Pictured above is Jori Sposito. She lives in Knoxville Tenn. She andher family just returned from an amazing visit to Belize. According tothem, “San Pedro & Ambergris were the most beautiful place wehave ever been. Folks were friendly, helpful and very patient. [They]cannot wait to return.” Jori, who is not normally a big fan of snorkel-ing with sharks, did just that, and she can’t wait to do it again!

Getting Twisted It’s known as “Nuad Phaen Boran”in Thailand, but in my humble vocabu-lary, it’s “Complete and Utter Bliss”.The Asian Garden Day Spa’s latest andmost exciting feature treatment is theThai Massage, complete with Thaimasseuse and tranquil atmosphere intheir serene courtyard. Their delightin having me treated to a Thai Mas-sage is obvious, and Kirsten teasinglywarns me I am going to find out movesI never thought I had, and would stretchin ways I never thought possible. I re-alize I am totally looking forward tothis new experience. Brian introduces me to their lovelyThai masseuse, Mattika. Her friendly

Since they opened their doors to the public in January, Asian Garden Day Spahas been busy pampering clients with fantastic massage therapy treatments.Owners Brian and Carmen Berenty, along with their daughter Kirsten have builta unique, Asian-inspired retreat. Their great attitude and friendly personalitymake for a fantastic experience. As The San Pedro Sun found out, a lot of thepampering comes from the personalities within. All three owners make one feelspecial and the treatments? Amazing! For our special treat, Brian promised an authentic Thai massage with MattikaKaewmongkhon, a certified Thai massage therapist direct from the Kingdom ofThailand. Also part of our treat was a hot stone massage at the able hands ofBrian himself. Read on for more on our “Day at the Spa!”

smile immediately puts me at ease, andI find myself looking forward to a tra-ditional Thai massage. My only knowl-edge of this treatment is that it involvesa lot of stretching, twisting and move-ment. According to Brian, Thai mas-sage focuses on pressure points andstretching and bending. I just know Iam in for a treat! My session begins when Mattikaslowly and carefully cleans my feet. Then slowly, her strong fingerstraverse all across my soles, and pull-ing on each toe, massaging them withlots of pressure, releasing tensions Ididn’t know I had in that part of myanatomy! Soon her quick dexterous

My muscles give in to the varying degrees of pressure, allowing themselves to bestretched and twisted into submission. Mattika makes sure she doesn’t miss anyof them, and she twists, pushes and flexes my entire body!

(Right) My legs arebent backwards, andthe sensations are un-believable!

She did. Before I knew it, my legs were be-ing crossed and pressed towards themat. Muscles strain for a nanosecondbefore giving in, and the feeling is quite

pleasant. Rather than howling in pain,my muscles give in to the varying de-grees of pressure, allowing themselvesto be stretched and twisted into submis-sion. Almost immediately after press-ing on one leg, Mattika has crossed overto my other side, and begins workingon my arms and other leg. Stretchingand twisting has never been this relax-ing! I’m surprised how much I enjoythe total manipulation of my body. The highlight of the session comesnear the end of my hour and a half treat-ment. Mattika positions herself care-fully to stretch my body completely. Wejoke that my Titanic scene is coming.(Like Rose, I am to become completelyexhilarated.) Mattika slowly, gently, surely, extends my arms backward, while she sits on the soles of my feet, and then she pulls. I’m lifted, (not quiteflying!) and about six vertebrae loudlyannounce their thank you! I can feel thestretch throughout my entire body andthe relief is immediate. Still, Mattika has a few more treatsin store for me! She massages mystomach, and then kneads across myback, gently pummels all across myshoulders and down to the small of myback. The tense, knotted muscles

across my shoulders relax and loosen. Her final, but equally pampering moveincludes massaging my head, aroundmy temples and all over my scalp. I’m sad the treatment is over, butwhen I move to get up, I can see andfeel the difference. My back no longeraches, and I pick myself up gracefullyand with ease. I got twisted, and it wasthe best feeling in the world!

Getting “Stoned” A special treat offered at AsianGarden is the Hot Stone massage. Thisis a specialty massage that usessmooth, heated Basalt stones (a blackvolcanic rock that absorbs and retainsheat well). This form of massage isdeeply soothing, relaxing and the heatoffered by the stones helps tightmuscles relax. Before the treatment begins, Brianhas a brief consultation with each andevery client where he explains the tech-nique that will be used. “This is just away for me to know which areas ofthe body need more work, which bodyareas are tighter than other, so I canconcentrate a bit more on them. Themassage is always more effective if Iknow exactly what the clients needs

are,” he comments. He assures theclient, “If the stones are too hot, pleaselet me know. Asian Garden aims at making yourfull spa experience fantastic from startto finish. The massage begins! It startsoff with Brian massaging the legs andcalves, before moving on to the backand neck areas. Special aromatherapyoils are used to enhance the experience. The overall experience is

complimented by the soothing musicplaying in the background; which helpsto send you into a state of complete andtotal bliss. The stones, having been previouslysanitized and heated in 120 and 150 de-gree water, are used to massage thebody. Stones come in various shapesand sizes, and Brian tests the stonesbefore applying them to the body. Brian

“We do catering!”

Pronounced “Supa” in Creole and“Cocoyol” in Spanish, this sweet stewedcandy can make for a special treat as itis one of Belize’s traditional sweets de-rived from the Mestizos. This treat maybe sticky, gooey and plenty delicious. The palm tree nuts are stewed to makeone of the yummiest snacks around. Thepalm tree is covered with spiny prick-les and makes the task of taking themdown real complex because of its alti-tude and thorny bark. Although the fruit

San Pedro Street TreatsOne of the features of life in tropical destinations like San Pedro and other parts ofthe Caribbean is the sale of in-season tropical fruits, vegetables, candy treats andhome made pastries by road-side or street vendors. Usually, they occupy a verysmall plot of place. In the corner of a street or in any strategic spot along the streetwhere they usually offer special warm dishes, fresh fruits/vegetables, candy treatsand much more. During the year, it is a common occurrence to see or spot thesevendors making a living by providing us with the very best selection of their pro-duce. Walking the streets of San Pedro, one can take a look at a variety of yummytreats that are on sale, but do we know most of what they are selling? The Sun, tookit to the streets to visit the many local street vendors and find out about the yummytreats they offer. Here is what we found out!

Cocoyol – Supais hard to reach and found in forest ar-eas, most farmers usually tie the branchthat is loaded with the miniature coco-nuts and pulled down. The nuts are thensun dried for a couple days beforestewed. To make the candy, follow these stepsfor a wonderful home-made recipe forall to enjoy. First, gather the supa andtake off hard outer shell, then wash prop-erly. In a pot, combine the supa, sugar, water, spice seeds and cinnamon (pref-

erably to your taste). Put to boil at me-dium heat for better results. Note thatthe longer it takes for it to cook, the bet-ter the flavor will be. Make sure to keepstirring continuously until the contentsturn a thick syrupy mixture. The syrupand its contents should have a dark browncolor. After it cools, serve in a cup orsmall container; one nut can fill yourmouth, so take it one at a time. Thesweet, sticky and syrupy based candy issure to leave you licking for fingers. Thetaste is exquisite, and can be bought atyour number one fruit and veggie stallAntojitos Letty’s on Pescador Drive.Next week we’ll feature the “stewcraboo”, only at the island’s number 1newspaper!

Sold in cups and irresistibly sweet, the“supa” is one delicious street treat!

For Belize, rum symbolizes morethan an alcoholic beverage; rum is a cul-tural phenomenon that visitors fromaround the world associate with the es-sence of the tropics. In Belize, one ofthe most popular rum for local or mixeddrinks is the world renowned One Bar-rel Rum proudly created and distributedby Traveller’s Liquors. Last week, OneBarrel rum was entered at the CaneSpirits Competition in Tampa, Floridawhere it was recognized as first amongsixteen hundred worldwide competitorsin the dark rum category. There werethirty-one judges who tasted the rumsentered in the competition and judgedthem on taste, body, and finish. Num-ber what? One Barrel has won other goldmedals in the three years it has been onthe international market. One Barrel is a very aromatic rumwith lots of flavor. Its “nose” has beendescribed as “floral” specifically remi-niscent of hibiscus and papaya fruit.Tasted straight, One Barrel is quite

smooth without a “bite” to it. You cantaste the memory of the molasses thatwas used to make the rum. The molas-ses flavor isn’t overpowering, but it isthere in the background. This makes therum mix well with juices and Colas, which are the most common mixers forrum drinks. The hint of molasses seemsto “complete” the flavor of the mixers, actually improving the taste when com-pared to the mixer alone. People whotaste One Barrel rum usually end up be-ing One Barrel drinkers, even if theyhated rum before they tried this one. Since 1953, Traveller’s Liquors Lim-ited has been providing Belizeans andvisitors alike with a broad and uniqueassortment of distilled and fermentedproducts. Founder and Patriarch of thefamily, Master Blender OmarioPerdomo, gave the company its namebecause of its original success servingTraveller’s along the main route intoand out of Belize City. In 1992, the com-pany completely upgraded the distilla-

tion facility, stepping awayfrom other distilleries whichuse acids to speed up the fer-mentation process. Traveller’semploys high-test molasseswith natural fermentation, coupled with a double-distilla-tion method for smoothertaste. Apart from the tradi-tional distilled products likerum and vodka, Traveller’salso produces liqueurs andwines from Belizean fruits, they are the only Belizean re-finery that does this.Traveller’s Liquors Limitedare producers of Belize’s old-est and only aged rums on themarket today. enabling you to better feel the fish bite.I find that a lot of my quests have prob-lems feeling the fish bite because ofthe amount of line that’s out. And itlessens the time and amount of line ittakes to get your bait to the bottom.Usually when you got one on it willfeel like a small added weight to theline until he gets closer to the sur-face when you will feel him fight likea cornered pit bull gator in a tigercage if he has any size. I, on the otherhand, can feel when a fish glances inthe direction my bait from a distanceof up to a half mile away. I’d teachyou that technique but I can’t giveaway all my secrets … now can I? To fish this species I attach an eightounce weight to a four foot leaderwith two hooks, either #7 or #8 placedtwo feet apart. I’ve always baitedwith sardines but stomach contents ofa large majority of the yellow eyedred snapper I’ve caught indicate theirfood is shrimp. Next time, I go afterthis species I’ll probably bait withshrimp on multiple #4 hooks to see ifthat’s more successful. (I’ll let youknow how it works in next week’scolumn.) Just remember once you’ve caughtone you’re on the spot and its time tostart loading the cooler. In short or-der, your arms may feel like spaghettinoodles though. It does take some

sweat and strain to reel these mon-sters up from 300’. When fishing yellow eyed red snap-per it’s not uncommon to catch otherspecies including, king snapper, blacksnapper amberjack and snowy grou-per. Using the methods described hereI am able to feed my charter queststhe delectable yellow eyed red snap-per year round. The last three I caughtwere salted and dried, to make whatis known locally as corned fish. I planon cooking this corned yellow eyed redsnapper in a soup, for a traditional SanPedro Easter meal to enjoy with myfamily this Easter Sunday.

present to you an award winning collec-tion of products to complement even themost discerning taste. The bottom line is that the clear, tan,or brown liquid you pour over ice ormix in a blender has come a long wayto serve you. To appropriately honor itfor its long journey, Belizeans blendrum into a variety of concoctions thatcelebrate the distinctive taste. Thebeauty of rum is that it mixes so wellwith different flavors that consumersof all preferences can appreciate itssimplicity. One Barrel has won numer-ous gold medals in the “dark and light80 proof” category at the annual Inter-national Rum Festival. One Barrel, orits aged counterpart, Prestige Premium

Gold, continually surpasses other rumsthroughout the Caribbean in taste andquality. Traveller’s Liquors producesseventeen varieties of rum all together. The light gold color – reflects theunfiltered content like golden stars ina galaxy. Fresh peach and sweetflorals dominate the nose. The entryis silky smooth sweet butterscotchwith a roasted coconut and viscousoily body followed by apple cinnamonspice in the finish. Clearly a fantas-tic choice and undoubtedly why thisclassic golden rum has won the goldmedal dark rum category in the 2006International Sugar Cane Spirits com-petition. Hard-Boiled and Jell-O Eggs It isn’t Easter without a few colorfuleggs, whether the hard-boiled or fruit-flavored gelatin variety. Here are twoeasy methods for preparing eggs.

Hard-Boiled Eggs Hard-boiled eggs come out perfectlywith this four-step process:*Place eggs in a saucepan and coverwith cold water.*Bring water to a roiling boil; immedi-ately turn off heat. (Don’t let the eggscontinue to boil. Sulfur compounds inthe yolk turn an ugly shade of green wheneggs are exposed to high heat.)*Cover the pan; let eggs stand in the hotwater for 14 minutes (small eggs) to 17minutes (extra large eggs).*Drain eggs and cool in ice water. Re-frigerate hard-boiled eggs for up to oneweek.

Jell-O Eggs Although you can blow out the insidesof fresh eggs, dry them, and fill themwith flavored gelatin, special molds yieldthe best and safest results. Look for themin supermarkets.*Clean molds and brush lightly with oilor spray very lightly with cooking spray.*Snap molds shut and place them in anempty egg carton with the fill holes fac-ing up.*Make gelatin according to package di-rections and fill molds.

Making Easter Eggs

*Chill 3 hours or until firm; un-moldcarefully with a flat knife.*For variety, replace 1 cup of the wa-ter called for with milk or ice cream.

Dyeing Eggs Back in the day, decorating eggs withpastel colors was the plan. Now, any-thing goes.

Tips*To start, cover a table with layers ofold newspaper to soak up any spills.*Use empty egg cartons as drying racks.Keep paper towels handy to blot off anydye that pools underneath the eggs.*For colorfast egg dyes, mix 7-8 dropsof food coloring into 1 cup of hot water.

Stir in 1/4 cup vinegar. For more in-tense colors, use small amounts of pro-fessional-quality food coloring gels orpastes, available at most supermarkets.*To make your own natural dyes, boilcommon ingredients in water with atablespoon of vinegar until desired shadeis reached. Strain to remove solids. For Yellow, use: Yellow onion skins, turmericOrange: Same as yellow, with addedbeet juicePink: Cranberry juice concentrateBlue: Canned blueberries, red cabbage, grape juice concentrate B r o w n :Strong brewed coffee or teaRed: Beets, paprikaGreen: Spinach

*For spattered eggs, dip egg in a basecolor and let dry. Dip a clean toothbrushin a contrasting liquid color and care-fully flick bristles with your fingers tomake paint splatter onto egg.*For marbleized eggs, coat eggs with abase color and let dry. Mix canola orother light cooking oil into another colorof dye (1 teaspoon oil per cup of dye)and quickly dunk eggs. The oil will re-pel color in some places and the dye willadhere in others, creating a marbled ef-fect.*The secret to beautiful eggs: let eggsdry thoroughly between coats.

Now: Have fun hiding the eggs for agreat Easter egg hunt!

Flower Power Egg -Dye egg. Use glue gunto attach flower se-quins in a matchingcolor (red on red, blueon blue).

Word Egg - Die-cutstickers come in manydifferent word themes.Mix and match wordsand themes to cover aplain egg.

Spring Foam Egg -Dye egg in a brightspring-like color.Decorate with foamflower stickers.

Dot Egg - As simpleas it gets: pick yourdot color and placetiny dot stickers on awhite or dyed egg.

“Yeah, I always was good at casting with a rod and reel,” I said. “My grand-mother bought me one when I was twelve and I used to practice all of the time.” “I started about the same age,” Drummer Dan said. “We lived right next toa lake.” “We didn’t have a lake,” I said. “I would tie something like a couple of heavymetal washers on the line instead of a lure and practice in our yard. I learned tocast that thing anywhere I wanted.” “I got to where I could actually snag ducks out of the water with my lure,”Dan said. “I got so accurate I could knock birds off the fence posts in our yard,” I said.“I never measured it but I suspect that when it comes to distance I could prob-ably cast about a hundred and fifty feet.” “I could do that,” Dan said. “Whew! It’s getting deep in here,” Pirate said. “Yep,” Mark said. “The first liar never stands a chance.” Frank said, “There’s some serious fishermen here in BC’s Bar that wouldn’tmind seeing some of that long and accurate casting.” “Dan,” I said. “I’m beginning to think these guys don’t believe us.” “Yeah. I get that feeling,” Dan said. “I still think I can cast more accuratelythan you, though.” “Want to bet?” That’s how fifteen of the regulars from BC’s wound up on the dock atSunbreeze. The bets were placed and we decided to go for distance first. Danwent first and put it out there about eighty feet. I stepped up to take my turn. “Come on. What’s taking you so long?” Dan said, as I sighted the distanceand gauged the wind speed for my cast. “I have to make this cast really good,” I said. “That’s my wife standing overthere watching us from Henry Bizener’s dock.” “Ah, forget it,” Dan said. “You’re never going to hit her from here.”
