WELCOME to the first issue of the LOCAL Mag. Our first issue has been a labour of love and there are many

people to thank for their help in getting it off the ground.  Firstly,  I’d  like  to  thank  our  first  issue advertisers – thank you for understanding our vision and supporting this publication. Without you, we would not have been able to do it. Next, I’d like to thank Nicky Brown for her design talents and for being a great partner to work with. Epsom salt is not actually a salt but a naturally occurring pure mineral compound of magnesium and sulfate. This little gem is not a recent discovery, in fact, the benefits of Epsom salt have been known for hundreds of years. This salt can help to relax the nervous system, soothe back and muscle pain, heal cuts, treat cold and flu symptoms. Plus the salt draws toxins out of the body and helps the body lose weight.

The magnesium and sulfate are easily absorbed through the skin, and help the body absorb nutrients, and hormones like insulin, which has a significant effect on the overall running of the body. It also helps flush toxins and ease migraines. INGREDIENTS500g beef mince1 brown onion, coarsely grated1 cup (70g) fresh breadcrumbs1 tablespoon Worcestershire sauce1 egg, lightly whisked4 bacon rashers4 slices cheddar cheese4 eggs4 white bread rolls, split2 iceberg lettuce leaves, finely shredded1 large ripe tomato, thinly sliced225g can beetroot slices, drainedTomato sauce, to serve

Step 1: Combine the beef, onion, breadcrumbs, Worcestershire sauce and egg in a large bowl. Divide mince into 4 even portions and shape each portion into a 12cm disc. Place on a plate and cover with plastic wrap. Place in the fridge for 30 minutes to rest.

Step 2: Heat a large frying pan over medium-high heat. Add the bacon and cook for 2 minutes each side or until golden brown and crisp. Transfer to a plate lined with paper towel.

Step 3: Add the beef patties to the pan and cook for 2-3 minutes each side or until golden brown and cooked through. Place a cheese slice on each patty. Transfer to a plate.

Step 4: Meanwhile, preheat the grill on high. Toast the bread rolls under grill until golden brown and lightly toasted.

Step 5: Crack the eggs into the frying pan and cook for 2 minutes or until cooked to your liking.

Step 6: Place the base of each bread roll on serving plates. Top with lettuce, tomato, beetroot and bacon. Top with a beef pattie and fried egg. Serve immediately with tomato sauce, if desired.

Wild asparagus is in season in spring and can be found in the Ballandean area of the Granite Belt and is served on a few local menus e.g. Wild Asparagus Fritters at Ballandean Estate Cafe.

The Granite Belt Farmer’s Markets are held each 2nd and 4th Sunday of the

month in the Civic Centre in Stanthorpe and the produce is grown and made by people living in the region. The food available will change with the seasons and will feature the well known stone fruit in the coming months.
