SpecialtiesMasunosushi
Try a box of masunosushi, or pieces of raw pink trout on top of white Toyama rice wrapped in green bamboo leaves pressed in a box. Its elegant flavor makes the best use of its delicious ingredients, making it one of the most popular eki-ben (boxed train lunches) in Japan.
Toyama Black Ramen
This Toyama classic is named for its signature black soup. Dashi fish and kelp stock gives additional flavor to the strong shoyu-based soup of Toyama Black Ramen; it was originally devised for laborers in the post-war period, as a salty side dish to be eaten with rice.
White Shrimp
When White Shrimp are first caught, they are transparent pink. It is because of this beautiful color that white shrimp are called the “Gem of Toyama Bay.” White shrimp is famous for its elegant sweetness and fragrance, which you can enjoy through dishes such as white shrimp sashimi or kakiage (Japanese fritters).
