Coconut MacaroonsClassic macaroons for the holiday season!

14 ounces flaked sweetened coconut

1 can (14-ounce) sweetened condensed milk

1 teaspoon vanilla extract

2 extra-large egg whites, at room temperature

1/4 teaspoon kosher salt

1. Preheat oven to 325 F. Line 2 large cookie sheets with parchment paper.

2. In large bowl, mix coconut, condensed milk and vanilla until combined. In medium bowl, with mixer fitted with whisk attachment on high speed, whip egg whites and salt until medium-firm peaks form. Carefully fold egg whites into coconut mixture.

3. With 1 3/4-inch-diameter ice cream scoop, or in two-rounded-teaspoonful por-tions, drop batter onto prepared cookie sheets. Bake 25 to 30 minutes or until golden brown. With metal spatula, transfer cookies to wire racks to cool. Store in airtight container, with waxed paper between layers, at room temperature up to 2 days or in freezer up to 1 month. Makes 28 macaroons.

• Each serving: About 120 calories, 6g total fat (5g saturated), 5mg cholesterol, 75mg sodium, 15g carbohydrate, 1g dietary fiber, 2g protein.

Appleton, Minnesota is the only city in the world to have all of its streets and avenues named after its fallen veterans. With the help of Appleton businesses and referencing the book Home of Honored Veterans, Tidbits of the Lake Area would like to introduce you to one of these Honored Soldiers each week. Private Malvin G. Hering was born in Appleton

January 29, 1920 to parents Mr. and Mrs. Ben Hering. He lived his entire life in the Appleton community, graduating with the Appleton High School Class of 1941. During his high school years he was active in sports, playing basketball on the 1937-38, 1938-39, a state tournament team, 1939-1940 and 1940-1941 teams and on the football team from 1936-1940. He entered the military service April 30, 1942, and trained in camps in Texas, Louisiana, and New York; going overseas in January 1944. On October 7, 1944, Malvin died in the defense of his country in action in Germany. He was serving in the artillery during the Battle of the Bulge. The American Legion, Legion Auxiliary and members of Company M, Minnesota State Guard, were in Attendance at his memorial services. Funeral services were held December 22, 1947, with burial in the Appleton Cemetery. Left to mourn his death were his parents, his wife Harriet (Thorson), sisters: Delores, Mrs. James Kerner and Frances, Mrs. Leo Lelito and his brother, Calvin Hering. Hering Street is located in the center of Appleton, running north and south, between Miles and Haven Streets.

Q: My great-granddad was from Italy and a great op-era lover. When he immigrated to the United States, he brought along about three dozen recordings, including two Zonophone discs by Enrico Caruso. I read in one of your recent columns that Caruso's American Victor Real Seal recordings are fairly common and not worth that much. What about the Zonophones? -- A Reader in Kissimmee, Fla.

A: You are correct about the Caruso Red Seals. Most sell in the $5 to $25 range, pending on rarity and condition.

Caruso, probably the most legendary classical tenor who ever lived, was born in Naples in 1873. He made his operatic debut in 1894 and after establishing his singing chops in Europe, arrived in the United States in 1902 where he began a long association with the New York Metropolitan Opera. His first major recording in the U.S. was "Vesti La Glubba" from "I Pagliacci," cut in 1904 at the Victor studios. It charted as the best-selling recording in the country that May.

Caruso made only a few Zonophone recordings. Since they are scarce, they also are expensive. Several have sold in the $5,000 to $10,000 range. Someone who might be able to advise you is Richard Gesner, owner of "The Mu-sic Connection," one of the premier record shops in New England. A: I checked several used electronic shops and moni-tored the action on eBay, and think your Atari setup would sell in the $50 to $75 range.

2013Brad Keselowski's against-all-odds run to the Sprint

Cup championship breathed new life into a Sprint Cup Series landscape in which no one other than Jimmie Johnson or Tony Stewart had won a championship in seven years.

The championship gives Keselowski, 28, a status that can't be bought or promoted. He wasn't merely the cham-pion. He became NASCAR's man to watch.

There will be others, if for no other reason than because 2013 will be a new year. Everyone knows that Keselowski, Johnson and Stewart -- not to mention Jeff Gordon, Dale Earnhardt Jr., Kyle Busch, Denny Hamlin, Matt Kenseth and the rest -- will play major roles in the next season.

Who else will the cameras favor?

CLINT BOWYERSurprise! It was Bowyer, not Johnson, who finished

second to Keselowski. The two are similarly personable and, at times, similarly controversial. Bowyer will undoubt-edly be a popular dark horse when predictions are made regarding 2013.

CARL EDWARDSThree times (2005, '08, and '11) Edwards contended

for championships. In each case, he slumped the follow-ing year. In each case, he came back part of the way the next season and made a title run the third. If the pattern holds, he'll make the Chase again next year.

RICKY STENHOUSE JR.Stenhouse, with two Nationwide Series champion-

ships in tow, is well pre-pared for the big time. Replacing Kenseth at Roush Fenway isn't going to be easy. He will probably have his struggles, but few would be surprised to see him in victory lane.

JOEY LOGANOFive years ago, the

betting line would have favored Logano to win a championship ahead of Keselowski. Now, at the well-seasoned age of 22, Logano is Keselowski's teammate, and the plan is for the two

to give Roger Penske a cohesive team as well as a title.

DANICA PATRICKThe evidence suggests she is far from ready to be a competi-

tive force in Sprint Cup, but the money is there and she has a full-time Cup ride teaming with Stewart and Ryan Newman. She's getting better, but the learning curve has to accelerate quickly.
