A business house serves its customers. A club serves it’s owners. To funcon efficiently the Managing Commiee should understand these delicate nuances. At the beginning of this Commiee’s year we had a dream to have a Manual of Operaons for Club Management. We wanted to document all the management learning processes in an effort to bring about uniform standards in operaons. To achieve this, we created a new subcommiee under Mr. Shashidhar Pai, with a brief that the first edion be released on Club Day. I must thank him and all his Commiee Members for maintaining the D day. I should especially thank Mr. Divakar Pai for taking up the task of documenng this book. The life of the Managing Commiee is a year and the term of a commiee Member is restricted to a period of 3 years. The Staff is more permanent in nature; this gives rise to a certain kind of “I know beer than you” atude in them. This apart, every new Managing Commiee Member has his own way of geng things done, which not only confuses the Staff but also at mes may demoralize them. The Manual of Operaons seeks to change this. These SOPs are not mandatory nor ‘must follow’ rules. They are only guidelines and pointers towards efficient Club Management. This book is not complete; every year the Managing Commiee may upgrade this book and release a fresh revised edion, which will help us achieve a very well balanced and professional Management of our Club, which we all hold dear to our hearts. The Club day on January 26 was well aended and we had excellent feedback on the full spread of Coorg cuisine organised by our Club Manager Mr.Prasad Monappa. On the infrastructure front, work on the new elevator should start any me and hopefully it should be in place by the end of February. Please bear with us for the inconvenience of taking the stairs ll it is operaonal. The feedback forms filled by many of our guests and members have been largely posive. At the beginning of this Committee’s year we had a dream to have a Manual of Operations for Club Management. We wanted to document all the management learning processes in an effort to bring about uniform standards in operations. It was in the first decade of this century that Mangalore club shed its shackles and grew exponentially from a quiet, sedate entity to what it is today. At its helm were stalwarts who ably guided it’s destiny. The tall and affable R. C. Rodrigues was a key figure who played a stellar role as club Secretary from 2004-06. Here are his candid thoughts...

EAT : ENGLISH CHICKEN ROAST What is it that makes the English chicken roast delicious? Is it the tender chicken? Or is it the gravy? What about the goulash of spices? Envisage a culinary work of art which brings together all of these aspects to braise a perfect roast chicken - The English Roast Chicken at MC is an entree which exemplifies the adage “Good things come to those who wait”. Oh, but the wait is totally worth it! Chicken tenders are first marinated in soya sauce then rolled in corn flour prior to being fried and then braised in gravy. The gravy is itself a mellow mix of a slew of sauces which invigorates the chicken to pack a flavourful punch. What starts as a tinge of tangy sweetness, slowly builds up in the palate to give way to a fiery spicy blast as an aftermath. Don’t miss the English Roast, try it out soon!

Brilliant weather, drinks flowing, food aplenty, live music, great atmosphere- that was the gist of the club day this year. A crooner par excellence with a powerful voice, Ms. Jacqueline Fernandes effortlessly sang classic numbers to keep us entertained. We had konkani and hindi songs as well. Couples, both the young ones and the young at heart, jumped in and jived to numbers that caught their fancy. Paputu, Kadambuttu, Vermicelli Pulao, Mango curry, Mushroom Cashew Nuts Masala… just some of

the delicious Coorg food that was laid out by chefs from Coorg organised by manager Prasad Monappa. The event was ably compered by young Ms. Sweeney Marine D’Souza. We had a Housie at noon and gift hampers were handed out to the winners of the party games. The MC crew and the ever-present Shashiprashant handled things with aplomb as always, making sure all the members had a marvellous time.
