Day 2 I made it through the first Day of the Ultimate Reset and I’m sure I’ll make it through today too! Today’s breakfast was food I normally would eat – steel cut oats, non-fat yogurt and 1 cup of blueberries. Normally I would either have the steel cut oats with berries or the yogurt with berries, not both. So this was a big breakfast for me. But of course I ate it all! It's part of the plan to get me in shape fast after my summer splurges. I’m still feeling a little pain in my sinuses and my ears after I take the supplements, but it’s not as much as Day 1 . Good thing I have my own at home business and don't have to go to work. Lunch was a Greek salad with chicken. Again, something I’d normally eat if I’m home for lunch. I was starving by mid afternoon and was so tempted to have one of the snacks outlined in the program. However, in the Ultimate Reset guide they suggest if you are hungry to drink more of the distilled water with the Mineralize in it. Then if it’s an emergency, have one of the suggested snacks. Well, if you know me I don’t like to give in so easy. So I toughed it out. By the time I had to pick up my kids from school, I could tell my energy level was low. But being a Mom, you have to keep on going so that meant taking my son to soccer practice, picking up my daughter from her school play try-outs, then back to soccer to get my son. In between all the running around was some food prep. I decided the family had to eat the Ultimate Reset dinner that night. I was too exhausted to make another meal.

Dinner was a taco made with corn tortilla with black beans, brown rice, salsa and corn.  We also had a side of steamed kale with pine nuts and a side of guacamole.  My daughter really liked the taco.  My son and husband, not so much.  They are being meat eaters.  As for the kale, I like it and the rest of the family knows how healthy it is so they ate it without complaints.

Lentil- Lime Salad (From Team Beachbody Ultimate Reset Guide)

Ingredients:

• 1 cup cooked green lentils• ½ cup grated raw carrot• ¼ cup finely chopped fresh cilantro leaves• 1.5 tsp. sesame oil• 2 Tbs. fresh lime juice• Bragg Liquid Aminos or Himalayan salt (to taste)• ¼ tsp. ground cumin• Herbal seasoning (to taste; optional)Directions:

Cook lentils under tender, but don’t overcook.  (Or use low-sodium canned lentils.)  Add carrots and stir.  Stir oil, lime juice, salt, and spiced together in a small bowl, then gently stir into the lentil mixture.  Adjust seasoning if needed.  Even better the next day.  Serves 1.

• 50 mg sodium• 48 g carbohydrate• 17 g fiber• 19 g protein• 944 mg potassiumOMG, I was so tired today from that darn mosquito kept me up during the night.  I know sleep is really important to keep your body functioning properly and with my goal to get in shape fast. I was feeling thinner and lighter today so I stepped on the scale.  Down 3 pounds!  Now that felt great and was worth the two days of hunger and healthy eating.  I know the scale is not the end all, but it was a pick me up to see the numbers going down.  It’s a motivator for me to stay focused and on task.

Another big breakfast today of eggs, toast and kale.  Then I made the delicious lentil lime salad for lunch.  I forgot to buy the lime, so I pick a lemon off our tree and used that (I’ve had a lime tree for about a year now, but no limes!).   The recipe also called for Bragg Liquid Aminos, which I had never heard of (it's a liquid protein from soybeans).  I also didn’t’ read the recipe ahead of time where it said to refrigerate for 2 hours before eating.  Oh, well I ate it anyways and made a double batch for tomorrow’s lunch.  This recipe is one I will use again and share.

Although we had no after school activities today, my afternoon slipped away with helping with homework and preparing my report for my morning PTA meeting.  So much so, that I forgot to take the green seaweed tasting Alkalinize supplement (I’ll have to make a video on this one… not so good tasting).  I took it about 2 hours late, but I figure better to take it then to skip it.

I switched up dinner (which you are allowed to change a meal for another meal within the same week) and just heated up leftovers from the night before and the family had a “normal” Wong family dinner tonight.  Today I wasn't nearly as hungry either.  I think my body is adjusting to the 3 meals a day (I used to eat 5 times a day) and I think the lentils, rice, and beans really filled me up.

One thing I have noticed over the past 2 days is that my craving for sweets after dinner seems to have disappeared.  Who’d ever

thought that eating super “clean” and drinking green seaweed tasting stuff would cure a sweet tooth!  This Ultimate Reset is great way to get your diet in shape fast.  Until tomorrow.  ~ Kathryn Wong
