When it comes to versatility in conventional applications, the
Thermicjet® hr is unbeatable. The hot-smoke cooking sys-
tem cooks, smokes, heats, dries and reddens. a cooling coil
is also available as an option. The air is either conventionally
blown in vertically and extracted in the center underneath
the ceiling or via a multi duct system, where the air can also
be blown in diagonally. extraction is then done in the center
underneath the ceiling and in the lower area of the side walls.
This intricate air flow system results in high-quality products
being treated absolutely uniformly. cooked ham specialties
can even be dried and smoked at eleven levels. The system is
optionally closed with a standard hinged door, a double door,
an automatic lift door, or a sectional door.
The Thermicjet® can also by operated with racks on a rail
system. productos Fernandez S.a., for instance, is using
this system. The chilean meat-processing company uses
particularly high racks on a rail as a specially designed model
because the frames used for sausage production must still be
used. at 2,630 mm, they are about one- third higher than the
standard model, and this required the installation of special
supply and return air ducts.

clients from industry and trade dry, cook, and pasteurize
with sophisticated Thermicjet® systems from Schröter. Both
the large industrial systems and the small single trolley
systems are characterized by a flexible design and many
combination options.
For the kettle systems, the chassis and all relevant compo-
nents are absolutely tight. heating is accomplished via low/
high-pressure saturated steam, which is blown into the heat-
ing jacket. The condensate is taken back to the steam boiler.
Schröter offers counter-pressure pasteurizing systems to
increase shelf-life of the products. The product- and pack-
aging-friendly pasteurization principle keeps specialties like
German black bread, salmon roe, or meat products fresh
and aromatic for a long time. The foodstuff enters the
Thermicjet® pa as semipreserves in perforated, heat-resistant
euro crates on euro palettes. if, for instance, bread wrapped
in foil is in the pasteurizing plant in euro crates, low-pressure
steam is blown in from the outside via a valve. This results in
the interior temperature to rise to approximately 100 degrees
celsius at a pressure of approximately 140 m bar. While the
temperature is maintained, the pressure drops due to con-
densation and a vacuum is formed. This is balanced by means
of compressed air, which is introduced through another valve.
The air in the packaging foil of the bread expands due to the
increase in temperature and generates pressure. low-pres-
sure steam or compressed air, which is introduced through
another valve, ensures that the foil does not pop.

in the BaKejet®, air is distributed absolutely uniformly as
a result of the horizontal air flow. a mechanism lifts the
product trolley before the start and slowly rotates it through
the air stream during the entire browning or baking process.
all products are exposed to the incoming air stream, which
is blown in at different speeds and in different directions.
Thanks to this, products that are difficult to brown or bake
– for instance, meat in forms or meat-filled pastries – have a
uniform surface. other products for browning or baking can
also easily be produced or baked with increased uniformity.

use the BaKejet® for their products. The family business
focuses on the highest quality standards during manufacturing.
The transport container (in this example, for meat loaf) is
weighed with the filled baking form and labeled before enter-

This way, unnecessary weight loss is avoided and the min-
imum shelf life is extended. a system concept aligned to
your preferences is a matter of course for Schröter. here, the
relevant coolant – cold water, ice water, brine, or cold air –
is selected based on the products and the technical pre-
requisites. depending on the product, packaging can start
immediately thereafter.
all cold-air systems in the arcTicjet® range are distinguished
by their extremely high air performance and the substantial
chilling effect that results. Thus they do not only ensure
shorter production times and improved product shelf life,
but they also guarantee completely hygienic conditions. as a
result of the intensive chilling, the time in which the goods
are within the critical temperature range for bacterial growth
is kept to a minimum.
in order to guarantee a reliable process, cleaning of the
chilling systems is an important factor. in Schröter systems,
this is accomplished by a steam-sanitizing equipment in
conjunction with an integrated cleaning system. Thus the
refrigeration process provides double the safety.

The arcTicjet® with integrated cooking function is a worth-
while option for prolonged cooking and cooling times – for
instance of cooked hams in forms and modules as well as
cold meats. The renowned company Bell aG, the largest
meat processor of Switzerland, uses six arcTicjet® intensive
chilling systems with integrated cooking function in their
commercial unit in Basel. The long-established company first
cooks the ham to the core or to F-value and then immediately
cools it to the required core temperature. a major advantage:
the transport of the extremely heavy cooking modules to the
refrigeration system is no longer necessary. in addition,
using ammonia as the coolant make the cooling processes
much faster.
Thanks to this sophisticated concept, long cooking and
cooling programs can be processed automatically overnight
and the goods can be processed further or packaged the next
morning without losing any time. during the day, Bell
produces low-volume products, such as cipollata sausage as
well as sausages for frying and boiling. This guarantees
optimal utilization of the system.

our Semijets® are well thought out and tailored designs. The
combination of the processing zones is as variable as the
construction. Schröter can supply a semicontinuous system
of any length, designed as single row or double row. The
selection of the door systems is done individually according
to the requirements of our clients. The automatic conveyor
system ensures a smooth production process: products are
brought in in batches, are transported between the zones,
and are then moved out to a chilled environment. depending
on the load, a transport system is available for trolleys, racks,
modules, and monorail systems.
in addition, optional coding systems are possible depending
on the version of the transport system. This way, process data
can be saved directly in the base module, for instance, for the
cooking of ham. The code is read automatically during load-
ing into the system. alternatively a temperature-resistant bar
code can be applied, and the process data is then transmitted
to the control system by means of scanning before loading.

This is how the automatically controlled conTijet® systems
always produce consistently high quality. With the Schröter
technology, standardized meat and poultry products such as
hot dogs and sausages as well as various convenience prod-
ucts can be processed to make top products. For example, a
fine-meshed stainless steel belt safely transports very thin
and narrow products. The continuous cleaning system of the
transport conveyor in a closed-circuit water system with filter
system ensures the highest level of hygiene. The time-saving,
automated loading and unloading system is optional. in short:

for the thermal treatment of meat and sausage products and
tailors them to different processes and product characteris-
tics. The focus of process optimization is on new and more
efficient system components, product-related and energy-
saving control options, and different types and speeds of air
conveyance to achieve a uniformly matured product. With

The climajet® with a multiple-airflow duct system is partic-
ularly sophisticated. Thanks to different supply and return
air options, this system provides conditioned drying air to all
chamber regions. This results in optimal drying. alternating
air flow guarantees a high degree of uniformity from the first
hour of maturing – irrespective of whether the goods are large
or small or whether a high or low degree of drying is required.
an added bonus: the air flow is gentle on the products.
Besides this, the separated inlet ducts, which are adapted to
the chamber size, have proven their worth. depending on the
program, dampers provide the horizontal or the vertical inlet
ducts with conditioned air. The correct ratio of horizontally to
vertically conveyed air is decisive in this respect.

Salami and cold-smoked ham should mature and dry gently
and quickly with the lowest possible power consumption.
With the innovative limiT process control system, based on
the principle of “alternating moisture control”, the plant
manufacturer is presenting a new solution.
an interval of minimum and maximum temperature and
moisture values is defined and these parameters control
the continuous change between continuous and on-and-off
operation of the unit. during on-and-off operation, the mois-
ture of the goods diffuses from the core to the surface, where
it is delivered to the circulating air and thereby increasing
the humidity in the chamber. The highest value of moisture
accumulation, the upper limiT value, is matched to the
relevant product characteristics. When this point is reached,
on-and-off operation is ceased and continuous operation
commences. The moisture is depleted and the air-conditioning
values are brought back to the preset lower limiT parame-
ter by increasing the circulation air and the use of cooling,
heating, drying, or fresh air. Then the system automatically
switches to on-and-off operation again, and the climate is in-
fluenced exclusively by the moisture dissipated by the goods.
The limiT control system also adds fresh air to the process
by means of state-of-the-art enthalpy control algorithms. a
“negative” maximum deviation from the set point can be set
in order to prevent the product from drying out too much.
if this value falls below the maximum negative deviation,
the system is brought back into the regular limiT range by
means of additional humidification.
Thanks to this, maturing errors are minimized, the service
life of motors and machine parts is increased, low mainte-
nance is achieved, and last but not least, valuable energy
is saved.

dry-aged beef is a gourmet food that requires a special
maturing process. With the climajet® system, Schröter offers
the best conditions for meat matured on the bone. The sys-
tem offers pinpoint control parameters: the temperature in
the dry-aged beef maturing room remains constant between
0.5 and 1 °c and the relative humidity is held at between 75
and 85 percent with a low and constant air speed. Thanks
to the ability to precisely maintain these parameters, the
climajet® offers excellent maturing results. depending on
individual needs, the pieces of meat usually mature with
pinpoint accuracy for between 14 and 35 days and can then
be delivered exactly portioned to restaurants. The result is
a culinary delight – beef at its best. This is because the dry
maturing and the associated water loss intensify the flavour,
which is further enhanced by the meat’s fat marbling. This
leads dry-aged beef to develop its one-of-a-kind, buttery-
nutty taste.

Schröter developed the innovative climajet® aT to defrost
frozen goods very gently and without any loss of quality. its
climatic process control system and variable air flow ensure
that products defrost uniformly with minimum weight loss
and natural, high-quality freshness – even massive blocks of
frozen meat.
Before it can be processed, meat frozen to a temperature of
-24 degrees celsius must be defrosted to approximately -1/0
degrees celsius. up until now, this was often carried out in
a water bath. But this has drawbacks – like requiring a signif-
icant amount of water and negative effects on the quality of
the meat due to leaching. Thanks to a new defrosting process
using steam, the systems from Schröter not only reduce
defrosting loss but also cut energy consumption by 90 percent.
The process involves the frozen blocks of meat being placed
in multiple layers on rolling wagons or racks. Steam is then
fed into the defrosting system, heating the chamber to the
predefined temperature and ensuring that the heat is dis-
tributed evenly throughout. variable air flow guarantees that
heat is distributed perfectly throughout the entire chamber.
puncture probes directly under the product’s surface and in
the product core are used to control the uniformity of the
defrosting process. This means the system always operates in
the ideal temperature range and safely prevents overheating
and microbial growth in the products being defrosted.

From the adapted single trolley up to the continuous pro-
cessing system: the FiShjet® is suitable for fish types that
must be processed hanging up or lying down. First of all, fully
homogeneous results can be attributed to the high heating,
cooling, and dehumidifying power. Second, they result from
the continuous control system of the circulating air with a
high fresh-air content and intense smoke volume.
pasteurizing systems for the conservation of fish roe in cans
and jars as well as various types of vacuum-packed surimi form
as much part of the Schröter product line as defrosting plants
developed specifically for the fish industry. depending on what
kind of fish specialty you want to process, we will choose the
most beneficial heating option for you along with the opti-
mum system configuration. The individually adapted control
system technology allows for cost-effective process control.
By using the most modern conveyor technology and racks or
trays, the different processes such as drying, smoking, and
cooling can be implemented efficiently and very productive-
ly. Without the time-consuming spiking of the fish, manual
loading and unloading is done in trays and empty cans in the
loading or unloading zone. The fully automatic supply and
discharge of empty and full cans represents a plus point in pro-
ductivity and economy for the Schröter continuous systems.

glow SmoKe generatorS are closely related to the
traditional generation of smoke by means of glowing wood
shavings, and they either use wood chips or saw dust. The
latter produces a milder smoke. it is generated by glowing
wood shavings at temperatures of 400 to 700 degrees celsius
on a heated burner plate. The smoke and conveying air mix
together and are fed into the system through the smoke
outlet and smoke pipe.
The friction SmoKe generator produces a smoke taste
of medium intensity. in this procedure, a wood bar is pressed
against a rotating friction wheel to produce the smoke. The
wood bar is pressed against the wheel pneumatically via a
stainless-steel chain. The smoke generator has a magazine of
up to five wood bars.
in the Steam SmoKe generator, the substances in the
wood chips are extracted using superheated steam. The
smoke flavor is medium to strong. a mixture of steam and
air is heated to a temperature between 360 to 450 degrees
celsius and is then pressed through continuously conveyed
wood chips. Special advantages: Steam smoke has a constant
intensity, is transmitted through condensation, and thereby
reduces weight loss of the products.
liquid SmoKe SyStemS are suitable for use with all com-
mon brands of liquid smoke worldwide. in this procedure,
a liquid, undiluted smoke concentrate is vaporized into the
processing room with compressed air. The smoke flavor is
medium to strong, depending on the recipe. plus point for
both the liquid and the friction smoke procedure: Scrubbing
of the exhaust air is not required, since a flap covering the
exhaust air outlet keeps the system closed during smoking.

The thermal air-purification system consists of a drum-
shaped combustion chamber with an integrated preheating
selection. Smoke exhaust emissions are purified here at tem-
peratures in excess of 750 degrees celsius. This means that
the carbon compounds in the raw gas and the oxygen in the
air are converted almost completely to co2 and water vapor
(h2o). Besides this, the plant manufacturer optimally utilizes
waste heat – whether it is used to heat processing water, in-
tegrated into heating equipment, or used to heat thermal oil
for frying lines. Schröter analyzes both the volume of exhaust
air and the degree of pollution in order to propose a system
solution that meets demands.
We offer a four-column systems as an alternative for systems
with steam smoke generators. it purifies the exhaust air
by means of spraying water. a level sensor determines the
maximum and minimum water level so that partial and total
water exchange is fully automated. if the exhaust air scrubber
is installed outside, an automatically controlled electric heat-
er prevents the water from freezing during the cold season.
Besides this, biological exhaust-air scrubbers are an option
too. an efficient bio-filter system with a biological bed,
including exhaust air scrubber, is used for purifying odorous
exhaust air. odor and fat particles are effectively separated
in the scrubber. Subsequently the air with residual odor
particles flows into the bed, where it must penetrate a one-
meter-thick layer of bark mulch and is then metabolized
and cleaned by microorganisms. in addition, Schröter offers
further alternative exhaust-air cleaning systems that can be
tailored to meet any need.

The highest demand is for plc control systems by Siemens,
which are primarily sold in the european market. By contrast,
Japanese clients prefer mitsubishi systems with the complete
Japanese character set. in the united States, allen-Bradley
control systems are used. all of these systems have a touch-
screen operating unit. Schröter offers control systems by
Jumo for individual solutions. almost all control systems are
programmable logic controllers (plc) and are 99% program-
mable by Schröter. The offered modular control systems
are manufactured in large quantities in line with industry
standards, are reliable, and always use state-of-the-art
technology. This way, they can be supplied for many years as
replacements.
The display consoles connected to the systems initially show
an overview of all connected systems and with the current
values. When selecting a specific system, the display shows
the set point and actual values – they can also be shown
graphically as a trend chart, if so desired. in addition, the
various product processing programs to be managed from a
central station. The displays normally allow the production
processes to be tracked back several years.
To ensure that they are as easy to operate as possible, the
Siemens and allen-Bradley controllers are continuously
updated with new languages and multilingual programming.
Text-oriented descriptions, operating instructions, and error
messages such as alarm lists can be better understood this
way. currently 27 languages are offered in the product range.

tion processes do not operate smoothly: thanks to Schröter
Quicksupport, our service technicians can connect to the cli-
ent’s pc or server via the internet within seconds and can then
remotely troubleshoot the problem. Quickly and securely. cli-
ents simply download a program from the Schröter Web site,
which is available free of charge in a number of languages.
Schröter Quicksupport operates without compromising
the iT security. The support tool automatically generates a
partner id and creates a dynamic session password, which
by default changes at the beginning of each session. Besides
this, important additional functions like data transfer require
a further manual confirmation of the user on site. Because
data privacy is of top priority for us, our employees only
check computers with your explicit authorization and will
inform you about every remote access.

lation of inTouch for you in a quick and expert manner. you
only need a computer with connection to the internet on-site
and the downloaded support tool. Second, if help or support

When it comes to sensitive items such as meat, safety always
takes first priority, which is why the associated processing
is subject to stringent conditions in the meat industry. To
ensure ongoing, constant product tracking, Schröter offers
bar code scanners and temperature probes.
at the beginning of production, a bar code is printed on a
temperature-resistant plastic card and is hung on the trolley.
The bar code is then always scanned when filling and loading,
for example, the cooking/smoking system, or the cold stor-
age chamber, and before slicing and packaging. This elimi-
nates the need to manually enter the batch or article number
into the system (which is also an error-prone method). at
the end of the program, the bar codes and all other pertinent
batch data are saved on a process control software. This guar-
antees the highest amount of control possible, even after the
production process has been completed, since the data can
be accessed again at any time using the search function, and
can even be displayed and printed out as a trend chart that
includes all batch data.
a new generation of wireless Wtrans radio-controlled
temperature probes for mobile temperature measurement,
including the corresponding multifunctional receivers, com-
plements the safety measures already in place. The transmit-
ter in the probe (which is designed to be inserted into the
product), is located in the probe’s handle, is well protected
thanks to a waterproof housing, and works like a charm in
ambient temperatures from –30 to +85°c. The wireless Wtrans
temperature probes continuously accompany the products
through the various temperature levels of drying, smoking,
cooking, and intensive chilling without losing any data. The
Wtrans transmitters can even be individually coded, which
allows the products to be accurately attributed to the respec-
tive stage of the production process that they are in. For this
purpose, each transmitter has a unique five-digit wireless
id. using this id number, the temperature readings recog-
nized by the receiver and interface are associated with the
other production values and recorded. a software application
(inTouch) allows all of the system’s parameters to be easily
varied and displays the entire process in a clear manner.

cleaninG > automatic cleaning becomes more and more important when using high capacity systems in the industry. The Schröter
experts have therefore developed a programmable control system for all processes. it helps to consistently clean systems
thoroughly in the shortest possible time – while keeping the use of chemicals and water to an absolute minimum. The auto-
matic cleaning device operates with a booster pump and can be used on multiple systems. The process visualization system
documents each cleaning process as accurately as the production processes. as a result, the plant operators can see at any
time when cleaning was performed. With this automation, Schröter ensures safety and allows optimal use of resources.

When it comes to automated cleaning solutions, the valves
of the system’s individual cleaning circuits are controlled
separately using a software program. areas with greater
contamination are treated with cleaning detergent for longer
or repeatedly. at the end of the process, all of the circuits are
rinsed with water. The preprogrammed parameters ensure
that the detergent and water used in the rinsing phase are
applied at consistently low levels. The automated cleaning
device is installed at a central location and, from there, can
be permanently connected to the cleaning manifolds of mul-
tiple systems. The cleaning detergent container is connected
to the device and automatically adds the correct amount of
detergent. System control units access the cleaning device
one after the other.
