To: Food and Beverage Operators in Thailand,

This is to inform you of a new initiative of the Thai – Italian Chamber of Commerce (TICC) in the Food and Beverage area and to

request the help we need from you to make it a success. The TICC has created a database for genuine Italian food products that

have been certified with the DOP or IGP marks by the European Union and are available in Thailand. In addition to the product

name, the database indicates the brand name and the local distributor that can be contacted to purchase it. For reference,

brief descriptions of the DOP and IGP marks are given in Attachment 1.

The initial database content is provided in Attachment 2. It should be noted that this content is far from being a complete

indication of all DOP and IGP certified products available in Thailand. It has to be expanded by adding the many other certified

products that you, as Food and Beverage operators, have available for sale or know to be available from other local sources.

The database will then be kept up to date by TICC as more certified products become available.

We believe this initiative will be very helpful to Food and Beverage operators, both on the supplier side and the consumer side.

The initiative has been initiated by the TICC Food and Beverage Committee within the framework of the Ospitalità Italiana

program. It reflects the suggestions and needs of TICC member companies involved in Ospitalità Italiana. Specifically, it

addresses the need for an easy-to-use tool to put in touch genuine Italian food product buyers, such as restaurants, with local

distributors that offer certified genuine products.

The number of Italian restaurants in Thailand has been growing very rapidly, particularly in Bangkok, where they number over

350. The need to differentiate between genuine Italian restaurants and “just-Italian-inspired” restaurants has grown

accordingly. This has already been addressed by the TICC with the Ospitalità Italiana project that recognizes the Italian

restaurants that use real Italian recipes, cooking methods and ingredients.

In addition, interest in genuine Italian food ingredients for home cooking --previously limited to some expatriates and a few

upper-class Thais-- has grown so much that “Italian” food ingredients can be found in most supermarkets and some

convenience stores. Some of these “Italian” products have dubious origin and poor quality. That is why it is important to

protect genuine Italian food ingredients with a certification system, i.e., the DOP and IGP system, and a related database that

will be easy to understand and use for food industry professionals and home cooking enthusiasts alike.

We would appreciate your indicating to us which additional certified food product are available in Thailand through your

organization or other distribution channels, so that we may fill out our database. Any additional suggestion or comment will be

welcome.

DOP & IGP

In order to protect the typicality of some food products, the European Union has launched a specific legislation,

establishing two levels of accreditation: DOP and IGP.

The acronym DOP (in English PDO, Protected Designation of

Origin)extends the protection of the national mark DOC(Denomination

of Controlled Origin) in the whole of Europe and, with international

agreements GATT, although the rest of the world. The brand

designates a product originating in a region and a country where the

quality and characteristics are essentially or exclusively due to the geographical environment (including natural

and human factors). The entire production, processing and preparation of the product must take place in the

defined area.

The acronym IGP (in English PGI, Protected Geographical Indication)

introduces a new qualitative level of protection taking in consideration

the development of the industrial sector, giving more weight to the

techniques of production with respect to territorial restrictions. So the

code identifies a product originates in a region and a country whose

the quality, reputation and characteristics can be attributed to the geographical origin, and at least one stage of

production, processing and preparation take place in the defined area.

Both of these quality certifications are a valid guarantee for the consumers that want to buy quality food, which

must meet certain requirements and are manufactured respecting precise specifications. These certifications

are useful also in order to provide protection for the producers against any imitation sand unfair competition.

The DOP and IGP products must bear the label and the words "Guaranteed by the Ministry of Agriculture, Food

and Forestry pursuant to art. 10 of the EU regulation. n. 510/2006".

These guidelines are the guarantee of authenticity and quality of product.

DOP and IGP certifications are issued after a rigorous investigation the characteristics of the product and of the

production method. This assessment involves, at the national level, the Ministry of Agriculture, Food and

Forestry and at Community level, the Agriculture Committee. The certificated products are recorded in a

register managed by the Commission and made public through the official site.

Italy stands out for a rich agricultural unique in terms of the richness, variety and value: more than 200 Italian

products have gotten these quality certification. Italian DOP and IGP foodstuffs have led Italy to hold a

leadership position in the European Community area. The presence of a so extensive local products is linked to

the peculiarities of the Italian history and territory, which allowed the creation and maintenance over time of

production, gastronomic and cultural traditions very different from each other. This agri-food heritage create

value from the cultural, social and economic point of view: the food, in fact, in recent years has established as

the second economic sector after the manufacturing one. To this it should be add to the effect generated by

the inseparable union of Tourism - Food and wine, which helps to enhance the knowledge and favor of Italian

products abroad.

TOP 5 DOP/IGP Products In Thailand

The most famous Italian accredited products are Prosciutto di Parma, Parmigiano Reggiano, il formaggio

Gorgonzola, Extra-virgin Olive Oil, Aceto Balsamico di Modena, Speck.

Gorgonzola DOP

Gorgonzola DOP is a table cheese with crumbly dough, produced from whole

pasteurized cows' milk taken from the immediate Production area. The production

area of Gorgonzola DOP is located along the entire territory of the districts of

Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Pavia and Varese, in the region

Lombardy; and Biella, Cuneo, Vercelli, Novara, Verbano, Cusio, Ossola, and in 31

municipal areas belonging to the district of Alessandria, in the region Piedmont.

Gorgonzola DOP has a cylindrical shape with flat faces. The rind is a grey

and/or pinkish color, and is inedible. The raw dough is a white and straw-

yellow color, speckled with characteristic sky blue veins of mould (marbling).

The flavor depends on the length of seasoning. The seasoning of Gorgonzola

DOP, which lasts for at least 50 days, occurs in an environment that has a

temperature between 2°C and 7°C.

Aceto Balsamico di Modena IGP

The Aceto Balsamico di Modena IGP is balsamic vinegar extracted by grape must refined

into precious wood vessels. The must is obtained by Lambrusco, Sangiovese, Trebbiani,

Albana, Ancellotta, Fortana and Montuni vines. A part of vinegar, aged of at least 10

years, and 10% of additional wine vinegar are added to the must - which can be both

fermented and partially cooked. Plus, it is possible to add caramel to maximum 2% of the

finished product's volume, but any other substances are forbidden. The transformation of the product is

made through the traditional method of acetification followed by a period of ageing in valuable wood for

at least 60 days.

The production area of Aceto Balsamico di Modena IGP covers the districts of Modena

and Reggio Emilia, in region Emilia Romagna. Aceto Balsamico di Modena IGP has a

delicate and persistent scent, with an agreeable and harmonic sourness. It is deep

brown in color and its smell is lightly acetic, persistent and with possible wood hints.

The flavor is sweet and sour and well balanced.

Prosciutto di Parma DOP

The Prosciutto di Parma DOP is a sausage product from pig thighs. A thin

strip of lard or the pig's hide protects the cut of meat. The pig must be a

Large White, Landrance or Duroc, be over nine months and weigh at least

145 kg. The meat of Prosciutto di Parma DOP is pink and the fat is white,

the taste is mild and delicate, lightly salted and with a particular aroma.

The production area of Prosciutto di Parma DOP is located in the district of Parma in

the region of Emilia Romagna. Acceptable pig must be born and bred in the region of

Emilia Romagna, Veneto, Lombardy, Piedmont, Molise, Umbria, Tuscany, The

Marches, Abruzzi or Lazio.

Prosciutto di Parma DOP is produced exclusively in a limited area of Parma; it is

strongly protected in an environmental sense. In fact, it is the ecological conditions of

the valleys which give this product its particular characteristics.

Parmigiano Reggiano DOP

Parmigiano-Reggiano DOP is a low fat, seasoned cheese produced

form raw cows' milk. The dough is hard, cooked, and not pressed. The

production area of Parmigiano-Reggiano DOP is located in the districts

of Parma, Reggio Emilia, Modena, Bologna on the left side of the River

Reno, in the region Emilia Romagna; Mantua to the right of the River

Po, in the region Lombardy. Parmigiano-Reggiano DOP should be conserved in the refrigerator at a

temperature of 2-8°C. If not prepacked it is best to keep it in a vacuum-sealed glass or plastic container, or

wrapped in waxed paper. The seasoning occurs naturally and takes place in

temperature- and humidity-controlled places, called Cascine. Only cheeses that pass

rigorous selection are ultimately fire-branded with the name Parmigiano-Reggiano,

imprinted with tiny dots on the rind. Particularly versatile, it can be consumed as a

table cheese, alone or mixed with salads and fresh fruit or nuts. Grated, it makes an

excellent condiment for main pasta dishes, soups and consommé.

Speck dell’Alto Adige IGP

The Speck dell'Alto Adige IGP is a sausage products produced with boned pig thigh,

cut with or without rump. The production area of the Speck dell'Alto Adige IGP is

located in the entire territory of the autonomous district of Bolzano, in the

Trentino Alto Adige region. Speck dell'Alto Adige IGP

has a brown exterior skin, when cut it is red with

pinkish-white parts. The flavor is full and well

balanced, the taste is characteristic for the presence of smoky aromas and the

fragrances used during the salting process like black pepper, juniper berries

and garlic.
