaux wine on consignment from a British wine firm, he had wildly valued it at more than a half million dollars. The bottle, engraved with the initials Th.J., was discovered behind a Paris cellar wall in 1985, and had reportedly once been the property of Thomas Jefferson, writer of the Declaration of Independence and who found Bordeaux ‘a happiness worthy of pursuit’.

For the last 62 years, in the French town of Châteauneuf-du-Pape, a law has prohibited the “flying over, landing, or taking off, of flying saucers” in the area. The 1954 law was established after a producer in the region said he had seen two figures that looked like “deep sea divers” emerging rom a “cigar-shaped” space ship, which landed in the vineyard!

Rhône (o = organic)

Famous region located along the mighty Rhône river and split into two distinct areas, North and South, with the south being significantly larger and more diverse. Most famous for its red wines, there are also a number of high class whites (most famously Condrieu from the Viognier grape) and rosé styles made. The north is spiritual home to Syrah (aka Shiraz in Australia), whilst in the south the black grape Grenache dominates - most famously in the revered region of Châteauneuf-du-Pape, which epitomises the hedonistic, spicy style of this

grape. In the north star areas include Côte-Rôtie and (Crozes)Hermitage, with silky, refined red styles.

Miraval is not just a renowned producer of delicate Provence Rosé wines, it is also a legendary recording studio in Southern France. The studio has hosted many famous musicians including AC/DC, The Cure, Shirley Bassey, Wham, and most notably Pink Floyd, who recorded part of their album ‘The Wall’ there. After declining sales plagued the record industry, Brad Pitt and Angelina Jolie took the opportunity of first renting it in 2008 before buying it in 2009 and marrying there in 2014.

South of France

It is often debated where the Southern Rhône ends and the “South of France” wine region begins! No surprise then that the wines of the south are stylistic extensions of Rhône, but with a bit more warmth and body. This is maybe not surprising when you

consider that this is the hottest and driest part of France. This area is also home to a wide range of (often pale) rosés. An anomaly to this is the now very fashionable crisp white Picpoul de Pinet, made from Picpoul grapes grown next to

the sea universally enjoyed with sea food in the region.

Loire (b = biodynamic v = vegan)

France’s longest river and cool climate growing area which makes every type of wine imaginable - dominated by racy, elegant whites but also lighter bodied reds, refined dessert wines and even some sparkling. Split into four distinct areas this is home

Alsace

One of France’s greatest wine regions, but not especially well understood. Located in the sheltered eastern side the sunny, dry climate produces wines of particularly individual style and quality. Dominated by white varietals (and very fruity and aromatic examples these are)

- the authorities helpfully allow producers to label them as such - so you know exactly what you are getting. Star varieties and styles include Riesling, and the spicy Pinot Gris and Gewurztraminer. Excellent with food these wines really are worth discovering.

Italy (o = organic v = vegan)

With the exception of Portugal, no other country boasts such a diverse and high quality range of indigenous grapes and style as Italy. Whilst Italy has rightly long been regarded for its red wines, it is its white wines which have progressed most markedly in the last twenty years. Today “Pinot Grigio” has become a standard pourer on nearly every list, but there are also high quality

individual styles (and grapes) from areas such as Gavi (Cortese), Soave (Garganega) and from the South - Falanghina. Reds remain world class, bench mark styles - led by mighty examples such as Barolo (Nebbiolo) and Chianti (Sangiovese).

The South again has made great strides with its fine, “home grown” grapes (such as Nero d’Avola), whilst classic dried grape (Amarone/Ripasso) reds from Valpolicella are standard bearers of their type.

Iberia – Portugal and Spain

Iberia remains one of the oldest and most respected of wine producing areas, where tradition was that the producer undertook all the aging of the wines on behalf of the consumer and released them when they considered they were ready for drinking. But that does not

mean styles have failed to adapt and be finessed to entice new drinkers - eg the unoaked young “Joven” red Riojas. Although, like Italy, a red dominated continent their white wines have again come on dramatically in the last ten years or so - with highlights such as cool

climate (north westerly) modern, zesty styles from both Rías Baixas (Spain) and Vinho Verde (Portugal). Whilst red Rioja and Ribera del Duero remain standard bearers (in Spain) please do try the exciting wines emerging from the south of Portugal and Douro - there is

much more to Portugal these days than (the still rightly) revered fortified Port wine. Although screw cap closures are becoming more widespread, there are still 2.2 million hectares of cork forest worldwide

- the vast majority of these are found in Portugal and Spain. Cork oaks are harvested every nine years, once they reach maturity. Interestingly, corks are the most eco-friendly method as the bark on the cork tree grows back.

The custom of bumping glasses with a “cheers” greeting came from old Rome where they used this method to make sure no one is trying to poison the other (bumping glasses makes the drink spill from one cup to the other). This tradition started even earlier in ancient Greece – where the host was to drink the first cup of wine to show his guests he does not intend to poison them.

England

Toppesfield Vineyard is a small boutique vineyard in East Anglia run by husband and wife team, Peter and Jane Moore. Their focus is on growing just two grape varieties; Bacchus as the main white grape variety as it is a ‘cool climate’ grape and Pinot Noir Fruhburgunder, an early ripening red grape, as it makes excellent rosé wine. Both have proven to be very successful in East Anglia’s dry and sunny climate. The high quality of their grapes has resulted in them winning a series of awards, for example, Wine of the Year in East Anglia for their 2015 and 2017 Bacchus as well as one of four gold awards in England for their 2016 Bacchus in the global Sommelier Wine Awards

Competition. Toppesfield Pinot Rosé has won a number of silver and bronze awards including Decanter, IEWA, UKVA. Bacchus is a crisp, dry, fruity white wine with flavours of gooseberry, nettle and elderflower. It has a refreshing finish and excellent length. The Pinot Rosé is a light, dry wine with hints of English strawberries and citrus. It is a gentle pink colour, with a refreshing finish and very

‘drinkable’ on a warm summers day – with or without food and is significantly drier than many other rosés on the market.

Greece

Greece is one of the oldest wine producing regions in the world, with evidence showing vineyards were around some 6,500 year ago, putting Greece among the first wine producing territories in Europe. With a long and venerable wine history, in ancient times Greek wine

was a high commodity. It was traded all over the Mediterranean, with an especially high prestige in Italy under the Roman Empire. Move forward to our time, Greece is a large generic area which is already beginning to shape its place in the modern wine world and will

only get better as increased investment and expertise follows through from grape to glass.

Africa and the Middle East – South Africa and Lebanon (o = organic v = vegan)

These two disparate areas have one very important aspect in common - they have a wine making tradition which goes back centuries. Today, after significant periods of isolation and inner turmoil, they have emerged as exciting “finds” for many drinkers.

South Africa has long held a reputation for its favourite white grape and wine, Chenin Blanc, but is now making headway with other international white varietals, most notably from the Rhône. Top red styles are mainly Bordeaux based blends, but

its home grown Pinotage grape variety remains the most individual, and a true “marmite” wine! The revitalisation of Lebanon is largely down to one famous family and estate, the Hochars and Chateau Musar. With a judicious blend

of Bordeaux and Rhône grapes they have created a wine of quite individual style and quality, supported by long cellar aging prior to release.

Australasia – Australia and New Zealand (o = organic v = vegan)

Arguably nowhere else in the “New World” has the imagination been captured more than in Australia and New Zealand. Australia remains, by country, the most popular source of wines for the UK drinker and New Zealand has created a new world

standard with its Marlborough Sauvignon Blancs. ‘Aussie’ Shiraz (aka Syrah from the Rhône Valley in France) is a new age classic with its rich and textural, fruity and spicy style, but they have also embraced the great white grape variety Riesling - most notably

from the Clare Valley and in the dry style - now another recognised classic. New Zealand these days is more than just Sauvignon Blanc, as renowned as this style is. Today the country is building a new appreciation for, in particular, its Pinot Noir – with its relatively lighter, more delicate and juicy fruit character.

The Americas (o = organic)

When we talk of wine in the United States we nearly always refer to California, almost like a default button! Here an almost obsessional attention to detail for top quality wines has produced a series of amazing estates and examples which are as good as any in the

New World. Some are crazily priced (which we avoid!) but we do include some benchmark examples which exemplify both International varieties and also fine wines, at differing levels, from their classic home grown grape variety, Zinfandel.

Present day South America is a cauldron of development of many high quality and individual wines, often at very fair prices and with high levels of consistency. Malbec has emerged as star red grape and style from Argentina,

whilst Chile has shown its paces with grassy Sauvignons and juicy Merlots.

It is broadly accepted in the wine trade that the best size of bottle for storing and aging wine is the Magnum or 150cl format. This is because the amount of wine in potential contact with oxygen is proportionately so much smaller than in a 75cl bottle. Also the sheer volume of wine, imprisoned in its glass container, is a perfect size for a much slower and more consistent aging process than in the 75cl size.

Magnums not only look imperial but they are the best way to store, as well as improve the wine if you wish to keep and mature to its optimum condition. And, frankly, if you are having a party and likely to open two bottles anyway,

These hedonistic wines are not only perfect with desserts (and in many cases cheese) but make for an indulgent “course” in their own right. Above all they are about sharing and a half bottle goes a long way with a group of people. Bins 550 - 552 are the lightest, least

sweet styles; Bins 555 & 556 are nicely poised, sweet but not too rich; Bins 560 - 562 are the richest and sweetest. And please don’t forget the ports - Tawnys are the sweetest and most delicate and there is a lovely vintage port from
