Executed general prep duties, prepared recipes with the Pastry chef and made pre‐amuse and amuse bouche dishes during service as well as helping to plate fish and meat courses. Here I was able to witness a happy marriage between local ingredients and various modern/molecular influences and techniques. Bo Innovation ‐ Hong Kong ‐ Stagiaire November 10 – December 23, 2009 First experience working in a Michelin starred restaurant. Executed general prep duties and during service worked at the pass plating various dishes. Was exposed to work in the open, cold kitchen as well as in the hot kitchen. An incredible experience where I was extensively exposed to Chinese ingredients and cooking techniques. See attached letter of recommendation. Whitby Castle ‐ Rye, New York ‐ Saute Cook June ‐ August, 2009 Managed the saute station, general prep responsibilities, and collaborated with Executive Chef Benjamin Coyne for creation of specials. Gained extensive experience cooking lobsters as well as basic understanding of applications of alginates and spherification.
