Charmingly located on the lobby level, the Italian restaurant Opera offers a venue

where guests can meet and socialise in a modern colonial setting. With a thought-out design, the distinctive decoration can tell a story of its own. The art collection, as a heritage itself, embodies the history of both Vietnam’s fine art and culture in the twentieth century.

Two of the most prominent artworks are the Weekly Southern covers published in December 1942. The covers are displayed above the hostess counter at the restaurant's main entrance.

Weekly Southern magazine was under the direction of Ho Van Trung, also known by his pen name Ho Bieu Chanh. Although the covers were very simply designed with hand drawings or black and white photos, the content was focused and strongly reflected citizens' lives in Saigon during that time.

In the quest to source and use only the highest quality ingredients at Square One, Mr Alain Cany, MaÎtre of Commanderie de Bordeaux Saigon Chapter, Mr Frederic Boulin, General Manager of

Park Hyatt Saigon and Mr Francis Boutemy, who holds the prestigious title of Grand MaÎtre of the Commanderie de Bordeaux had a discussion on the wine and vinegar for the restaurant.

Together with Mr Boutemy, we embarked on a special project to bring the finest French vinegar exclusively to Park Hyatt Saigon. After 12 months, the first two barrels of Château Haut Lagrange white and red vinegar, made from Sauvignon Blanc/Semillon and Cabernet/Merlot grapes respectively, finally arrived in Saigon, ready to be used in a wide array of dishes in Square One.

Homemade from selected wine in wooden barrels, the vinegar gives a special taste to all dishes. Visitors to Square One can experience the exclusive vinegar in the chicken fricassee, mackerel or sardine escabeche, Lyonnaise salad, rabbit rillettes and pickled baby cucumber, carrot and mushroom.

5. Tropical fruits will give a special touch to your wedding menu. You can also order more tasty dishes for guests and include tropical fruits that are only available in the summer.
