Nutty Tuna Noodle
Casserole
Ingredients:
extra wide egg noodles 2 ribs of celery, diced 2 cans tuna in water, drained 1 small onion, diced 1 can cream of celery soup lemon zest 1/3 cup mayonnaise 1/2 cup sliced almonds 1 cup milk 4 oz. jar chopped pimientos, drained 8 oz. Velveeta cheese
Directions: Preheat oven to 350°F. Boil noodles ac-cording to package directions; drain. In a pot, stir together all ingredients except the almonds until well combined and the cheese has melted. Stir in egg noodles until sauce is evenly distributed. Pour into casserole dish and sprinkle top with sliced almonds.

Website it saves on the environment and we save
some on the postage. We have had a few techni-
cal problems in the recent past which has pre-
vented the website to be current and we are
happy to report the problem has been resolved.

Noodles Are Comforting Whether they‟re fine, medium, wide or extra-wide, egg noodles conjure up images of mom‟s chicken noodle soup, classic tuna casserole, or even a sweet kugel. As legend has it, noodles were first made by 13th century German bakers, who fashioned dough into shapes, such as birds and stars. These “nudels” were then baked and served like bread. Consumption of noodles increases by as much as 20 percent in January, February, and March. As a com-fort food, noodles can be soothing when we have a cold, a broken heart, burst bubble, or winter-time blues. In her book Comfort Food, author Sue Kreitzman includes pasta among her highest-rated, three-star comfort foods.
It’s a Brainy Month March 15-21 is Brain Awareness Week, a time to marvel at what many scientists consider the most important, yet least known, part of the human body. Like any other organ, the brain needs exercise to thrive. “Use it or lose it” is the brain‟s motto, and the brain grows and rewires itself through-out an entire lifetime through continual perception, action, and stimulation.
Many famous “brains” were born in March. Challenge your brain by identifying the famous thinker described below. Your brain will thank you for it.

Easter Meal Reminder Easter is fast approaching!!! For those of you planning to join us for
our Easter Meal at KRCC, we ask that you make reservations with
us.
Please call the Receptionist at (701) 873-4322 with the number in
your party, the name of your party, and the name of the Resident you
will be joining. Please call by Thursday, April 1st. We will be
serving a special meal planned by the Resident Council.
We will be serving those Residents with guests at approximately
12:00 noon for the holiday meal. This is after our regular meal
service. Upon your arrival the Receptionist will provide you with
seating arrangements.
The cost per meal is $6.00 per person and the payment may be made
ahead of time to the receptionist. In addition, if you plan on taking
your resident out for Easter Day, please inform us of this.
St. Ur-Who? On March 17, the Irish wear green in honor of St. Patrick who, legend has it, drove the snakes out of Ireland. A day earlier, on March 16, people of Finnish descent will be wearing royal purple and Nile green in honor of St. Urho, the little known Finnish saint who drove the grasshoppers out of Finland.
Legend states that St. Urho yelled, “Heinäsirkka, heinäsirkka, mene täältä hiiteen,” which means, “Grasshopper, grasshopper, go from hence to hell.” In doing so, St. Urho saved the Finnish grape crops and Finland‟s vineyard farmers. Doubt has been cast on the veracity of the Finnish saint, however. Richard Mattson, a Finnish-American department store employee from Minne-sota, claims to have made up the story to escape the taunting of an Irish- American friend. Further-more, Finland now swarms with over thirty species of grasshoppers, crickets, locusts, and cicadas, fur-ther damaging St. Urho‟s reputation. Minnesota‟s Finns insist the legend is true and have even erected a statue to St. Urho along Highway 71. One would be foolish to deny the existence of this beloved saint in Minnesota on March 16.
Daylight Saving Time Begins Daylight Saving Time gives us the opportunity to enjoy sunny summer evenings by moving our clocks an hour forward in the spring. Yet the implementation of Daylight Saving Time has been fraught with controversy since Benjamin Franklin conceived the idea. Even today, regions and countries routinely change their approaches to Daylight Saving Time. Most of the United States will spring ahead to Day-light Saving Time at 2:00 a.m. Sunday March 14.
Stretch It Out On March 17, 1845, Stephen Perry invented the rubber band to hold papers and envelopes together. Enjoy these alternate uses for his invention. Can you think of any more, apart from shooting them at your friends? Wind around a candle to stop the wax from dripping on
your table.
Wind around each end of a cutting board to prevent the board from slipping.
Expand the waist of your pants by looping the band through the buttonhole and fastening it to the button.
Reshape your splayed broom by wrapping a band half-way up the broom‟s bristles.
Wrap around a jar lid to make it easier to twist off.
Wrap tightly around sections of a T-shirt before dipping it into dye and you have a cool tie-dyed „60s shirt.
Instead of carrying a wallet, fold your paper bills around your ID and credit card and then wrap a rubber band around the outside to hold everything together.
Wrap around your index finger when thumbing through papers. No more licking!
Make a BIG ball. The world's largest rubber band ball stands six feet seven inches tall and has a circumference of 25 feet. It took Joel Waul of Lauderhill, Florida, five years to create the ball, which weighs more than 9,400 pounds and contains approximately 720,000 rubber bands!
A Handy Month
March is Craft Month, which cele-brates the imagination and inspiration that goes into handcrafted works of art. Craft encompasses an entire world of meaning, and includes bas-ketry, ceramics, glass, furniture, jew-elry, leather, metal, paper, clothing, painting, fabrics, and woodworking. If you make it by hand, it‟s a craft. Crafting has amazing benefits. It stimulates the creative imagination, reduces stress, and teaches new and useful skills. Try making a rustic wire can-dleholder to keep your hands busy and your imagi-nation sharp this month. Start with a thick, round block of wood for the base. Cut an eighteen-inch piece of wire hanger and glue it into a hole drilled into the wood. When the glue has dried, wrap the wire around a candle and shape it into an embel-lished curl. Voila! Now don‟t you feel “crafty”?
Irish Proverbs In celebration of Irish Heritage Month, we offer a few Irish proverbs – well known and obscure – to ponder. The older the fiddler the sweeter the tune. You may as well give cherries to a pig as advice to
a fool. What I am afraid to hear, I‟d better say first myself. Never sell a hen on a wet day. Questioning is the door of knowledge. Seldom is the last of anything better than the first. Better to be a man of character than a man of means. Never bolt your door with a boiled carrot.
RESIDENT COUNCIL MEETING
Resident Council met on February 17, 2010 at
6:30 pm in the Fellowship Hall,
Resident Rights Reviewed: Tammie Alexan-
der Licensed Social Worker presented this
months Resident Rights. Groups and
Activities and Visiting Rights.
Concerns Addressed: Residents addressed
concerns in regards to the meal service in one
of the kitchenettes. The concerns will be
addressed with the dietary manager and the
necessary changes if any will occur. They will
be reviewed with the Resident Council during
the March meeting.
Upcoming Events: Community Easter Egg
Hunt will be held the First Friday of April.
The Pastor for St. Matthews Church is
looking for a replacement.
Pastor Melchert from the Golgotha
Lutheran Church is retiring, in April.
The Activity Calendar was reviewed, and
the suggestions were to continue with-
some of their favorite programming , crea-
tive writing and penmanship, home cook-
ing, or trying a cook-off, an exercise pro-
gram.
Meeting was adjourned at 7:30 pm, with
motions made by Irene Unterseher, and
Erna Renner. Next meeting will be held
March 17th at 6:30 pm
Team Player for the Month
Edith Fandrich is Team Player for the month of
March. Edith’s job titles include Van Diver, CNA,
and RT.
Edith was born and raised in Beulah. She gradu-
ated from Beulah High School and attended
college. She left college to marry her high school
sweetheart Dean. They were blest with two beauti-
ful children.
Sad to say, this past fall their beloved pet dog
Keyno, an Siberian Husky, passed away. We are
very sincerely sad for there loss.
Edith’s hobbies and pastimes include being a busy
homemaker, reading and walking.
Her Pride and Joy is her wonderful husband of 25
years and her two children. “I’ve been truly
blessed.
Edith’s positive attitude and outgoing personality
with her willingness to always help staff has earned
her the title of team player of the month.
Congratulations Edith! Your hard work and
dedication to the Knife River Care Center is very
much appreciated.
