Starch
• A complex carbohydrate and a macromolecule
Enzyme
• A protein that changes the rate of chemical reactions (usually speeds them up)
• Amylase = an enzyme
in your saliva
Maltose
• A simple sugar that results when starch is broken down by amylase
Testing Materials• Benedicts solution = indicator that turns
orange/red when there is glucose
• Lugol’s Iodine = indicator that turns blue/black when there is starch
• Glucose test strips = changes color when there is maltose
• Buffers = Can be added to solution to control pH
