setting. She is passionate about helping people improve their health by
setting realistic lifestyle goals. Ivonne is excited to be a part of the
Wellness Team and to use her expertise to enhance the program.

Ever need an escape from your office for a 10 minute break.
Well if you happen to work on the main campus you are privy
to a well-kept secret hidden on campus. The Collier County
Museum, while informative and historical provides a well-
covered walking path that stretches about half a mile. Here are
a few photos of the walking path. The pictures don't even do it
justice. The walking path takes you around old homes that were
lived in here in Florida and completely closes out the main
campus. If you didn't know any better you would think you had
left Naples altogether. The museum also houses picnic tables
and benches along the way. Now that the weather is starting to
improve pack a lunch and come sit outside and take a walk on
your lunch break. You can get in a few steps as well as reduce
stress by clearing your mind on this serene walking path.

Directions:
1. Preheat oven to 350 F. Spread bread on a bak-
ing sheet and bake until lightly toasted 15-20
min
2. In a large skillet cook sausage over medium
heat, stir with a wooden spoon to break it up,
5-10 min, Drain to remove excess fat
3. Add oil the pan over medium low heat add cel-
ery, onions, and garlic; cook stirring until
softened about 5 min, add apples and cook until
tender 8-10 min, Transfer to a large bowl
4. Add the sausage, toasted bread, sage, thyme
and basil to the bowl. Toss well, drizzle broth
over the mixture until evenly moistened.
Season with salt and pepper. Transfer to a
lightly oiled 9 x 13 in baking pan
5. Cover the stuffing with foil and bake until
heated through 35-45 min, for a crisp top
uncover for the last 15 min

Ingredients
8 cups whole wheat bread (12 slices)
8 ounces turkey sausage (apple-gate
farms)
1 1/2 tsp oil
3 stalks celery, chopped
2 medium onions, chopped
1 clove garlic, finely chopped
3 golden delicious apples, peeled,
chopped
2 tbsp fresh sage, chopped
1/2 dried basil
2 cups reduced sodium chicken or
vegetable broth
1/4 tsp salt
Fresh ground pepper to taste
Calories: 183
Total Fat: 4 g
Saturated Fat: 1 g
Sodium: 512 mg
Carbohydrates: 26 g
Fiber: 4 g
