Take the seeds out of and peel them; blanch few minutes in boiling water; in a saucepan add a little oil, cook the onions slowly with little staining, add garlic, peppers, tomatoes cut into quarters; seasoning and cook 30 to 40 minutes.
Until tomatoes have rendered their water; break eggs into a bowl and beat with whisk; and cook just how long it takes to get scrambled eggs.
Fry them lightly ham to the pan and onto the piperade; serve immediately being sure to put on a small Espelette pepper.
