    Ater entering, the eye is at tracted to a little hut made rom at stones. It is a

    rebuilt cadole, the traditional shelter o vine-growers. The parents, their son

    and daughter await you in a vast timber-ramed building. Numerous objects

    and curiosities decorate the cosy wooded reception hall. At this Champagne

    House, two generations o winemakers work together, wives included.

    And the Bausers also have international targets. As well as European exports,

    they are endeavouring to conquer the Asian markets (Japan and China). Butanother surprise adds spice to the visit : a long vaulted cellar, transormed

    into an authentic museum o the art o traditional Champenois wine-making.

    Nearly all the tools and machines o the business can be ound there !

    Including an enormous grape vat sculptured in wood.

    And climbing the stairs back up rom the cellar to rediscover the cadole, there

    is an exhibition o giant ammonite ossils ound in the vineyard. All thats let

    is to taste and choose rom the 7 Champagnes or the two still wines (a Ros

    des Riceys and a Coteaux Champenois).

    On entering the pretty oral

    enclosure, the visitor is immedia-

    tely captivated by the quiet old

    building o white limestone, cove-

    red in red tiles. The interior, with

    its paved oor and timber rame,

    is superb and spacious. Hal-moon bay windows, a freplace,

    an old sharpening grindstone, an

    old oven, a designer bar and urniture complete the setting. A generally calm

    and resh atmosphere. Ater working with a cooperative until 1999, Michel

    Chevrolat set up on his own, with a passion. Installation o a press and some

    impeccable equipment, and the frst vinifcation was achieved in 2003.

    In 2008, he is proud and happy that his work is appreciated and recognised

    (3 cuves in the Hachette Wine Guide). With an in-bred taste or the good

    things o lie, he had imagined a career in cookery and gastronomy, but his

    humility and rigorous sel-deman-

    ding attitude, and his genuine

    emotion have made him the man

    he is today.

    husband managing the business

    and welcoming visitors. They

    In a very typical, sloping little

    village street, one entrance

    stands out, with its pediment

    decorated with a curious

    metal wine-making sculpture.

    Inside, a very sophisticated

    modern decoration and areception cellar extended by

    a succession o 17th century

    vaults. In act several houses

    are interconnected through the cellars.

    Christophe is the worthy successor to our generations o winegrowers. A lover

    o old stone which he takes immense pleasure in restoring and enhancing in fne

    detail, a lover o the vine, he loves to taste the grapes o his dierent vineyard

    plots, beore the harvest, to get a frst idea and imagine his uture creations.

    He takes you up onto the sloping hillsides rom where there is a superb view over

    the Seine valley. 5 cuves are available to be sampled at the stylish glass bar

    stand, with an epicurean quotation rom Baudelaire as an invitation.

    Not to mention the Ros des Riceys which Christophe

    elaborates greedily.

    To the rear o the village, there is a nice viewpoint, and an open door

    welcoming you to Sylvie and Franciss house. As well as having the very

    latest equipment installed, this 17 th century house has some superb vaulted

    cellars o that period. This perectly illustrates the household philosophy

    where tradition and modernity contribute equally. Passionately sel-educa-

    ted, Francis has spent time with amous oenologists and preers above all

    else to be working on his cuves or in amongst his vines. Very concernedabout the ecosystem, he is a pioneer in the reasoned struggle to obtain that

    taste or the rural which leaves no-one indierent. A task which requires a

    lot o sel-sacrifce, but which has its rewards and moments o great shared

    pleasure. We are lucky to have a magical wine, so people come to see us to

    meet the magician. Also not to be missed, a nice traditional square wine

    press.

    Precursors to the Riceys, the

    Gallimard amily have been pro-

    ducing Champagne since 1930,

    date when Jules and Ernest deci-

    ded to produce their frst bottles.

    A descendant o fve generations

    o winemakers, Didier, the current

    owner, has the reputation o producing a balanced Champagne, because it

    comes rom hillsides which have an exceptional exposure to sunlight. A ew

    years ago, he took the decision in his superb 17 th century vaulted cellars, to

    revert to working with wood to produce new cuves matured in oak bar-

    rels. The result is a resounding success because the Quintessence cuve

    received the gold medal in the 2008 competition or the worlds best

    Chardonnay as well as being recognised in the international wine

    challenge. To get it completely

    right, requires succeeding at every

    stage, he explains. Sipping a ute o

    delicate salmon coloured Brut Ros,

    you notice the exceptional fnesse o

    the bubbles which orm a persistent

    pearl white necklace, a sign o great

    quality.

    Crossing the noble stone porch, just next to the church,

    you can discover the entrance o a beautiul 18 th century

    dwelling, with a 4-sided ochre-tile roo.

    The heir to fve generations o wine-makers, Pascal Morel

    has done a lot to emblazon the noble letters o the Ros

    des Riceys appellation which he talks about with delight :

    the scent o mossy undergrowth, the spice, the taste o

    crystallized cherry and raspberry.

    A very beautiul 17th century vault hides a treasure. A

    reserve in which Pascal Morel systematically stores some

    bottles rom each o his productions, thus constituting a real memory o the

    Champagne House, with cuves o the grand-ather, the ather, his own and

    soon his childrens.

    It was in 1975 that he took over the produc-

    tion ollowing in the ootsteps o his ather

    to whom he dedicated his Cuve Gabriel, a

    100% Chardonnay Champagne matured in

    barrels. Here you will fnd passion, emotion

    and pleasure to share and to pass on.

    This House is marked with a very amusing sign. The

    visitor enters the main gate into a vast courtyard

    surrounded by nice buildings and extended by a

    park. A trompe loeil window

    is dedicated to the amily on

    the beautiul central house. It

    has been the Morize home or

    three generations.

    The athers welcome is very

    jolly.

    He looks very much like his son and states his uner-

    ring fdelity to tradition and to the House avour.

    We are in the presence o the Prvt o the Commanderie du Saulte

    Bouchon Champenois. The very large reception and tasting hall has a

    baroque, nearly religious atmosphere. There is a stained glass window

    where St Vincent appears, the patron saint o wine-

    makers, surrounded by three generations o Morize,

    two o the churches o Les Riceys and the three

    seasons o the vine. Amongst a ull range o

    products, a long-matured millsime is presented in

    a particularly elegant bottle.

    The visit down into the cellar leaves great memo-

    ries as beyond a big heavy door lie some sumptuous

    12th century Cistercian vaults.

    A v ine arc hway joins the t wo stone pillars o the porch o this ormer wine-

    growers house, with its vast courtyard ull o owers. A collection o buildings

    with its barn and tower dating back to 1690 entirely restored and its 17th century

    vaulted cellars. In this very beautiul mansion house, there is an impres-

    sive reception salon : period timber rames, giant freplace, tapestries and

    stained glass windows as well as a majestic staircase instil an almost medieval

    ambiance, worthy o a chateau. The third generation o Champagne producers

    decided to dedicate one o their 100% Chardonnay vintages, the Elgarose, to

    the ourth generation : three adorable mischievous little girls, the two daughters

    o the amily and a niece, Elonore, Garance and Rose. Ater studying oenology

    and planting his frst vine in 1989, Vincent, proud to bear the name o the patron

    saint o vine growers, has vines in three villages : Saint Usage, Verpillires-

    sur-Ource and Gy-sur-Seine.

    Standing in ront o the amily coat o

    arms, he says that when he is not in

    his vineyard, he adores doing

    hi-energy sports : Motorcycling,

    4x4, Skiing, Mountain biking. As

    or his avourite Champagne, its

    the Grande Rserve, produ-

    ced rom a selection o

    old vines.

    On the roo o this beautiul

    property, an old weather cock

    in the shape o a bottle sets

    the scene, as well as giving

    the wind direction.

    Once inside, a pleasant inner

    courtyard invites the visitor

    to take in the sun or to chat

    with the neighbours around

    a large table in the shade, just like generations have done beore. Beyond a

    round stone porch, a nice reception area introduces you to the superb vaulted

    cellar which houses some charming old urniture, the amilys old winegrowers

    tools, lovingly preserved, old photographs o grape harvests, a s well as a number

    o awards. Franois Brossolette, who has worked in the wine business or more

    than 20 years, adores being outdoors, in the feld, at one with nature.

    Through his marriage with Sylvie Franois, the daughter o a winegrower,

    they combined their two names resulting in the current label o their House

    and invested in some top o the range equipment (electronic press, thermo-

    regulated vats).

    Vinifcation and assembling are a magical alchemy and each year has its own

    nice surprises, explains Franois who is Grand Bouteiller o the Commanderie

    du Saulte Bouchon.

    Created in 1956 thanks to the

    combined talents o around

    ty winegrowers, the Chas-

    senay dArce Champagne has

    continuously developed the

    quality o its products and

    is proud today to represent

    140 members, motivated by

    the same concern or a solid

    reputation. With the new

    millennium, came a major investment policy, allowing the House to acquire

    the tools to improve its productivity whilst respecting tradition. It is this

    hal-century o experience which motivates and gives its energy to the team

    which warmly welcomes you in renovated and very pleasant surroundings.

    All the s ecrets o Champa gne making will b e re vealed to you in the cellars,

    exhibitions, videos and educative commentary proposed. And to conclude this

    educational moment in a cloud o magical bubbles, there is a tasting session

    o a selection o Champagnes, in their all-new white and ros colours.

    Here, a large amily o 5 generations o winegrowers has populated the whole

    village. Their specialities are : the maturing o Champagne in oak vats, a

    Ros obtained in vats or by incomplete vinication. Worth discovering : the

    Jeanne label, named in memory o the grand-mother, 100% pinot noir rom

    Jeannes old vine, o which the must is ermented and matured in oak vats.

    Lucy, the daughter o the household, a pretty brunette ull o sparkle and

    passion, brilliantly explains how she is ollowing in her athers ootsteps,

    she has a specic philosophy or each o her vineyard plots, whether it is

    eco-riendly or simply well-reasoned wine-growing. With degrees in oenology,

    wine-growing-oenology, and international commerce, she has travelled around

    quite a bit (South Arica, Australia, Caliornia). In France, she is a member o a

    study group which looks into new approaches to wine growing.

    Observing the vine in detail, what grasses grow around them, never hesita-

    ting to use essential oils to aid the plants deences, taking into account the

    energies and bio-dynamics, and preerring prophylactic work to maintain a

    balance in the yield and develop

    a concentration o favours, Lucy

    uses the best o each technique

    to prepare the uture.

    It is in memory o a great grand-mother

    that the name Veuve Doussot was

    chosen in 1973.

    Stphane, whose ather coounded the

    Commanderie o the Saulte-Bouchon

    Champenois, is now its Grand

    Argentier. He was bathed in tradition

    at a very early age.

    This thirty-something wine-maker is

    ull o energy. As well as running the

    production activities with his sister, he

    is a scrambling enthusiast and member

    o the Aeroclub, which lets him view his

    vineyards rom the sky.

    Inside the pleasant hall set aside

    or tasting, there is a shop and an

    additional reception area where Sylvie takes care o her guests expertly, with

    a degree in hostelry and as a certied restaurateur. She even organises theme

    days, discovery walks, grape-picking or oenological tasting.

    You will learn all about the art o making the King o wines, gathered around a

    wine-press interestingly decorated with rescoes.

    wine-making process is done in-house, rom

    the hand picking harvest right up to the

    shipping o the bottles to the customers.

    Founded in 1952, this major House, one o

    the oremost cooperatives, groups together

    some 130 winegrowers and uses 120 vats

    and 8 wine presses.

    It was not until 1993, and as an honour

    to the pioneering ounder, that the choice o brand name was made. A

    tasting hall with shop lets the visitor delve into Charles Collins world and

    discover the dierent Champagne vintages in a

    convivial atmosphere.

    A real wine-g ro-

    wing winegrower, never happier than in his vineyard, he takes a more

    eco-riendly approach, I try to plough the land rather than put down

    weed-killer, Michel does not hesitate to keep to a strict minimum all orms

    o additives in his vines and cellars.

    He has created a vintage Blanc de Noirs La Loge 2003 as well as the Carte

    Blanche wine, a mix o Pinot Noir, Chardonnay and Pinot Blanc, rom a

    vinication process without malo. Next year he will produce La Dsire

    a nectar o Blanc de blancs. The numerous medals in the chilled tasting

    hall are because Michel has been a committed wine-maker or 20 years.

    300-year old lime tre e (1730) which

    majestically adorns this home

    to numerous birds. 18 th cen-

    tury vaulted cellars and the very latest in wine presses,

    traditional dcors and a reception hall with an exhibition

    o modern paintings. Using talking caps on bottles, and

    disgorging bottles by hand without ice (one o the last to do

    this manually)

    Pierre Eric is a man o c ontrasts who moves orward seeking

    the best in everything, with contemporary eciency, whilst

    respecting the demands o tradition and the product. One o his cuves is

    ageing slowly in bottles using authentic corks held in place by big old clips.

    The 5th Jolly o the amily business

    is exported to Europe, Japan and

    China. Its latest creation is a Pur

    Brut with no added liqueur.

    There is a very nice sign on this fowery house, located in

    a cul-de-sac at the end o which is a delightul old wash-

    house. Franoise Grandpierre, an authentic and energetic

    wine-maker is inexhaustible on the amilys long history

    and its involvement in the vineyard revival. She welcomes

    visitors in a great room o a grand house where every object

    is decorative, rom the ancient outts to her son Vincents

    paintings. Indeed it is he who designed the packaging o the

    latest wines, notably the 2002 vintage which has a wholly

    transparent box.

    And there is a pleasa nt surpris e : a very enjoyable and complete wine-

    making amily museum set up in the vaulted cellar. To help you nd time to

    relax, Franoise oers the chance to stay in one o her two B&Bs. From her

    vineyard where she will be proud to show you the c are she takes in pruning,

    there is a superb viewpoint that extends over the valleys and out o sight.

    1865, Louis Aristide Massin plants his rst vine stock. 2008, it is now

    the ourth generation o this nice amily story, a winning Quartet which

    continues the tradition or excellence. Cedric, the son, and his ather are

    the main cultivators o the v ineyard. Sylvre, in charge o the cellar, delica-

    tely elaborates the uture wines and works on the exporting business. Carol,

    the wie, welcomes visitors and initiates them into the Champenois secrets

    through a journey o discovery. She also decorates the bottles beautiully

    with her painting. Florence, her sister works on the management side. The

    tasting salon with its piano and

    its paintings, is very welcoming

    and cosy, and has a very homely

    eeling. Very in touch with nature,

    the head o the amily relaxes

    by riding his mountain bike over

    the undulating vineyard hills. His

    respect o the environment has

    led him to revert to alternative

    cultivation methods (an alternate

    row o grass and wheat seedling,

    ploughing). His rst prowess goes

    back 15 years when he won a prize

    at a Champagne wine competition

    in Epernay. But he uses his medals

    to promote his region which he

    loves above all.

    At the entranc e, cellars decora ted with

    ancient wine-makers tools reveal their

    ultra modern installations.

    Further up, you are welcomed into a

    brightly lit hal-timber pavilion, with

    white paved foor, and impressive timber

    beams overhead. Paintings, sculptures

    and a Csar style compression o crown

    caps placed on the vast bar, convey a

    very contemporary spirit. From this dominating position, the view o the

    Ource Valley is unbelievable and its vineyard ascinating. Jean-Paul, very

    Gentleman Farmer, his wie Isabelle, and their daughter Ccile, orm

    an attractive Trio. In 1986, ater working as a contracted wine-presser, he

    decided to set up himsel and to develop his own range o Champagne.

    Very attentiv e to his vines, he keeps them under constant superv ision to

    avoid the slightest handling. When I discover some mushrooms in

    amongst my vines, it means its time to go to the woods and pick

    some chanterelles, he jokes ! He is passionate about water and the

    environment. A keen sportsman, he and

    his son are cycling enthusiasts and he likes

    to have cross-country horse rides with his

    daughter.

    Dominating the village o Bligny and oering a superb view over the valley,

    Bligny chateau is one o only two chateaux with the Champagne appellation

    (the other is in the Marne). Just next to its remarkable sculptured gardens, inclu-

    ding a central pond and an orangerie, the chateau posse sses another enclos ure :

    1 hectare o vineyard, surrounded by sto-

    ne walls, containing 6 varieties o grape :

    Pinot blanc, noir, Meunier, Petit Meslier,

    Arbanne a nd Chardonnay. The rst cuve

    rom the enclosure will be a blend o the

    6 varieties and will be produced in 2010.

    An ancient hunting pavilion at the start o

    the 18th century, built by the Marquis de

    Dampierre, it was transormed into a vine-

    growing domain at the start o the 19 th century, encouraged by Baron Cachard,

    a master winegrower who modied the building and set up the cellars. Inside,

    a superb paved foor, tapestries, old paintings, stained glass, magnicent

    decorated ceilings representing scenes o angels and vines, and several salons

    including the pretty blue salon dedicated to music, with a harp and a piano.

    There is a surprise on the foor above : a collection

    o 1000 crystal futes. In the giant cellars, a trophy

    room extended by an eco-museum o traditional

    old wine-making tools, as well as a vast reception

    area, with a curious Limonaire Orchestrophone.

    Also not to miss is the sparkling documentar y on

    the vineyard and Champagne making.

    A lo cal man, Olivier Marti n, ru ns t his g ood coopera tive with its top o the

    range installations. It was presided by his ather or 35 years.

    BARFONTARC : BAR rom Baroville, FONT rom Fontaine and ARC rom

    Arconv ille, 3 neighbouring village s, overlooke d by the hillside vineya rds

    o 3 noble grape varieties, Pinot Noir, Pinot Meunier and Chardonnay. At

    Baroville, at the heart o the Cote des Bar, 50 wine-makers give their best or

    their particular brand o Champagne. For Olivier, whose rst participation in

    a harvest was in 1991, it is all down to pruning. The precision and intelligen-

    ce applied to this act determine the quality o the harvest. Correct pruning

    determines the vigour, the ertility and the maturity o the vine. It conditions

    its development and its blossoming.

    Gerard welcomes you in the courtyard o a beautiul U-shaped building, ull o big

    trees including a nice chestnut tree. This wine-maker, descended rom a amily

    which settled in Bligny in 1624, will take you into his tasting cellar, built in the

    style o Bernard de Clairvaux, on the r uins o the ancient castle o which only old

    bridges and moats remain. A lover o stone construction, he has rebuilt the vaults

    supported by strong, plain laurel lea pillars typical o Cistercian architecture.

    At one end, an unusual bar stand and counter a re lodged in an enormous

    hal-barrel.

    The property stretches all the

    way to the banks o the Landion,

    a large stream which passes

    through Bligny. Ever since he

    was 6, Gerard thought about

    the vineyards, and dreamt

    about one day becoming a real

    wine-maker.

    In 1975, he bought a vineyard

    and, with his wie Franoise,

    set to work on his dream : the respect o the integrity o the wine and naturalmethods to preserve the most favours possible.

    A richly colourul character who adores jokes, he has a nice selection including a

    Brut Zero dosage (no liqueur added).

    Ater clim bing a ew steps, a 19th century brick

    and timber building, with large bay windows,

    instils calm. Close by, in a salon with a

    beautiul replace and superb wood detailing,

    sits a Melchizedec, containing 30 litres, the

    largest Champagne bottle in the world. In

    the basement o what used to be the presbytery o Urville, there are some

    marvellous wine cellars, built in 1152 by the Cistercian monks o Clairvaux.

    There, ageing gently, are the cuves speciales as well as the companys great

    pride : giant bottles whose names evoke the great kings (Balthaza r, Nabucho-

    donosor, Salomon, Melchizedec). The Drappier amily have been cultivating

    their vineyard at Urville or two centuries. Michel, the current impassioned

    and passionate House director, knows everything about a ll the vinications

    since 1979. Whereas Andre, the venerable patriarch, with his 60-harvest

    experience, keeps a knowledgeable eye on the production, he has a malicious

    charm and a solid sense o humour. Known the world over, the magni-

    cent Drappier Champagnes have seduced a number o very prestigious

    personalities such as General de Gaulle, Luciano Pavarotti or Jean-Paul

    Belmondo. But in this great House, it is the kindness and hard work that haveremained the ultimate

    values.

    Not ar rom the Abbey o Clairvaux and

    the Cristallerie Royale de Champagne,

    the Dumont amily have been cultiva-

    ting the best o tradition or more than

    two centuries. In 1985, the decision

    was made to install a modern wine

    storehouse, just a ew eet rom the old

    cellars, equipped with the latest techni-

    ques conorming to modern standards.

    smile. A pyramid o Champagne bottles

    Today, this vineyard is run by a small team, very proud o its brand new

    laboratory earning it the Quality label.

    In 1960, this union o winegrowers grouped together 5 wine-growing villages,

    the marketing brand name was Cercle

    dOr.

    It was in 1980 that the name o one o

    the co-ounders Charles Clment was

    chosen, an equally discreet homage to

    the amous neighbour rom Colombey-

    les-Deux-Eglises, nearby.

    The person in charge, a solid ellowsporting a musketeer moustache, a

    true living memory o the company,

    gives animated visits punctuated with

    delightul and o course sparkling

    anecdotes.

    An energetic and passionate woman, organiser of numer ous events, Chantal

    adores welcoming visitors and socialising. She takes you through a labyrinth

    of cellars full of fresques. On one such fresque can be seen the silhouette

    of Brother Jean Oudard, whose superior Dom Prignon was the inventor of

    Champagne.

    For her cuves, Chantal has had pretty illustrated wire collars made, repro-

    ducing the stained glass of St Pierre-St Paul church in Villenauxe-la-Grande,

    a contemporary work by the British artist David Tremlett. At its restaurant

    Le Flaubert, the Oudard family serves up a treat of lifes pleasures and all

    things good. Flaubert spent all his holidays in the Nogentais.

    To complete the chapter on the Arts, a Dussolier grand-daughter whose

    maiden name is Oudard, married Herv Bazin

    But the highlight of the visit remains the distillery, its shining brass boilers

    and stills, used for the Fine de Champagne and the Marc de Champagne.

    The Champagne bottle, generally 75cl, isdesigned to resist the build up o pressureduring the second ermentation.

    The quart (20cl), the hal-bottle (37,5cl),the bottle (75cl), the magnum (2 bottles),the Jeroboam (4), the Mathuselah (8), theSalmanazar (12), the Balthazar (16), thePrimat (36), the Melchisedec (40).

    Brut

    At the end o the vinication, Champagne

    wines are given a dose o sweetener. The Brutor Dry are those with the smallest dose.

    Bubbles

    The bubbles enclose the carbon dioxide inthe wine and rise to the surace orming adelicate pearl necklace. A bottle o Champagnecontains around 50 million bubbles.

    Varieties of gr ape

    The 3 grape varieties authorised or theAOC Champagne are the Pinot Noir, theChardonnay and the Pinot Meunier.

    Champagne wines with soul

    Champagnes which are complex, rich, complete.

    Champagne wines with spirit

    Champagnes which are vivacious, delicate, light.

    Champagne wines with heartChampagnes which are generous, heart-warming, smooth.

    Champagne wines with body

    Champagnes which are powerul, robust,intense.

    Chardonnay

    A grape variety that brings nesse, with foraland sometimes mineral notes.

    In a cool dark place with a airly unvarying tem-perature and approximately 70% humidity.

    Coupe

    The Champagne coupe was ashionable duringthe Belle Epoque period. Today the tulip glassis preerred as it allows the bubbles to twirlaround and allows the favour to express itsel.

    Coteaux

    Typical Champenois vineyards are planted onhillsides where they have improved exposure tosunlight and the soil is well drained.

    Disgorgement

    Operation which ollows the remuage or rid-dling, and which consists in removing romthe bottle the lees composed primarily o deadyeast, resulting rom the second ermentation.

    Demi-sec

    At the end o the vinication, Champagnewines are given a dose o sweetener. The Demi-sec have a larger dose than the Brut.

    Dosage

    This operation, carried out ater the dischargingprocess, consists in adding a small quantityo syrup called liqueur dexpdition to theChampagne.

    Effervescence

    Natural ormation o gas bubbles, orming trainso bubbles, then a delicate necklace at the suraceo the glass.

    Label

    The identity card o the bottle. It indicatesthe Champagne Appellation, the House nameor name o the producer, the dosage and theblending details.

    The Appellation dOrigine Controlee guaran-tees the geographical origin o a product as wellas its method o production.

    AOC Champagne

    The zone o the Appellation dOrigine Controleeor Champagne is located in the Aisne, Marne,Seine-et-Marne, Aube, and Haute-Marnedepartments.

    Flavours

    The favours o Champagne are split into5 groups : fowers, ruit, vegetable, dried ruit,gourmet.

    Blending

    The art o harmoniously associating dierentwines, dierent grape varieties, and dierentvintages.

    Blanc de Blancs

    White Champagne wine made exclusively romthe white Chardonnay grape variety.

    Blanc de Noirs

    White Champagne wine made exclusively romthe black Pinot Noir and/or Pinot Meuniergrape varieties.

    Cork

    To ensure an airtight t, the bottle is sealedwith a cork made rom cork, compressed orthe corking, and astened by a wire collar, themuselet.

    The ideal serving temperature is 8 or youngwines, and 10 or more mature wines.

    Riddling or remuage

    Process which allows the lees, resulting romthe carbonation, to descend into the neck othe bottle to acilitate their extraction. It canbe either manual (on a pupitre) or mechanical(on a rotating palette).

    Ross

    Rose tinted Champagne obtained by blendingor by maceration.

    Ros des Riceys

    One o the best ross o France ! One o themost delicate and subtle favours o which LouisXIV was a great enthusiast ! Ex clusively made

    rom Pinot Noir des Riceys, this unique nectargets its nobility rom the best grapes rom vineson the steepest and sunniest hillsides.

    Under-soil

    The Champenois under-soil, mainly chalky,provides the vines with a constant naturalirrigation.

    Pruning

    The manual cutting back o the branches othe vine each year in order to keep its vege-

    tative growth balanced and improve the grapequality.

    Taille

    The 500 litres o must which ollow the extrac-tion o the cuve during the pressing o a marc.

    Terroir

    A combination o the geophysical, climatic andtraditional characteristics o each vineyard thatgive the wines their unique qualities.

    The Champagne grape harvest is always doneby hand, so that the grapes arrive intact on thepress. It usually takes place in the second halo September.

    Ageing

    The time spent by the wine in a cellar to developits favour : it is at least 15 months, and is atleast 3 years or millsimes, much longer orspecial cuves.

    Wines for laying dow n

    Champagne does not need to be stored. Theageing takes place in the cellars o the produ-cer and thereore wines do not need to be stored

    ollowing disgorgement and nal corking.

    Wines reser ved

    Wines rom previous years kept in vats (cuves)or in wooden barrels to be used in blending ornon vintage cuves.

    Mark o recognition given by a producer, thesewines bring the style to the cuve.

    Reasoned wine-growing

    Adaptable management o the entire produc-tion process and the eects o the wine-growingactivity on the environment without upsettingthe economic protability o the company.

    The development o the favours o the wineduring the ageing process.

    Millesime or Vintage

    A blend o wines rom the same year, this isdone or Champagne i the harvest has a uniquepersonality that deserves special recognition.

    Muzzlet

    The wire collar holding down the cork in theChampagne bottle.

    Historic Origin

    Having existed since Antiquity, Champa-gne grew amous in the 5th century with thecoronation o Clovis in Reims. At the end o the17th century, Champagnes became eervescentand became immensely successul.

    Pinot Meunier

    Supple ruity variety o grape, which gives thewine its roundness.

    Pinot Noir

    Red berry favour variety o grape, which givesthe wine its body and strength.

    Fullness

    Very mature Champa gne with comple xfavours.

    Pressing

    The Champenois pressing process is veryprogressive, in order to extract only the mostdiscreet and subtly favoured juices.

    Carbonation

    Second ermentation which produces the eer-vescence o the wine.
